FROSTED GELATIN SALAD



Frosted Gelatin Salad image

A sweet, creamy topping frosts tis extra-fruity gelatin that is chock-full of canned apricots and crushed pineapple. "It's a colorful salad to serve at potluck dinners," reports Bertha Johnson of Indianapolis, Indiana. "Everyone loves the combination of flavors."

2 packages (3 ounces each) orange gelatin
2 cups boiling water
3/4 cup miniature marshmallows
2 cans (15-1/4 ounces each) apricot halves
1 can (20 ounces) crushed pineapple, drained
1/2 cup sugar
3 tablespoons all-purpose flour
1 egg, lightly beaten
1 teaspoon vanilla extract
2 envelopes whipped topping mix (Dream Whip)
1/4 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Add marshmallows; stir until melted. Drain apricots, reserving 1 cup juice; set juice aside. Chop apricots; add to gelatin with pineapple. Pour into an 11x7-in. dish. Chill until firm. , Meanwhile, in a small saucepan, combine the sugar and flour. Whisk in the egg, vanilla and reserved apricot juice until smooth. Bring to a boil; boil and stir for 2 minutes. Cool completely. , Prepare whipped topping according to package directions; fold in cooled juice mixture. Spread over gelatin. Sprinkle with cheese. Chill for 1 hour.

1 3/4 cups chopped dried apricots
3/4 cup orange juice
3/4 cup water
1 cup plus 2 tablespoons Gold Medal™ whole wheat flour
1/2 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup packed brown sugar
2 tablespoons vegetable oil
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon vanilla
2 teaspoons butter or margarine, softened

Steps:

  • In 1-quart saucepan, cook all filling ingredients, stirring constantly, just to boiling over medium heat. Reduce heat to low; cover and simmer 25 to 30 minutes, stirring occasionally, until apricots are tender and filling has thickened. Cool.
  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In medium bowl, mix 1 cup whole wheat flour, the all-purpose flour, baking powder, baking soda and salt. In large bowl, beat egg, brown sugar, oil, orange juice concentrate and vanilla with electric mixer on medium speed until smooth. Stir in flour mixture until blended. Reserve 1/2 cup dough mixture for topping.
  • Pat remaining dough in pan. Spread filling over dough. Add remaining 2 tablespoons whole wheat flour and the butter to reserved dough mixture. With pastry blender or fork, mix until crumby; sprinkle over filling.
  • Bake 25 to 30 minutes or until top is golden and firm. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

⅔ cup white sugar
⅔ cup water
2 (4 ounce) jars apricot baby food
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup chopped pecans
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a small saucepan, combine gelatin, sugar and water. Bring to a boil and mix until dissolved. Remove from heat, add baby food and pineapple with juice. Stir, set aside to cool for 10 minutes.
  • In a small bowl, combine the cream cheese and sweetened condensed milk, mix together until smooth. Pour into fruit mixture and whisk together.
  • Stir in pecans and pour into a 9x13 inch pan. Refrigerate until chilled. Top with thawed whipped topping if desired. Sprinkle with pecans to decorate and cut into squares.

1 cup barley
1 teaspoon extra-virgin olive oil
1 teaspoon kosher salt
1 cup chopped dried apricots
1/2 cup sliced almonds, toasted
1/2 cup chopped flat-leaf parsley
1/2 teaspoon ground cinnamon
1 scallion (white and green parts), thinly sliced
1/4 cup freshly squeezed lemon juice
2 teaspoons honey
1/4 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil

Steps:

  • Bring broth to a boil in a medium saucepan. Add the barley, oil, and salt. Bring back to a boil, adjust heat to maintain a gentle simmer, cover and cook until tender, about 30 minutes. Remove from the heat and let stand, covered, for 10 minutes more.
  • Meanwhile make the dressing: Whisk the lemon juice, honey, salt, and pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
  • Drain excess liquid from barley, if needed. Transfer to a bowl and toss with the remaining salad ingredients and dressing. Serve warm or at room temperature.

4 cups lettuce, torn
4 cups spinach, torn
1/2 cup celery, thinly sliced
1/2 cup carrot, grated
1 small red onion, sliced in rings
2 (7 ounce) cans tuna, well drained
2 small tomatoes, cut in eighths
1/4 cup macadamia nuts, coarsley chopped
3/4 cup mayonnaise
3 tablespoons lemon juice
3 tablespoons reserved apricot syrup
1 1/2 teaspoons soy sauce
1/8 teaspoon dried ginger

Steps:

  • Drain apricots and reserve 3 tablespoons syrup for the dressing.
  • Toss together the lettuce, spinach, celery, carrot and onion rings in a salad bowl.
  • Place tuna in the centre of the greens.
  • Arrange tomatoes around the edge of tuna, alternating with the apricot halves.
  • Sprinkle with nuts.
  • Serve with Apricot Soy Dressing.

1 quart fresh strawberries, quartered
2 cups green grapes

Steps:

  • In a microwave-safe bowl, stir the sugar, cornstarch and apricot nectar until smooth. Microwave, uncovered, on high until slightly thickened, 4-6 minutes, stirring every 2 minutes. 1 (8 ounce) package wide egg noodles
¼ cup butter, softened
1 (3 ounce) package cream cheese, softened
3 eggs, beaten
½ cup white sugar
1 teaspoon vanilla extract
1 cup apricot nectar
1 cup milk
½ cup golden raisins
1 ½ cups cornflake crumbs
½ cup butter, softened
¼ cup white sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking pan.
  • Bring a large saucepan of lightly salted water to a boil. Stir in egg noodles, and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl, thoroughly mix egg noodles with 1/4 cup butter, cream cheese, eggs, 1/2 cup sugar, and vanilla. Stir in apricot nectar and milk. Mix in raisins. Transfer to the prepared baking pan.
  • In a separate medium bowl, mix cornflake crumbs, 1/2 cup butter, 1/4 cup sugar, remaining vanilla, and cinnamon. Spread over the egg noodle mixture.
  • Bake 45 minutes in the preheated oven, until bubbly and lightly browned.

2 cups boiling water
1 (20 ounce) can apricots in juice, reserve juice
1 cup apricot juice
1 (12 ounce) can crushed pineapple
1 cup apricot juice
1/2 cup sugar
1 egg, slightly beaten
2 tablespoons cornstarch
1 (8 ounce) package Dream Whip

Steps:

  • Boil 2 cups water, and add jello till dissolved. Add 1 cup cold apricot juice. Chop the canned apricots fine and add with the remaining juice from the canned fruit to the jello. Add the crushed pineapple. Pour into 9 x 11 cake pan or your favorite jello mold. Chill till set.
  • Prepare topping to spread on jello when set. Mix together in a saucepan:1 cup apricot juice, 1/2 cup sugar, 1 egg beaten slightly, and 2 tablespoons cornstarch. Cook over med. - low heat till thickened. Add prepared pkg. of Dream Whip. Spread over chilled jello.

4 cups arugula, preferably wild arugula, washed and spun dry
Scant 1/4 cup pistachios (about 1 ounce), lightly toasted and chopped
1 tablespoon chopped slivered basil leaves
1 tablespoon sherry vinegar
1 teaspoon balsamic vinegar
Salt and freshly ground pepper
4 tablespoons extra-virgin olive oil
2 ounces goat cheese or feta, crumbled
8 small or 6 large ripe apricots

Steps:

  • Heat a griddle over a hot grill or burner, or preheat an indoor grill.
  • Combine arugula, half the pistachios, and basil in a large bowl.
  • Whisk together vinegars, salt and pepper, and 3 tablespoons of the olive oil.
  • Cut apricots in half and remove pits. Brush cut side with remaining olive oil. Grill for about 2 minutes on the cut side, until seared but intact. Remove from the heat.
  • Toss together arugula mixture, dressing and half the apricots. Arrange on a platter. Arrange the remaining apricots, goat cheese or feta and remaining pistachios over the top, and serve.
