4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
¼ teaspoon ground cinnamon
2 cups white sugar
¾ cup butter, softened
2 eggs
¼ cup eggnog
1 teaspoon vanilla extract
1 teaspoon rum extract
¼ cup eggnog
2 tablespoons light corn syrup
1 teaspoon vanilla extract
½ teaspoon rum extract
½ teaspoon ground nutmeg
3 cups powdered sugar, or as needed

Steps:

  • Whisk together flour, baking powder, nutmeg, and cinnamon in a bowl.
  • Cream together sugar and butter with an electric mixer in a second bowl. Mix in eggs, eggnog, vanilla extract, and rum extract. Add flour mixture and mix by hand until dough comes together. Cover the bowl with plastic wrap and chill for at least 2 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Roll out dough to 1/2" thickness on a lightly floured surface. Cut into shapes with cookie cutters and place 1-inch apart on the prepared baking sheet.
  • Bake in batches in the preheated oven until cookies are lightly browned on the bottom, 8 to 10 minutes. Carefully transfer to a wire rack and allow to cool, about 30 minutes.
  • Meanwhile, whisk together eggnog, corn syrup, vanilla extract, rum extract, and nutmeg for the icing in a bowl. Mix in as much powdered sugar 1 cup at a time, until icing is smooth and desired consistency is reached.
  • Dip cookie tops in icing and place on waxed paper to dry.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggnog. Combine flour, baking soda and nutmeg; gradually add to creamed mixture and mix well. Shape into four 10-in. rolls; wrap each in plastic wrap. Refrigerate overnight., Preheat oven to 375°. Unwrap and cut into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. ¾ cup butter flavored shortening
1 cup white sugar
2 eggs
1 tablespoon milk
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt

1 teaspoon vanilla extract
2 ½ cups confectioners' sugar
3 tablespoons milk
2 drops any color food coloring

Steps:

  • In a large bowl, cream together the shortening and white sugar until smooth. Beat in the eggs one at a time, then stir in the milk and 1 teaspoon vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture. Cover dough, and chill for at least one hour.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease cookie sheets, or line with parchment paper. On a lightly floured surface, roll out the dough to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.

2 cups sugar
1 cup butter, softened
2 eggs
1/3 cup eggnog
1 teaspoon vanilla
4 1/2 cups flour
1 teaspoon nutmeg

2 egg yolks
1/2 teaspoon water
assorted colors of liquid food coloring

Steps:

  • In large bowl, combine sugar, butter and eggs; beat until light and fluffy.
  • Stir in eggnog and vanilla.
  • Lightly spoon flour into measuring cup; level off.
  • In medium bowl, combine flour, nutmeg and baking powder.
  • Add flour mixture to butter mixture; blend well.
  • Cover dough with plastic wrap; refrigerate 30 minutes for easier handling.
  • Meanwhile, in small bowl, combine egg yolks and water; blend well.
  • Divide mixture into several small cups; tint with food color.
  • If paint thickens, add a few drops water.
  • Heat oven to 350.
  • On floured board, roll half of dough at a time to 1/8-inch thickness.
  • Cut with assorted 2 1/2 to 3 inch cutters, re-rolling dough as necessary.
  • Place 2 inches apart on ungreased cookie sheets.
  • Using small paint brush, paint designs on cookies with egg yolk paint.
  • Bake at 350 for 8 to 11 minutes or until edges are light golden brown.
  • Remove from cookie sheets.

1/2 cup brown sugar
1/2 cup butter, softened (1 stick, either salted or unsalted)
1/4 cup unsweetened applesauce
3/4 cup eggnog (any type, even soy, will work fine)
1 teaspoon vanilla extract
1 egg
1/2 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt (if unsalted butter was used)
1 teaspoon baking powder
2 1/4 cups all-purpose flour
2 tablespoons butter, softened
1/2 teaspoon vanilla extract
1 teaspoon rum (or rum extract)
1 cup powdered sugar
1 tablespoon milk

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream softened butter and sugars together until smooth. Add applesauce, mix.
  • Add eggnog, vanilla extract and egg. Mix until smooth.
  • Add spices, salt (if applicable) and baking powder. Mix.
  • Add flour and stir just until fully moistened (do not overmix or your cookies will be tough).
  • Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake for 15-17 minutes until golden brown and slightly crackled in appearence.
  • Remove cookies from sheet within 2-3 minutes of removing sheet from oven. Allow cookies to cool before frosting.
  • Frosting: Cream together butter, vanilla extract, rum (or extract) until smooth. Add powdered sugar slowly and while mixing; texture will be crumbly. Add milk and stir until smooth. Using a knife or frosting spreader, apply 1-2 teaspoons of frosting to each cookie.
