2 acorn squash
2 apples (peeled and chopped)
3/4 cup dried cranberries
3/4 cup walnuts (chopped)
2 tablespoons cinnamon ((or to taste))
1/2 cup dark brown sugar
3 tablespoons butter or vegan butter (softened)

Steps:

  • Preheat oven to 350°F.
  • Cut squash in half longways.
  • Remove seeds and pulp.
  • Pour ¼ cup water into a baking dish and add squash cut side down.
  • Place baking dish in the oven and bake for 30 minutes.
  • In a large mixing bowl, combine apples, cranberries, walnuts, cinnamon, brown sugar, and butter.
  • Remove squash from oven and let cool.
  • Turn over the halves and stuff the center of each squash with the apple/cranberry mixture.
  • Return to oven and bake for an additional 30 minutes or until tender.

Fruit and Nut Stuffed Acorn Squash is a perfect side dish for the fall. Bursting with apples and fall spices it's a healthy addition to any meal.

1 acorn squash (cut in half)
2 tablespoons butter
1 tablespoons brown sugar
1 apple (diced)
¼ teaspoon cinnamon
¼ teaspoon nutmeg
salt
⅛ cup walnuts (chopped)
⅛ cup pistachios (chopped)
⅛ cup dried cranberries (chopped)
1 teaspoon vanilla
honey

Steps:

  • Cut the squash in half from pole to pole. Scoop out seeds and place flesh side down in a microwave safe dish. Add 1/4 cup water and cover with plastic wrap. Vent the plastic with 3-4 knife holes and microwave for 15-20 minutes until the squash is tender.
  • Remove from the microwave and place flesh side up on a baking sheet. Combine butter and brown sugar and brush over the squash. Place under broiler for 2-4 minutes until golden brown.
  • While the squash is cooking, prepare the stuffing. In a 10-inch skillet, melt a tablespoon of butter. Once melted and hot, add the diced apples. Sauté for 8-10 minutes until soft, but not mushy. Add in the cinnamon, nutmeg, and a pinch of salt. Place in a bowl and add vanilla and chopped walnuts and cranberries.
  • Fill the squash centers with the apple filling and top with chopped pistachios and a drizzle of honey. Serve warm.

1 Tablespoon butter
1/4 cup brown sugar
3/4 cup raisins (craisins, diced apples and chopped nuts of choice)

Steps:

  • Depending on the size of the acorn squash, you might need to increase the filling ingredients. You'll want each squash half to be generously full.
  • Preheat oven to 375F.
  • Cut acorn squash in half crossway.
  • Scoop out the seeds and stringy insides to leave only the cleaned flesh.
  • In an oven safe dish, place the two squash sides. Position the halves so that they are supported and do not tip over.
  • Next add 1 Tablespoon butter to each squash.
  • Add your fruit/nut filling.
  • Add one half of the brown sugar to each squash.
  • Bake uncovered for 45 minutes or until flesh is tender.

3 acorn squash
3 tablespoons olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground black pepper
¾ cup pearled farro
2 ¼ cups vegetable broth
1 (4 ounce) package maitake mushrooms, roughly chopped
1 cup chopped onion
2 tablespoons Riesling wine
½ cup dried cranberries
1 sprig fresh thyme
¼ cup chopped pecans, toasted
2 tablespoons chopped fresh parsley
1 teaspoon balsamic vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line an extra-large baking sheet with foil.
  • Cut each squash in half, slicing through stem and blossom ends. Remove seeds. Prick skin with a paring knife. Brush 1 tablespoon oil on cut sides and sprinkle with 1/4 teaspoon each salt and pepper. Arrange, cut-sides down, on the prepared baking sheet.
  • Bake in the preheated oven until tender, 45 to 50 minutes. Reduce oven temperature to 300 degrees F (150 degrees C).
  • Meanwhile, rinse and drain farro, then transfer to a saucepan. Stir in broth and 1/4 teaspoon salt. Bring to a boil over high heat. Reduce heat to medium-low and simmer, covered, until tender, about 20 minutes. Drain any excess broth.
  • Heat remaining 2 tablespoons oil in a large skillet over medium heat. Add mushrooms and onion; cook until mushrooms have softened and onion is translucent, 8 to 10 minutes. Add wine; cook, stirring, until reduced by half, about 30 seconds.
  • Add cranberries and thyme; cook, stirring, until cranberries have plumped, about 4 minutes more. Remove thyme. Stir in cooked farro, pecans, and parsley. Heat through. Season with remaining salt and pepper and balsamic vinegar. Spoon farro mixture into the squash halves. Return to oven to keep warm until serving.

This stuffed squash isn't trying to trick you into thinking it's stuffed with meat. And it doesn't have tothe quinoa filling is satisfying enough on its own, full of spiced warmth (thanks to the curry powder) and salty sweetness (from the pistachios and cranberries).

2 medium acorn squash (2 to 2 1/4 pounds each)
3 tablespoons apple cider vinegar
3 tablespoons olive oil
2 tablespoons pure maple syrup
Kosher salt and freshly ground black pepper
1 small onion, chopped
1 cup red quinoa, rinsed well
1 teaspoon mild curry powder
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 cup dried cranberries
1 cup loosely packed fresh parsley leaves, chopped
1/4 cup roasted, salted and shelled pistachios, coarsely chopped

Steps:

  • Position an oven rack in the middle of the oven; preheat the oven to 400 degrees F.
  • Cut each squash in half lengthwise and scoop out and discard the seeds. Arrange the halves in a large baking dish, flesh-side up.
  • Whisk together the vinegar, 2 tablespoons of the oil and the maple syrup in a cup. Brush the flesh side of the squash halves with some of the maple mixture and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Put the squash flesh-side down in the baking dish, then brush the skin side with maple mixture and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Roast until the squash is fork-tender, 50 to 60 minutes. Poke the inside of the squash halves with a fork and brush generously with more of the maple mixture.
  • Meanwhile, heat the remaining 1 tablespoon oil in a medium saucepan over medium-high heat. Add the onions and cook, stirring occasionally, until soft and golden brown, about 6 minutes. Add the quinoa, curry powder, cinnamon, and 1 teaspoon salt and stir until the spices are toasted, about 1 minute. Add 2 cups water and bring to a simmer. Lower the heat, cover the pan and simmer, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed, 20 to 24 minutes. Remove from the heat and let sit, covered, for 5 minutes. Uncover and stir in the cranberries, remaining maple mixture, half of the parsley and half of the pistachios.
  • Stuff the squash halves with the quinoa and sprinkle with the remaining parsley and pistachios. Serve warm or at room temperature.

2 -3 large acorn squash
1 1/2 cups onions
1 tablespoon olive oil
1 stalk celery (diced)
2 garlic cloves (minced)
2 tart apples (chopped)
1 1/2 cups cooked brown rice
1/2 cup sunflower seeds
6 -8 dried apricots (chopped)
1/4 cup nuts (chopped)
1/4 raisins or 1/4 dried cranberries
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
1/4 teaspoon dried oregano
1 pinch black pepper

Steps:

  • Cut squash in half and scoop out seeds and strings.
  • Lightly grease baking sheet. Place squash on sheet, cut side down and back at 350 for 40 - 50 minutes, until soft but not mushy. Remove from heat and place, cut site up, on sheet.
  • Saute onion, celery and garlic in olive oil until translucent.
  • Add all other filling ingredients and mix until blended. Use a large spoon to fill squash halves.
  • Cover squash with aluminum foil and bake at 375 for 20 - 30 minutes until all ingredients are well cooked.

3 acorn squash, halved and seeded
2 tablespoons stick margarine
1 cup chopped onions
3 cups peeled, seeded, and chopped Granny Smith apples
½ cup golden raisins
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the squash onto a baking sheet cut side down. Fill the baking sheet with 1/2 inch of water.
  • Bake the squash in the preheated oven for 40 minutes. Drain off any water remaining in the baking sheet.
  • While the squash is baking, melt the margarine in a large skillet over medium heat. Cook the onion and apple in the margarine until the onion has softened and turned translucent, 10 to 15 minutes. Scrape the mixture into a bowl to cool until the squash has finished baking.
  • Once the squash is done, stir the raisins, brown sugar, cinnamon, and Cheddar cheese into the apple mixture. Turn the squash cut side up on the baking sheet and fill with the apple mixture. Return the squash to the oven; bake until the filling is hot and the cheese has melted, about 15 minutes.
