These are the best oatmeal cookies I've ever had! Very buttery and very hearty. Any dried fruit works well such as cherries, raisins, cranberries, blueberries, or chopped apricots. For a really decadent treat, use chocolate chips and nuts instead of fruit.

1 ¼ cups butter or margarine, softened
1 ¼ cups brown sugar
1 egg
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups quick cooking oats
1 cup dried cranberries, or other dried fruit

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Sift together the flour, baking soda, salt, cinnamon and nutmeg, gradually stir into the creamed mixture. Finally, stir in the quick oats and dried fruit. Drop by rounded spoonfuls onto the unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4 cups old-fashioned oats
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup raisins
1 cup chopped walnuts
1 cup sweetened shredded coconut
1 cup chopped dates

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the oats, flour, baking, soda, salt and cinnamon; gradually add to the creamed mixture and mix well. Stir in raisins, walnuts, coconut and dates. , Roll into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 325° for 14-16 minutes or until edges are firm. Remove to wire racks to cool.

1 large egg
1 tsp vanilla extract
1 cup instant oats
1/2 cup whole wheat flour ((or all-purpose flour))
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips ((optional))
1/4 cup raisins

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
  • In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.
  • Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop and flatten to about ¾'' thickness. Bake 10 minutes then allow in the pan for at least 5-10 minutes and enjoy!

2 tablespoons sunflower seed butter

1/2 cup packed shredded apple (I used Gala)
1 cup rolled oats
3/4 cup oat flour
2 tablespoons hemp seeds
1 tablespoon chia seeds
2 tablespoons shredded coconut (optional)

Steps:

  • Preheat oven to 350F. Line a cookie sheet with parchment paper.
  • In a large mixing bowl, mash together your bananas, sunflower seed butter and vanilla.
  • Add your shredded apple, oatmeal, oat flour, hemp seeds, chia seeds and shredded coconut. Mix all the ingredient together.
  • Form 12 cookies and place them on the prepared cookie sheet. They don't spread, so don't worry about putting them close together.

3/4 cup (100 g/3.5 oz.) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg (, optional)
1/4 teaspoon salt
1/2 cup (1 stick/115 g) unsalted butter, at room temperature
1/2 cup (100 g/3.5 oz.) light brown sugar (dark is fine, too)
1/4 cup (50 g/1.7 oz.) granulated sugar
1 large egg (, at room temperature)
1 teaspoon pure vanilla extract
1 and 1/4 cups ((120 g/4.3 oz.) old-fashioned/rolled oats)
1-2 cups add-ins ((see note for options))

Steps:

  • In a large bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a standing mixer fitted with the paddle attachment, beat butter and sugars for 2-3 minutes, until fluffy. Beat in the egg until combined, then beat in vanilla extract. Add flour mixture and beat on low speed just until combined. Don't over mix. Add in oatmeal and all other add-ins, and keep mixing on low just until combined. The less you mix, the softer the cookies will be. Dough will be sticky and soft at this point, so I highly recommend chilling it for at least 30-60 minutes. Cover and place in the fridge.
  • Preheat oven to 350°F/180°C. Line pan with parchment paper and set aside.
  • Drop rounded balls of dough onto prepared baking sheet, the size of 2 tablespoons each, and spacing 2 inches apart. Bake for 10-12 minutes, until cookies just begin to brown at the edges and center is still soft. Cookies will appear undone and moist in the center, but will continue to bake on the warm baking sheet. Leave to cool for 10 minutes, then transfer to a wire rack to cool completely.
  • Store cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months. To thaw, leave on counter, still covered, or overnight in the fridge.

HONEY-SWEETENED BREAKFAST COOKIES

When I'm looking for a breakfast treat with a healthy vibe I reach for these oatmeal breakfast cookies. They are light and cakey and packed with toasted almonds and bits of dark chocolate and dried fruit. The best part: They're made with ground oats and honey, so I can feel good about indulging in them.

2 1/2 cups rolled oats
1/2 cup almond flour or whole-wheat flour (See Cook's Note)
1 1/4 teaspoons ground cinnamon
1 1/8 teaspoons fine salt
1 teaspoon baking powder
1/2 teaspoon baking soda
6 tablespoons unsalted butter, at room temperature
1/2 cup honey (I like wildflower honey)
1/3 cup applesauce (I like unsweetened)
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
1/2 cup golden raisins
1/4 cup dried cranberries
3/4 cup dark chocolate chips
1 cup toasted unsalted almonds, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
  • Combine 2 cups of the rolled oats, the almond flour, cinnamon, salt, baking powder and baking soda in a food processor. Process until the oats are ground, about 1 minute; a few larger bits of oats are okay. (Alternately you can grind 1 cup of the oats at a time in a blender.) Transfer to a medium bowl and add the remaining 1/2 cup of whole oats. Set aside.
  • Beat the butter in a stand mixer fitted with the paddle attachment on medium speed until smooth, about 1 minute. Beat in the honey until smooth and combined, about 30 seconds. Scrape down the sides of the bowl. Add the applesauce, eggs and vanilla and mix on medium-low speed to combine. The mixture will look soupy-that's okay.
  • Add the oat mixture to the wet ingredients and blend on low to combine. Stop and scrape down the sides of the bowl. Add the raisins, cranberries, chocolate chips and almonds. Mix on low until well combined. The dough will be looser than normal cookie dough.
  • Portion the dough into 1/3-cup portions and place 6 portions on each sheet pan, leaving about 2 inches between each cookie and between the cookies and the edges of the pan. Flatten the dough portions to 1 inch in thickness. Bake one pan at a time (the second batch can sit at room temperature while the first bakes) until the cookie edges are golden brown and the centers feel set, 20 to 22 minutes.
  • Cool the cookies on the parchment. Store in a covered container for up to 4 days, or freeze in freezer bags for up to 2 weeks.

1/2 cup apple juice concentrate
1 egg
1 teaspoon vanilla
1 cup whole wheat pastry flour
1 cup oats
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup raisins

Steps:

  • Cream the butter and apple juice concentrate together until blended. It may not be totally blended but the butter should be in small clumps. Add the egg and vanilla and mix well. In a separate bowl combine remaining ingredients except raisins. Add the dry ingredients to the butter mixture and mix well. Stir in the raisins. Preheat oven to 350 degrees. Roll tablespoon size cookies into a ball and press onto sheet. (I use a baking stone so I am not sure if you will need to grease and ordinary sheet.) Cook for about 10 minutes or until they look set. They will not brown the same as ordinary cookies because they do not have white or brown sugar in them so don't wait for them to brown! I would recommend pressing lightly on the top of one to see if it is set. Enjoy! Makes 2 dozen cookies.
