These Vegan Skillet BBQ Bake Beans are incredibly delicious and SO much better than the canned version! These are healthy, homemade, oil-free and refined sugar-free. They are smoky, sweet and perfectly balanced in flavor!

1/2 cup (64g) chopped green bell pepper
1/2 packed cup (67g) finely diced white onion
3 large cloves garlic, minced
1/4 cup water
1/4 teaspoon fine sea salt
1 1/4 cups tomato puree/sauce
1/4 cup water
1/4 cup + 1 tablespoon pure maple syrup
1 tablespoon liquid smoke (I used Lazy Kettle brand which is amazing in this, if you are using another brand, start out with just 2 teaspoons and add more if desired)
1/4 cup vegan worcestershire sauce (found at Whole Foods or Amazon)
1/4 teaspoon fine sea salt
1/2 teaspoon black pepper
2 cans great northern beans (drained and rinsed)

Steps:

  • Add the ingredients under just veggies to a large skillet, bell pepper, onion, garlic, water and just 1/4 teaspoon salt. I used my 10 inch iron skillet. Turn to medium heat and once simmering, cook for 5 minutes until beginning to get tender and basically all the water should be gone.
  • Preheat an oven to 325 degrees.
  • Add the remaining ingredients except the beans....tomato sauce, other 1/4 cup water, syrup, liquid smoke, worcestershire sauce, salt and pepper. Stir well until thoroughly mixed. Now gently stir in the beans.
  • Add the skillet to the oven and cook for about 30-45 minutes until it is bubbling and the sauce has thickened some, but still some liquid remaining. Remove and serve.

1 tablespoon vegan margarine (such as Earth Balance®)
2 cups canned pinto beans, rinsed and drained
1 ½ tablespoons chopped onion
¼ cup sweet pickle relish
2 tablespoons dill pickle juice
2 tablespoons ketchup
1 tablespoon molasses
1 tablespoon tomato paste
1 tablespoon brown sugar
¼ teaspoon hot sauce (such as Tabasco®)
1 dash liquid smoke flavoring
¼ teaspoon garlic powder
¼ teaspoon salt-free seasoning blend
¼ teaspoon dry mustard

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt vegan margarine in a skillet over medium heat. Add onion. Cook and stir until translucent, about 5 minutes. Mix together with beans in a casserole dish.
  • Stir relish, pickle juice, ketchup, molasses, tomato paste, brown sugar, hot sauce, liquid smoke, garlic powder, salt seasoning, and mustard together in a bowl. Add to the bean mixture and mix to coat.
  • Bake in the preheated oven until sauce is thick and casserole is heated through, about 1 hour.

1 ounce dried shiitake mushrooms (about 1 heaping cup)
1 tablespoon olive oil
1 large yellow onion, diced (about 2 cups)
1 red bell pepper, diced (about 1 cup)
4 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon hot smoked paprika
1/4 teaspoon cayenne pepper
3/4 cup tomato puree
1/4 cup bourbon
1/4 cup vegan molasses
2 tablespoons packed vegan light brown sugar
1 tablespoon vegan Worcestershire sauce
1 tablespoon yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through
8 cups low-sodium vegetable broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the dried mushrooms in a medium bowl and cover with 2 cups boiling water, make sure each mushroom is submerged. Let steep for 10 minutes. Strain through a fine-mesh strainer, reserving the liquid. Roughly chop the steeped mushrooms and set aside.
  • Heat the olive oil in an ovenproof heavy-bottomed pot or Dutch oven over medium-high heat. Add the onions, bell peppers and chopped mushrooms and cook, stirring often, until the vegetables are slightly softened, 3 to 4 minutes. Reduce the heat to medium and add the garlic, chili powder, smoked paprika and cayenne and cook, stirring, until fragrant, about 1 minute.
  • Add the tomato puree, bourbon, molasses, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/4 teaspoon pepper, bring to a simmer and cook to combine, about 3 minutes. Add the beans, vegetable broth and reserved mushroom liquid. Raise the heat to high, bring to a boil and cook for 10 minutes. Cover the pot, transfer to the oven and bake until the beans are tender, about 3 hours.
  • Uncover and increase the oven temperature to 350 degrees F. Bake until the sauce thickens and the beans on top begin to brown, about 30 minutes.

2 portobello mushrooms
⅓ cup canola oil
¼ cup liquid aminos
⅓ cup maple syrup
2 tablespoons brown sugar
1 teaspoon smoked paprika
1 tablespoon canola oil
½ medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dijon mustard
¾ cup water, plus more as needed
¼ cup tomato paste
¼ teaspoon freshly ground black pepper
1 ½ teaspoons kosher salt, plus more taste
¼ cup brown sugar
1 tablespoon vegan worcestershire sauce
2 tablespoons molasses
1 tablespoon maple syrup
3 tablespoons apple cider vinegar
30 oz great northern beans, drained and rinsed

Steps:

  • Make the portobello bacon: Slice the portobello mushrooms into ¼-inch (6 mm) thick slices.
  • In a 9 x 13-inch (22 x 33 cm) baking dish, whisk together the canola oil, liquid aminos, maple syrup, brown sugar, and paprika.
  • Lay the mushroom slices in the dish, and let marinate for 30 minutes, flipping halfway through.
  • Make the portobello bacon: Preheat the oven to 400°F (200°C). Set a wire rack inside a rimmed baking sheet.
  • Transfer the mushroom slices to the wire rack, spacing evenly so they aren't touching.
  • Bake for 30-40 minutes, until the mushrooms are slightly leathery and have lost most of their moisture and the edges are crispy. Remove from the oven and let cool completely; the mushrooms will continue to crisp as they cool. Once cool, roughly chop the mushrooms into ½-inch (1 ¼ cm) pieces.
  • Meanwhile, make the baked beans: Heat the canola oil in a large skillet over medium-low heat. When the oil is shimmering, add the onion and sauté for 10 minutes, until translucent and starting to caramelize. Add the garlic and sauté for another 5 minutes, until translucent and softened. Add the paprika and mustard and cook for about 30 seconds, until fragrant.
  • Stir in the water, tomato paste, pepper, and salt. Bring to a simmer, and then add the brown sugar, vegan Worcestershire, molasses, maple syrup, and apple cider vinegar and stir to combine. Add the beans. Increase the heat to medium and simmer for 30 minutes, stirring frequently so the sauce doesn't burn. Adjust the heat as necessary to maintain a low simmer, and add more water, a few tablespoons at a time, if the mixture starts to look dry. Season with more salt to taste, then remove the pan from the heat.
  • Serve the beans immediately, garnished with the portobello bacon, or let cool to room temperature, cover, and refrigerate until ready to serve. Store the portobello bacon in an airtight container at room temperature until ready to use.
