One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

5 fresh apricots, halved
1/4 cup apricot nectar
2 teaspoons sugar, divided
1/2 cup sliced fresh strawberries
1/2 teaspoon ground cinnamon
2 flour tortillas (8 inches)
Butter-flavored cooking spray
2 cups reduced-fat vanilla ice cream
1/4 cup fresh raspberries

Steps:

  • In a nonstick skillet, cook and stir the apricots, nectar and 1 teaspoon sugar over low heat until apricots are tender, about 5 minutes. Stir in the strawberries; cover and remove from the heat. Combine cinnamon and remaining sugar; set aside. , In another nonstick skillet, cook one tortilla over low heat for 1-2 minutes on each side or until golden and crisp. Spritz one side with butter-flavored spray and sprinkle with half of the cinnamon-sugar. Repeat with remaining tortilla. , Place a tortilla sugared side down; spread with fruit mixture. Top with remaining tortilla, sugared side up; cut into four wedges. Serve each wedge with 1/2 cup of ice cream and 1 tablespoon of raspberries.

1 tablespoon packed brown sugar
1/4 teaspoon ground cinnamon
2 whole wheat tortillas (8 inch)
1/2 small apple, cut into 1/4-inch slices (1/2 cup)
Cooking spray

Steps:

  • In small bowl, mix granulated sugar and 1/4 teaspoon cinnamon; set aside. In another small bowl, mix cream cheese, brown sugar and 1/4 teaspoon cinnamon with spoon.
  • Spread cream cheese mixture over tortillas. Place apple slices on cream cheese mixture on 1 tortilla. Top with remaining tortilla, cheese side down. Spray both sides of quesadilla with cooking spray; sprinkle with cinnamon-sugar mixture.
  • Heat 10-inch nonstick skillet over medium heat. Cook quesadilla in skillet 2 to 3 minutes or until bottom is brown and crisp; turn quesadilla. Cook 2 to 3 minutes longer or until bottom is brown and crisp.
  • Remove from skillet to cutting board; let stand 2 to 3 minutes. Cut into 8 wedges.

Steps:

  • Heat grill to medium-high heat.
  • Brush margarine onto both sides of tortillas; sprinkle evenly with combined sugar and cinnamon. Stack tortillas on microwaveable plate; cover with paper towel.
  • Peel bananas; cut lengthwise in half. Grill 3 to 4 min. on each side or until warmed and slightly browned. Meanwhile, microwave tortillas on HIGH 30 to 40 sec. or just until warmed.

2 (12 inch) flour tortillas
6 ounces Brie cheese, rind removed and cheese thinly sliced
1 sweet-tart apple, such as Fugi or Gala, thinly sliced
1 tablespoon brown sugar
¼ teaspoon ground cinnamon

Steps:

  • Melt 3/4 teaspoon butter in a large skillet over medium heat, tilting the skillet to evenly spread butter. Place 1 tortilla in the melted butter. Cover tortilla with Brie cheese slices and apple slices; sprinkle with brown sugar and cinnamon. Place the remaining tortilla over the filling.
