This recipe has been in our family for years. The only problem with it is that there's never enough. It's great for parties, too.

vegetable oil
4 cups all-purpose flour
6 tablespoons garlic salt
3 tablespoons ground black pepper
4 eggs, beaten
8 skinless, boneless chicken breast halves - cut into small chunks

Steps:

  • Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
  • Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
  • Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

1/2 cup packed brown sugar
1/4 cup white sugar
3/4 cup all-bran cereal
1 cup quick-cooking oats
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup chopped dried apricot
1/2 cup chopped pecans
1/2 cup shortening
1 egg
1 teaspoon vanilla
1/4 cup buttermilk
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg

Steps:

  • In small bowl mix the flour mixture ingredients together.
  • Starting with the brown sugar layer the ingredients in a 1 quart sized glass jar in the order given.
  • Ending with the flour mixture.
  • Attach a card with directions and recipe.
  • Preheat the oven to 350F degrees.
  • Lightly spray baking sheet with bakers coating.
  • Empty the contents of the jar into a large bowl.
  • Blend the mixture until well combined.
  • Using wooden spoon work in shortening until the mixture is moistened resembling lumby biscuit dough.
  • Mix together egg,vanilla,and buttermilk.
  • Using a wooden spoon blend the egg mixture into dough until well combined.
  • Drop teaspoonful 2 inches apart onto prepared baking sheet.
  • Bake at 350' for 10 to 14 minutes or until the edges are lightly browned.
  • Place cookies on a rack to finish cooling.

1 cup dried fruit, chopped (any combination you want, but I recommend using 3 or 4 types)
1/2 ounce unsweetened chocolate melted
1/4 cup honey
1/3 cup crushed amaranth or oat cereal (1 cup uncrushed)
canola oil
shredded unsweetened coconut or crushed cereal for coating nuggets

Steps:

  • If using a hard dried fruit like prunes or apricots, let stand in boiling water for 5 minutes. Drain. Put all fruit in food processor and chop fine. Melt chocolate over very low heat, stirring constantly. Remove pan from heat and blend in honey until smooth. Add fruit and crushed cereal. Let cool a bit. Put a little canola oil on hands and mold into 11/2-inch balls. Roll in coconut or crushed cereal. Chill.

The very best vegan/vegetarian fried "chicken." These jackfruit nuggets are packed with flavor and have a crispy fried shell with a secret ingredient to hold everything together. I love using my air fryer for these recipes, as it cuts out so much of the oil and fat. And creates these perfectly crispy pieces. Toss in your favorite wing sauce and enjoy!

1 cup almond milk
1 teaspoon apple cider vinegar
3 tablespoons aquafaba (chickpea water)
2 tablespoons cornstarch
2 cups all-purpose flour
3 tablespoons paprika
3 tablespoons ground white pepper
2 tablespoons garlic salt
1 tablespoon celery salt
1 tablespoon ground ginger
1 tablespoon dried mustard powder
1 tablespoon ground black pepper
2 teaspoons salt
1 ½ teaspoons ground thyme
1 ½ teaspoons dried basil
1 teaspoon dried oregano
1 cup panko bread crumbs
6 medium (blank)s rice paper sheets
1 (14 ounce) can jackfruit, drained and shredded
1 tablespoon vegetable oil
cooking spray

Steps:

  • Whisk together almond milk and vinegar; let sit for 5 minutes. Whisk in aquafaba and cornstarch.
  • Mix flour, paprika, white pepper, garlic salt, celery salt, ginger, mustard powder, black pepper, salt, thyme, basil, and oregano in a shallow bowl until well combined. Place bread crumbs in another shallow bowl.
  • Cut rice paper sheets in half. Dip one piece of rice paper in warm water until it becomes soft and pliable, 30 seconds to 1 minute. Lay rice paper on a work surface and fill with some jackfruit. Fold the edges over the jackfruit and roll into a nugget shape. Repeat with remaining rice paper sheets and jackfruit.
  • Roll each nugget in the flour mixture until coated. Dip in the milk mixture, then dip in the bread crumbs, then dip into the flour mixture again, making sure each nugget is completely coated.
  • Spray the basket of an air fryer with cooking spray. Place nuggets in the basket, making sure to leave room between the pieces.
  • Air-fry at 370 degrees F (188 degrees C) for 10 minutes. Flip nuggets and cook until crispy, 5 more minutes.
