2 cans (12 ounces each) apricot nectar
2 cups water
1/4 cup lemon juice
1/4 cup sugar
2 whole cloves
2 cinnamon sticks (3 inches)

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low for 2 hours or until cider reaches desired temperature. Discard cloves and cinnamon sticks.

4 cups fresh apple cider
4 whole black peppercorns
6 or 7 (2 to 3-inch) cinnamon sticks
3 whole dried cloves
1 star anise
1 navel orange
Good bourbon, such as Maker's Mark (optional)
1 crisp red apple

Steps:

  • Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
  • Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
  • Serve hot with a cinnamon stick in each glass for stirring.

3 pink lady apples, quartered, plus 1, thinly sliced, for garnish
3 granny smith apples, quartered
3 honeycrisp apples, quartered
3 gala apples, quartered
4 whole cinnamon sticks, toasted, plus more for garnish
1 tablespoon whole clove
3 whole allspice berries
2 whole nutmegs, halved
1 fresh ginger, peeled, 2 in (5 cm)
1 orange, peeled
10 cups water, as needed
1 cup dark brown sugar
bourbon, or whiskey, for serving
6 slices orange slice, for garnish

Steps:

  • Add the quartered Pink Lady, Granny Smith, Honeycrisp, and Gala apples, cinnamon, cloves, allspice, nutmeg, ginger, and orange peel to the Instant Pot. Pour in enough water to cover the apples. Sauté on high until simmering, 15-20 minutes. Cover with the lid and pressure cook on high for 6 hours. Once done, let the pressure release naturally before opening the lid.
  • Strain the solids and pour the cider back into the pot. Add the sugar and sauté on high for another 5-10 minutes, until the sugar has dissolved.
  • Ladle the hot cider into mugs or glasses. If desired, stir in a shot of bourbon or whiskey. Garnish with the orange and apple slices. Alternatively, to serve cold, transfer the cider to a covered pitcher or container and refrigerate until chilled. The cider will keep in the refrigerator for up to 5 days, or in the freezer for up to 3 months.

2 tablespoons cider vinegar

Steps:

  • Drain apricots, reserving syrup; set apricots aside. In a small saucepan, combine the vinegar, allspice, cinnamon and reserved syrup. Bring to a boil. 1kg apricot
2 red onions
5cm piece ginger
2 apples
2 red chillies
1 tsp Chinese five-spice powder
1 tsp paprika
1 tsp coarsely crushed black peppercorn
1 tsp salt
400ml cider vinegar
450g granulated sugar

Steps:

  • Halve and stone the apricots, then chop them into small pieces. Peel and coarsely chop the onions, ginger and apples, and put in a food processor. Roughly chop the chillies and add to the food processor along with the seeds. Blitz until finely chopped, then tip into a large pan and add the spices, salt and vinegar. Bring to the boil, then turn down and simmer for 10 mins, stirring occasionally.
  • Add the apricots and return to the boil. Simmer for a further 10 mins until the apricots are starting to soften, then tip in the sugar and stir until dissolved. Increase the heat and boil for 15-20 mins, stirring occasionally, until the mixture is thick and leaves a brief trail when a wooden spoon is dragged across the base of the pan.
  • Pot into warm clean jars and label. Store for up to a year in a cool dry place.
