This special Christmas treat came to me from Scotland through a relative. I compared this recipe with one a friend makes, since her husband is of Scottish descent, and found this shortbread to be quite authentic. -Erma Hiltpold, Kerrville, Texas

5 cups all-purpose flour
1 cup sugar
1/2 teaspoon salt
2 cups cold butter, cubed

Steps:

  • In a large bowl, combine flour, sugar and salt. Cut in butter until mixture resembles fine crumbs. Pat into an ungreased 15x10x1-in. baking pan. Prick all over with a fork., Bake at 325° for 35 minutes or until center is set. Cool for 10-15 minutes. Cut into small squares. Continue to cool to room temperature.

1 cup butter
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
1 egg
2 1/4 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon salt
4 ounces cream cheese
2 tablespoons butter
1 tablespoon milk
2 cups powdered sugar
1/2 teaspoon extract (any flavor)
food coloring

Steps:

  • Cream butter, suagar, vanilla. Add egg and beat well.
  • Stir in sifted dry ingredients. Stir well and form into disk.
  • Chill for at least 1 hour.
  • Roll out dough 1/4 to 1/2 inches thick and cut out in favorite shapes.
  • Place on parchment paper lined baking sheet.
  • Bake for 8 - 10 minutes at 375 degrees.
  • Transfer on rack until cool.
  • Combine cream chees, butter, powdered sugar, milk and extract and mix well until very smooth. Adjust to desired consistency with additional milk or powdered sugar. Tint to desired shades. Store in tighly covered containers.

3 cups cake flour
1 ½ teaspoons baking powder
½ teaspoon baking soda

1 cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
2 teaspoons vanilla extract
1 (16 ounce) package vanilla frosting
1 cup crushed peppermint candy canes

Steps:

  • Sift flour, baking powder, baking soda, and salt into a large mixing bowl.
  • Cream butter and sugar in another large mixing bowl. Mix in eggs, then mix in vanilla. Gradually add in dry ingredients until incorporated. Remove dough from the bowl and wrap in plastic wrap. Refrigerate for at least 3 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 cookie sheets with parchment paper.
  • Remove dough from the refrigerator and roll out to desired thickness on a lightly floured surface. Sprinkle more flour on top of and under the dough, and on the rolling pin as needed to help prevent dough from sticking to the surface. Cut cookies with a round cookie cutter and place 2 inches apart on the prepared cookie sheets.
  • Bake until cookies are firm to the touch, 10 to 12 minutes. Remove from the oven and transfer to a wire rack to cool, about 30 minutes.
  • Generously apply frosting to cooled cookies with a butter knife. Sprinkle crushed candy canes over top.

3 cups all-purpose flour
¾ cup white sugar
¼ teaspoon salt
1 ½ cups cold butter
½ teaspoon rum extract
½ teaspoon almond extract
2 tablespoons cold water
2 cups confectioners' sugar
2 tablespoons milk
2 teaspoons milk
1 drop food coloring, or to desired shade
1 tablespoon colored edible glitter, or as desired

Steps:

  • Whisk together flour, sugar, and salt in a large bowl; with a pastry cutter, chop in the butter until the mixture resembles coarse crumbs. Stir the rum extract and almond extract into the water in a small bowl. Mix into the dry ingredients, a little bit at a time, until the mixture holds together in a ball when you squeeze it.
  • Place the dough onto a floured work surface, and sprinkle with flour; roll out into a sheet 1/4 inch thick. Cut into shapes with floured cookie cutters, and place 1 inch apart on ungreased baking sheets. Cover with a layer of plastic wrap, and refrigerate for 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake the cookies just until the edges are lightly browned, 15 to 18 minutes. Allow to cool on sheets for 2 minutes before removing to wire racks to finish cooling. Cool completely before decorating.
  • For frosting, whisk the confectioners' sugar and milk in a bowl until smooth. If desired, divide frosting into small bowls, and tint each bowl a desired shade with food coloring. Frost fully cooled cookies, and sprinkle with edible glitter before the frosting sets.

3 cups all purpose flour, plus more for dusting
2 teaspoons baking powder
½ teaspoon kosher salt
16 tablespoons unsalted butter, cubed and chilled
1 cup sugar
1 large egg
1 tablespoon vanilla extract
3 cups powdered sugar, sugar, sifted
2 tablespoons meringue powder
¼ teaspoon vanilla extract, or almond extract
4 tablespoons water
green gel food coloring
red gel food coloring
1 tablespoon brown gel food coloring
blue gel food coloring
yellow gel food coloring

Steps:

  • Preheat the oven to 350˚F (180˚C). Line baking sheets with parchment paper.
  • In a large bowl, combine the flour, baking powder, and salt. Mix with a fork.
  • In a separate large bowl, cream together the butter and sugar with an electric hand mixer for 3-5 minutes, until the butter and sugar are fully combined, but before the mixture becomes fluffy. Add the egg and vanilla and beat to incorporate.
  • Add the flour mixture and mix until just combined, but crumbly. Finish mixing with your hands until the dough comes together in a ball.
  • Transfer the dough to a floured surface. Lightly flour the top of the dough and roll out to about ¼-inch thick. Use cookie cutters of your choice to punch out cookies. Place the cookie cut-outs on the prepared baking sheets.
  • Bake for 8-10 minutes, until lightly browned around the edges. Let cool completely.
  • To make the royal icing: In a medium bowl, add the meringue powder to the powdered sugar. Whisk to combine. Add the vanilla and 4-6 tablespoons of water (depending on how runny or thick you'd like your icing.) Whisk until completely combined.
  • Divide the icing into smaller bowls and add any desired gel food colors. Immediately transfer to piping bags, or cover with plastic wrap. Do not leave the icing uncovered, as it will develop a film. If this happens, add a small amount of water and whisk to incorporate.
  • Decorate the cookies with royal icing as desired and let dry completely, at least 3-4 hours or overnight.
  • Enjoy!

1 teaspoon/5 grams baking soda
1 teaspoon/3 grams cream of tartar
1/2 teaspoon/3 grams kosher salt
1 cup/228 grams unsalted butter (2 sticks), at room temperature
1 1/2 cups/188 grams confectioners sugar
2 teaspoons/10 milliliters vanilla extract
1 large egg
3 3/4 cups/1 pound/454 grams confectioners' sugar
3 large egg whites
1/2 teaspoon cream of tartar
Pinch kosher salt
Food coloring, as needed

Steps:

  • In a large bowl, whisk together flour, baking soda, cream of tartar and salt.
  • In the bowl of an electric mixer, cream the butter and sugar until fluffy. Beat in vanilla, then beat in egg.
  • Add flour mixture and beat until just combined. Divide the dough in half, pat into flat rectangles, wrap in plastic and chill for at least 2 hours.
  • Divide each dough parcel in half, and roll out to 1/8-inch thickness between two sheets of parchment paper or plastic wrap. Repeat with remaining dough. Chill until firm, about 20 minutes.
  • Heat the oven to 350 degrees. Line four cookie sheets with parchment paper, sprinkling with a little flour if the dough seems sticky. Cut out shapes from the rolled and chilled dough and place on prepared sheets 1-inch apart. Bake until golden around the edges, 8 to 13 minutes. Let cool.
  • Meanwhile, prepare the royal icing: in the bowl of an electric mixer, combine the sugar, egg whites, cream of tartar, and salt. Whisk until stiff and glossy.
  • To tint the frosting, divide into small bowls. Cover the ones you aren't using with plastic wrap; the frosting dries out very quickly. Use a rubber spatula to stir in desired food coloring. Though not necessary, it makes life easier if you make two versions of each color - one that is thick to pipe the outline on the cookie, and one that is thinned out slightly with a little water to flood the outline. Transfer frosting to piping bags fitted with very small round tips (sizes 1 to 2 work best).
  • Pipe frosting onto cooled cookies and let set, at least 2 hours. Or use a pastry of paint brush to decorate cookies with the frosting.
