Grilled Fruit Skewers With Spicy Maple Cumin Glaze image

Choose your favorite seasonal fruit, douse it in a spicy maple syrup glaze, and cook it over charcoal for a healthy, summer dessert.This recipe is courtesy of Epicurious.

1/2 cup maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 cup chopped fruit, such as pineapple and peaches
4 bamboo skewers

Steps:

  • Light your charcoal fire or barbecue for grilling directly onto.
  • Soak the bamboo skewers in a bowl of water, and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on to the soaked skewers. Place the skewers on the grill and cook directly over medium-high heat for 1 ½ minutes on each side, until golden and caramelized. Serve warm.

Glaze
1/2 cup pure maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon

4 cups fruit chunks such as pineapple, peaches, and/or bananas

Steps:

  • Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.

2 nectarines
2 plums
Fresh mint leaves
1 cup maple syrup
1 cup cocoa powder
1/4 teaspoon orange extract

Steps:

  • Cut the fruit into bite sized chunks. Thread a piece of each fruit onto a skewer along with a mint leaf. Set aside.
  • In a small saucepan over medium heat, add the maple syrup. Whisk in the cocoa powder until the mixture is smooth. Stir in the orange extract and cook until hot. Don't let it come to a boil. Spoon into a serving dish and serve immediately as a dipping sauce with the fruit skewers.

1 cup plain yogurt, preferably thick Balkan-style
3 tablespoons pure maple syrup
1 teaspoon orange peel
1/2 teaspoon vanilla
4 skewers
2 kiwi fruits
1 pear
1 nectarines or 1 peach
1/4 cup grapes
angel food cake (cubed in 1-inch cubes or pound cake in 1-inch cubes)
1 tablespoon butter, melted
1 teaspoon granulated sugar
1/2 teaspoon cinnamon

Steps:

  • Soak wooden skewer in water for 20 minutes before grilling. Meanwhile, oil grill and prehet to medium-low.
  • Stir yogurt with maple syrup, orange peel and vanilla.
  • Peel kiwi and cut into large bit-size chunks. Peel pear, if you wish, or leave skin intact. Then cut pear and nectarine into 1-inch wedges. Thread fruit randomly with cake, if using on skewers.
  • In a small bowl, stir butter with sugar and cinnamon.
  • Place skewers on grill and barbecue, turning frequently, until fruit is hot and cake is grilled, about 4 minutes. Just before removing from grill, brush fruit with butter mixture. Serve with dipping sauce.
