4 pounds sweet potatoes, peeled and cubed
1-1/2 cups unsweetened apple juice
1/4 cup lemon juice
4 small bananas, peeled and chopped
2 large apples, peeled and chopped
2 tablespoons butter
1 tablespoon minced fresh gingerroot
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 cup chopped dried apricots
1 cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook just until tender, 10-15 minutes. Drain. In a large bowl, mash potatoes with apple juice and lemon juice., Meanwhile, in a large skillet, saute bananas and apples in butter until tender. Stir in the ginger, salt, cinnamon and allspice; cook and stir 5 minutes longer. Cool slightly., Place banana mixture in a food processor; cover and process until smooth. Stir banana mixture and apricots into mashed potato mixture. Transfer to a 13x9-in. baking dish coated with cooking spray; sprinkle with pecans., Bake, uncovered, at 350° until edges are golden brown, 40-50 minutes.

2 tablespoons unsalted butter, melted
2 tablespoons olive oil
3/4 teaspoon smoked paprika
Kosher salt
6 small to medium sweet potatoes
1 tablespoon olive oil
2/3 cup chopped shelled unsalted pistachios
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Kosher salt
1/4 teaspoon sugar, optional
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • For the sweet potatoes: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
  • Combine the butter, oil, paprika and 1/2 teaspoon salt in a small bowl.
  • Use a sharp knife to cut 1/8-inch-thick slices crosswise through each potato, slicing about two-thirds of the way through so that the potatoes remain intact.
  • Put the potatoes on the prepared baking sheet and brush with about half of the paprika butter, trying to get some of the butter between the slices. Bake until about halfway cooked and slightly pliable, about 30 minutes. Use a fork to gently apply pressure to the tops of the potatoes to fan the slices slightly. Brush in-between the slices with the remaining butter, then bake until cooked through and slightly crispy on top, about 35 minutes more.
  • For the pistachio crumble: Heat the oil in a medium skillet over medium-high heat. Add the pistachios, paprika, chili powder, garlic powder, onion powder, 1/4 teaspoon salt and the sugar, if using. Cook, stirring often, until aromatic and lightly toasted, 3 to 4 minutes. Stir in the parsley.
  • Serve the sweet potatoes sprinkled with the pistachio crumble.

  • Place the sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until tender. Meanwhile, in a small saucepan, combine the sugar, cornstarch and salt. Gradually stir in orange juice. Bring to a boil; cook and stir for 2 minutes or until thickened. 1 cup graham cracker crumbs
1/4 cup firmly packed dark brown sugar
1/2 teaspoon pumpkin pie spice
5 tablespoons unsalted butter, melted
Filling
18 ounces sweet potatoes
3 large eggs
3 tablespoons butter
1/2 cup firmly packed dark brown sugar
2 tablespoons honey
1 teaspoon pumpkin pie spice
1/2 cup whipping cream
Topping
1/4 cup (1/2 stick) unsalted butter
1/4 cup firmly packed dark brown sugar
2 tablespoons honey
1/3 cup whole almonds, toasted
1/3 cup whole hazelnuts, toasted
1/3 cup walnuts, toasted

Steps:

  • For Crust: Coarsely grind all nuts in processor. Blend in graham cracker crumbs, sugar and pumpkin pie spice. Add butter and blend in using on/off turns until moist crumbs form. Press crumbs onto bottom and sides of 9-inch deep-dish glass pie dish. Set aside.
  • For Filling: Preheat oven to 350°F. Bake sweet potatoes until tender, about 1 hour. Cool potatoes; peel. Puree in processor. Transfer to bowl and whisk in eggs. Cook butter in heavy medium skillet over medium heat until melted and brown. Add sugar, honey and pumpkin pie spice and boil 1 minute, stirring constantly. Whisk in cream. Add butter mixture to potato puree; blend until smooth.
  • Pour filling into crust. Bake until center moves only slightly when pan is shaken, covering with foil if crust browns too quickly, about 40 minutes.
  • Meanwhile, Prepare Topping: Stir first 3 ingredients in heavy medium saucepan over low heat until sugar dissolves. Increase heat and boil 1 minute. Mix in nuts, coating completely.
  • Spoon hot nut mixture over pie. Continue baking until topping bubbles, about 5 minutes. Transfer to rack and cool completely.

This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

2 cups sifted all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
¾ cup chopped walnuts
1 cup raisins
1 tablespoon orange zest
1 egg
1 cup milk
2 tablespoons butter, melted

Steps:

  • Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, beat the egg well. Mix in milk and melted butter or shortening.
  • Sift flour, baking powder, and salt together into a mixing bowl. Add sugar, nuts, raisins and orange rind; mix well. Blend egg mixture into fruit and nut mixture until flour is just moistened. Turn batter into greased loaf tin, and allow to stand for 20 minutes.
  • Place pan in the center of the oven. Bake for 55 to 60 minutes. Turn bread out on wire rack, and cool for several hours before slicing.

4 medium sweet potatoes, peeled and cubed
3 tablespoons butter, cut into chunks (substitute cashew butter for a vegan alternative)
4 tablespoons orange juice
2 -4 tablespoons light brown sugar
1/2-1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 cup almonds, sliced
1/4 cup dried cranberries, chopped (into halves or thirds)

Steps:

  • Steam the sweet potato cubes over medium heat about 25 minutes (time is given from the moment the stove is turned on until the sweet potatoes are done).
  • Place the sweet potatoes and butter in a medium bowl and mash with an electric mixer on low speed (the heat from the sweet potatoes should melt the butter). Add the rest of the ingredients and combine.
  • Notes: The orange juice adds quite a bit of sweetness to this dish. You may wish to add the brown sugar slowly, tasting as you go, to avoid over-sweetening.
