FROZEN LEMONADE PIE

Steps:
- For the crust: Preheat the oven to 350 degrees F.
- In medium bowl, stir together the cracker crumbs, sugar and the melted butter until combined and resembles a wet sand mixture. Pour into a pie plate and press the mixture firmly along the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and let cool completely.
- For the filling: In a large bowl, add the sweetened condensed milk and whipped topping. Fold the two together gently until combined, being careful to keep the mixture light and fluffy. Add the lemonade concentrate and continue to gently fold. Be sure to avoid letting the mixture get too liquid-y. Pour the filling into the pie crust. Place in the freezer to chill overnight.
- Sprinkle with a little candied lemon peel and serve!
FROZEN KEY LIME PIE
Steps:
- Preheat the oven to 350 degrees F.
- For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes. Allow to cool completely.
- For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze.
- For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight.
FROZEN GRASSHOPPER PIE
When I first started experimenting with cream pies, this seemed like the right recipe to create for a house of chocolate lovers. I guessed right. - In a small bowl, mix wafer crumbs and sugar; stir in butter. Press onto bottom and up sides of a greased 9-in. pie plate. Refrigerate 30 minutes., Meanwhile, in a large saucepan, combine marshmallows and milk; cook and stir over medium-low heat 12-14 minutes or until smooth. Remove from heat. Cool to room temperature, stirring occasionally. Stir in liqueurs and, if desired, extract., In a large bowl, beat cream until soft peaks form; fold in marshmallow mixture. Transfer to crust. Freeze 6 hours or until firm. If desired, top with cherries and additional whipped cream just before serving.

Quick and easy! You can sub the strawberries with any other fruit you like, and it will come out great either way. You can also sub frozen strawberries if you prefer. This is also good with Oreo® crust too.

FREEZE & BAKE CHICKEN POT PIES RECIPE BY TASTY

- In a deep skillet, melt the butter and cook celery, carrots, and onion until tender.
- Pour in the flour, and mix in well.
- Stirring constantly, add in the milk and chicken broth a little at a time, alternating between the two. Bring to a boil and continue stirring until thickened.
- Add chicken, peas, salt, and pepper, and stir until combined. Remove from heat and cool.
- Roll out pie crust and use the foil pot pie dish as a template. Cut a piece of dough for the bottom of the dish that is about an inch (²¹⁄₂ cm) thicker than the widest rim of the dish, and a piece that is the same size as the rim. (Roll dough back out and repeat to make more pieces.)
- Place the larger piece of crust in the bottom of the foil dish, fill with the cooled pot pie filling, and top with the smaller crust piece.
- Pinch together, then seal together with a fork. Cut 4 small slits in the middle of the crust.
- Cover each pot pie with foil and freeze for up to 2 months.
- To bake from frozen, preheat oven to 400˚F (200˚C), and bake for 30 minutes with the foil on top. Remove the foil and bake for another 30 minutes or until golden brown.

FROZEN HARLEQUIN PIE
My husband is celebrating his first Thanksgiving since being diagnosed Celiac, so I am going back to recipes that need no alteration to be gluten-free. This is delicious, although very rich due to the nut crust.

- Several days ahead, preheat oven to 375°. Greases a 9" pie pan, lining the bottom with waxed paper. Butter paper also. In a small bowl, mix nuts, sugar and salt.
- In another bowl, beat egg white to soft peaks. Add to nut mixture, mixing well to moisten nuts.
- Press nut mixture onto the bottom and up the sides of the prepared pie pan. Bake 12-15 minutes, or until light brown.
- With a small spatula, loosten the sides and let the crust cool for 10 minutes. Gently lift crust and pull the waxed paper out.
- Meanwhile, in a medium saucepan, combine coffee granules, 1/2 cup milk and marshmallows and stir over low heat until marshmallows melt.
- Beat egg yolk lightly; stir in a little hot mixture then whisk egg into hot liquid. Cook one additional minute, stirring.
- Refrigerate marshmallow mixture, stirring occasionally, until almost set.
- Fold in whipped heavy cream, and almond extract, mixing until all the cream is incorporated. Turn this mixture into the cooled pie shell.
- Melt the chocolate and 1 tablespoon milk together and drop small spoonsful all over the top of the pie. Make a marble effect by cutting through the chocolate with a cold knife.
- Freeze until firm, then serve.
