- In a large saucepan, combine sugar and cocoa. Gradually add milk, reserving 2 tablespoons for blending; cook and stir until heated through and sugar is dissolved. Remove from the heat and let cool., Transfer to an 8-in. square dish. Freeze 2 hours or until edges begin to firm. Stir and return to freezer. Freeze 4 hours longer or until firm., Just before serving, transfer to a food processor; cover and process with remaining milk until smooth. Garnish with whipped topping and chocolate syrup.

- Mix the two hot chocolate packets into the warmed milk.*
- Pour the chocolate milk, white milk, half & half, chocolate syrup and chopped ice into a blender.
- Blend on high speed for 20-30 seconds, or until the ice is completely blended and smooth.
- Pour into four glasses.
- Top with whipped cream and chocolate syrup.
- Serve immediately.

FROZEN HOT CHOCOLATE
Steps:
- Break the bittersweet chocolate into pieces and place it in a medium bowl set over a pot of simmering water, stirring occasionally, until just melted. Off the heat, whisk in the cocoa powder, sugar, and half-and-half and set aside.
- Place 3/4 cup of the milk, 2 tablespoons of the coffee liqueur, 1/2 teaspoon of the vanilla, and half of the chocolate mixture in a blender. Add 2 cups of the ice and blend for several minutes, until the mixture is thick but not icy, like a frozen daiquiri. (You can add a little more milk or ice if it's too thick or too thin.) Pour into two (10-ounce) ice cream soda glasses and top each with a generous dollop of whipped cream and some grated chocolate. Repeat for the second two glasses. Serve ice cold with straws and long-handled spoons.
- Place the cream, sugar, and vanilla in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the cream forms very soft peaks (don't overbeat or the cream will be too firm).

- In saucepan over low heat, whisk together cocoa powder, chocolate, 1/4 cup of the whipping cream, the sugar and butter-heat, whisking often til chocolate and butter melted and sugar dissolved.
- Gradually whisk in milk and another 1/4 cup of the cream. Bring just to a boil. Pour into 9 inch square cake pan. Let stand for 15 minutes.
- Cover and freeze for at least 12 hours (can be prepared to this point and frozen for up to 5 days).
- Let stand at room temperature for 5 minutes.
- Break into small pieces. Transfer to food processor along with remaining whipping cream. Puree, scraping down side of bowl twice, til mixture is thick, smooth and creamy.
- Spoon into 4 chilled goblets. Serve immediately or refreeze for up to 30 minutes.

My favourite sinless treat, Cook time includes slow boil, cool down of mixture and freezer time. You can change the taste by using any extract you prefer ( almond, peppermint, orange etc - adjust these extracts to your taste ). You can also partially freeze and eat it semi frozen with chocolately liquid.

- Put milk through cocoa in a medium saucepan, cook on medium heat, stirring constantly until the mixture comes to a slow boil and sugar is dissolved Lower heat and simmer about 2 minutes, stirring mixture a few times (watching for burn/ boil over), stir in vanilla- set aside to cool Pour cooled mixture into a freezer safe covered container and freeze.
- Place frozen mixture in a blender, blend to a slush.
- Freeze any leftover portion.
- Note: I use my coffee grinder to get a finer grind of the sugar, not powdered, just a fine grind.
