HOME-FRIED CHEESE STICKS
These is an easy, cost-efficient way to make home-made fried cheese sticks. Taste just wonderful, light crispiness. More for your dollar and easily stored in the freezer for when you have a craving. I make 2 batches, one for the 'now' and one for later. Serve with your favorite dipping sauce.

Steps:
- Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
- Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
- Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.

- 1. Heat a non-stick skillet on medium-high. Roll one stick of string cheese in parmesan cheese. Quickly fry cheese to brown the parmesan coating. Eat at once.

Steps:
- Spray a cooking pan with PAM spray.
- Set heat to medium-high.
- Sprinkle the 1/2-1 cup of cheese onto pan, (make sure cheese is evenly spread out into a circular shape).
- When cheese is bubbling a lot and the edges have a golden/brown color flip the cheese over like a pancake.
- (This side takes a lot less time to cook so moniter it carefully).
- When both sides have a golden/brown color, take out of pan to serve.
FRIED STRING CHEESE
Steps:
- Preheat oil to 400 degrees in electric fryer or 350 degrees in propane fryer. Combine flour and salt; stir well with a whisk. In another bowl combine eggs and milk; stir well with a whisk.
- Dredge cheese in flour mixture shaking off excess. Dip in egg mixture. Roll in bread crumbs, coating well on all sides. Cover and chill 1 hour.
- Fry 4 or 5 sticks at a time for 2 to 3 minutes or until golden, turning once. Remove from hot oil and drain on paper towels. Serve warm.

- Preheat your fryer or pan of vegetable oil to 365 degrees F (185 degrees C). Setup dredging station: whisk eggs in one bowl, add flour to another, and crushed croutons to a third bowl.
- Remove packaging from string cheese and cut the cheese sticks in half (optional). Roll string cheese in flour, then coat thoroughly with eggs and transfer to the crushed croutons bowl. Roll the cheese stick in the crushed croutons and then pat more into any areas that need more coating for an even layer.
- Set breaded cheese sticks into frying basket about one inch apart or onto a tray until ready to drop into oil (if using stove top method). Continue to coat the cheese sticks until all are ready to cook.
- Drop into fryer or heated oil in batches and watch closely as they will only take about one minute to cook, the mozzarella sticks will be golden brown when done.
