This mexican dessert is a not too sweet treat. The roll ups are a nice way to end a summer meal. For a treat, very lightly dust the roll ups with icing sugar. They are also perfect as a snack. By Mission Foods.

2 large flour tortillas
3 ounces strawberry cream cheese
3 kiwi, peeled and sliced
1 cup peach, sliced (fresh, frozen or canned -if using canned, make sure there is very little syrup or juice on them i.e.)
1 cup strawberry, diced
mint sprig (optional)
icing sugar (optional)

Steps:

  • Spread cream cheese on the whle surface of each tortilla; Arrange kiwi slices over the top 2/3 of the tortilla, leaving the bottom 1/3 with cream cheese only.
  • Top kiwi with a layer of peach slices and then diced strawberries.
  • Roll the tortilla toward the end only covered with cream cheese.
  • Chill for 10 minutes.
  • Slice each tortilla roll into 8 slices each; Garnish with mint sprigs if desired.

In this twist on the classic peanut butter and banana sandwich, peanut butter is spread on flour tortillas, and then wrapped around a cinnamon and honey-sweetened mixture of bananas and raisins.

2 Bananas, thinly sliced
¼ cup Raisins
2 tablespoons Honey
¼ teaspoon Cinnamon
½ cup Peanut butter
¼ cup Chopped Peanuts or other Nuts

Steps:

  • Combine fruit, honey and cinnamon in a bowl. Spread each tortilla with 1 tablespoon peanut butter, leaving a 1-inch border. Spoon fruit filling down the center of each tortilla. Sprinkle with nuts, if desired. Fold in 2 sides of tortilla to meet in center, then roll up, bottom to top. Place seam-side down. Halve each tortilla on a sharp diagonal.

1/2 cup raisins

Steps:

  • In a small bowl, combine cream cheese and honey.
  • Mix thoroughly.
  • Stir in raisins and apples.
  • Divide raisin-apple-cream mixture evenly among four tortillas.
  • Sprinkle with cinnamon sugar.
  • Roll tortillas up.
  • Place tortillas seam-side down on a microwave-safe plate.
  • Heat each roll in microwave on half power for one minute or until warmed through.

2 teaspoons cinnamon
1/4 teaspoon vanilla
4 (10 inch) flour tortillas

Steps:

  • Set oven to broil.
  • In a mixing bowl blend ricotta cheese, sugar, cinnamon and vanilla.
  • Spread about 2 tablespoons of filling down center of each tortilla.
  • Fold ends of each tortilla in and roll up like a burrito.
  • Place on cookie sheet and broil approximately.
  • 1 minute.
  • Serve warm.
