QUICK AND EASY CHICKEN PARMESAN
Kid friendly, no fuss dinner using breaded chicken patties. Not a 5 star restaurant recipe, but quick and easy! Serve over spaghetti.

Steps:
- Pan fry Chicken Patties on both sides until slightly golden/browned in oil. Cover a bit to cook through.
- Spray baking dish with cooking spray, and add a drizzle of oil, add patties in single layer.
- Spread with spaghetti sauce and then cheese.
- Bake at 400, until cheese is melted. Can broil when almost melted to get slightly golden.
- Serve over spaghetti!

- Pat the chicken tenders dry with paper towels. Then, add them to a bowl and drizzle with olive oil.
- Combine the spices in a small bowl and stir until mixed. Sprinkle over the top of the chicken tenders.
- Toss the chicken tenders with the oil and spice blend until completely covered.
- Place the chicken tenders in the air fryer basket in a single layer. Work in batches if need be.
- Air fry at 380F for 9-10 mins, flipping halfway through, or until the chicken reaches an internal temperature of 165°F/74°C.

- Combine chicken, onion, parsley, egg, garlic, sea salt, and pepper in a bowl; mix well. Add mayonnaise and stir to combine; the mixture will be quite soft.
- Place flour in a shallow bowl. Drop large spoonfuls of the chicken mixture into the flour. Roll to coat and press gently into patties.
- Heat oil in a skillet over medium-high heat. Cook chicken patties in the hot oil until golden brown and no longer pink in the center, 5 to 7 minutes per side.

I 'borrowed' this recipe from the tv show 'Everyday Italian with Giada' and it is excellent! You don't miss the crust at all, we actually prefer it without!

Steps:
- Chop basil and rosemary and mix with garlic into olive oil.
- Brush herbs and oil onto chicken breasts and place in hot non-stick frying pan until golden on all sides without burning herbs.
- Line baking dish with foil and spray with 'Pam' or similar product, this makes clean up fast and easy!
- Place browned chicken on baking dish and spread top of chicken generously with tomato sauce.
- Place approximately 2 tablespoons of ricotta over the tomato sauce.
- Top with 1-2 tablespoons of grated mozzarella an 1-2 teaspoons parmesan.
- Sprinkle with salt and pepper to taste, and desired amount of Italian herbs. Just a light sprinkle will do!
- Add 1/2-1 tsp butter to each chicken piece.
- Bake for 15-20 minutes in a hot oven (400c)or until cheese is melted and browned.

- In a large bowl, stir together chicken and cracker crumbs. In a separate bowl, whisk together all other ingredients. Pour wet mixture into bowl with chicken and stir until well combined. Cover with dish towel and allow to sit for five minutes. Form into 5-7 patties. Can freeze at this time and cook them later.
- To cook: Place about 2 tablespoons oil in large skillet and heat over medium high heat for a few minutes. Reduce heat to medium and add patties. Cook until well browned on both sides, flipping once. To cook from frozen, follow same instructions but allow longer cooking time. Remove from heat once hot through.
