FROSTED FRUIT GELATIN DESSERT
I created this dessert for my mom, who is unable to have artificial sweeteners. The nice red color and creamy top are appealing to my whole family while being lower in added sugar, too. -Erika Niehoff, Eveleth, Minnesota

- Measure 1-1/8 teaspoons gelatin; set aside for topping. In a small saucepan, sprinkle remaining gelatin over cold water; let stand for 1 minute. Cook over low heat, stirring until gelatin is completely dissolved. Remove from the heat; stir in 2 cups cranberry juice and orange juice. , Place the pineapple and bananas in an 8-in. square dish coated with cooking spray. Pour juice mixture over fruit. Cover and refrigerate for 45-60 minutes or until firm., For topping, in a small saucepan, sprinkle reserved gelatin over remaining cranberry juice; let stand for 1 minute. Stir in sugar. Cook over low heat, stirring until completely dissolved. Place the yogurt in a bowl; stir in cranberry mixture. Spread over gelatin. Cover and refrigerate for at least 2 hours.

FROSTED FRUIT GELATIN
I like to serve this combination of fruit, Jell-O and cream cheese as a salad with a main dish or as a light refreshing dessert.

Steps:
- In a large bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice in a measuring cup. Add enough water to the juice to measure 1 cup; stir into gelatin mixture. Stir in pineapple and blueberries. Place bananas in a 13-in. x 9-in. x 2-in. dish. Pour gelatin mixture over bananas. Cover and refrigerate until firm.
- In a small mixing bowl, beat cream cheese, sour cream and sugar until smooth. Spread over gelatin. Cover and refrigerate until serving. Sprinkle with walnuts.

FRUIT-COCKTAIL GELATIN CUPS
Steps:
- If using a vanilla bean, split in half and scrape seeds out. Reserve all. In a medium saucepan, bring the water, sugar, and vanilla bean pod and seeds or extract to a boil. Lower the heat and simmer.
- Drop in the pear and pineapple and poach for 4 minutes. Remove with a slotted spoon and set aside.
- Drop in peach and nectarine, and poach for 2 minutes. Remove with a slotted spoon and set aside.
- Drop in grapes and orange segments, and poach for 1 minute. Remove with a slotted spoon and set aside. Drop in cherries, and poach for 2 minutes. Remove with a slotted spoon and set aside. Since they will discolor the syrup, always do them last.
- When you have finished, put all of the fruit back in the syrup and set aside to cool down. Once cool strain the fruit and reserve. The syrup can be saved for another use.
- Mango may be added raw.
- Prepare your favorite gelatin: In large bowl, soften gelatin by stirring it into 1/2 cup apple juice. Set aside.
- In small saucepan, bring the remaining 3 1/2 cups of apple juice and the sugar to a boil. Boil until the crystals have dissolved, about 1 minute. Pour it over the gelatin and stir to dissolve.
- Stir in the reserved fruits and pour into 6-ounce footed cups. Chill several hours until set.
EASY FRUITED GELATIN CUPS
Flavored gelatin is poured over diced canned peaches in individual dessert dishes then topped with miniature marshmallows for easy, fun and fruity treats.

- In large bowl, mix cherry gelatin and 2 1/2 cups hot water until well combined. Cool to room temperature.
- Pour 1/4 cup cherry gelatin into each of 4 (1-cup) glass containers. Place glasses on small tray; refrigerate about 20 minutes.
- Meanwhile, in medium bowl, mix condensed milk, unflavored gelatin and 1 cup hot water until well combined.
