Provided by Serving Up Southern

Number Of Ingredients 11

1 1/2 cups flour
1/4 cup brown sugar
2/3 cup walnuts
1/2 cup butter (melted)
2 large egg whites
1 cup sugar (2/3 cup if using frozen berries)
2 cups strawberries (crushed)
1 tablespoon lemon juice
1/4 teaspoon almond extract
1 cup heavy whipping cream
2 drops red food coloring (optional)

Steps:

  • In a medium bowl, combine the flour, brown sugar and walnuts. Add the melted butter and stir until crumbly. • In another bowl, beat the whipping cream and red food coloring (if using) until stiff, about 2-3 minutes. Gently fold the whipped cream into the strawberry meringue mixture until thoroughly combined. Pour combined mixture into chilled baking dish spreading to to all corners. Sprinkle with reserved crumbs, cover and chill for 6 hours or overnight.
  • Allow pan to sit at room temperature 10-15 minutes before serving. Garnish with fresh strawberries.

FROSTY STRAWBERRY SQUARES

Frosty Strawberry Squares image

This is a recipe my mother has made for years. She always likes to tell people this dessert was served at John Steinbeck's house. It is a very light and refreshing treat after a heavy meal or on a warm summer night. The crust is cooked, but the top is frozen so it tastes similar to strawberry ice cream. This dessert needs to be frozen for at least six hours, so plan accordingly.

FROSTY STRAWBERRY SQUARES

Frosty Strawberry Squares image

Similar to others on this site, but I have a nut allergy, so we use a graham cracker crust instead of walnuts! The first 3 ingredients are the crust, and the rest is the filling. Cut this recipe in half to make an 8x8 square dish. Cooking time is freezing time but I don't know if it's accurate - I've never timed it before...usually just leave it overnight.
