These fried potatoes are the perfect companion for bacon and eggs. You may use oil instead of shortening if you wish.

- In a large cast iron skillet, heat shortening over medium-high heat. Add potatoes and cook, stirring occasionally, until potatoes are golden brown. Season with salt, pepper, garlic powder and paprika. Serve hot.

Simply tasty and full of vitamins. A new clever way to serve potatoes. From Vida, a weekly German ladies magazine. I have tried this recipe twice with success and served it as a main dish on our non-meat nights.

Steps:
- Cut potatoes in half (or more if the potatoes are not small).
- Cut tomatoes in half and slice green onion.
- Add oil to skillet on medium heat.
- Add potatoes and fry for approx.
- 10 minutes.
- Season with salt.
- Add mushrooms whole to skillet with the potatoes and fry for approx 5 minutes.
- Generously season with salt and pepper.
- Add cherry tomatoes& green onion and cook for 1 minute.
- Ready to serve.
- For Dip: Remove thyme leave from the steam and stir in with the herbed sour cream.
- Serve some dip on top each serving.

- In a large, non-stick skillet, cook the mushrooms with 1 tbsp. of oil on medium-high heat for about 5-7 minutes. Add a pinch of salt, and stir. Remove the mushrooms from the skillet and set aside.
- Peel the potatoes and slice them into fairly thin pieces, as shown in the photo above. (I usually peel and cut the potatoes while the mushrooms are cooking).
- Add the 1/4 cup of vegetable oil and potatoes to the same skillet. Fry the potatoes on medium-high heat for about 15 minutes, stirring gently every minute as the golden crust forms on the bottom.
- Once the potatoes are cooked through, turn off the heat, add the garlic and salt to taste, and give it a final (gentle!) stir.
