Fruit Bread image

This delicious recipe will make a soft, fruit loaf, suitable for everyone, and on the plus side.....you don't need a bread maker.

Time 2h15m

Yield Makes Small loaf

Number Of Ingredients 7

500g Strong bread flour (White or brown)
25g Yeast (fresh or dried)
300g warm water
Pinch of salt
Mixed fruit (measure by how fruit you want your bread)
2tsp of crushed porridge oats to sprinkle on top.
Spray bottle of water

Steps:

  • Weigh out all the Ingriedients, you have to make sure it is exact or the bread could go wrong.
  • Mix the flour, mixed fruit and salt together. Dissolve the yeast in the warm water. ** with the mixed fruit I just measured this by eye as some people like loads of fruit and other just a small amount. I would say I out about 200-300g in mine. **
  • Once the yeast is completely dissolved in warm water, slowly pour into the flour mix, and stir with a spatula or wooden spoon.
  • As you gradually pour the water in the mix will start to stick together you may need a little less or more water. If the dough is too sticky stop adding water and add just a sprinkling of flour.
  • Take the dough out and knead for 5-10mins it should be of an elasticity consistence and not too dry and not too wet. It should not stick to your work surface, if this happens keep kneading.
  • Once kneaded place back in the bowl and cover with a cloth and leave to rise in a warm place, for around 20mins. Whilst this is happening grease the tin of your choice with a small amount of oil or butter.
  • Once risen take the dough out and knead again. Knocking all the air out. I chose a ringed tin for my bread so I cut the bread into small sections and rolled into balls and placed in the tin. You can use and shape tin you like or just a baking try is fine. Sprinkle rolled oats over the top
  • Leave to rise for another 20mins to half an hour placing a tea towel over the top and spray it with water to keep a crust from forming on the bread while rising. After 20mins place in an oven preheated of 200c
  • Leave the bread for 30mins then check on it, if it is still springy leave in for a further 10mins, after take out and tip the bread out of the tin, place back in the oven at 150c to cook underneath side.
  • After 20mins check the bread tapping the bottom and if you get a hollow sound it's done. Turn the bread over and place the tea towel back on top spraying with water again, this keeps a crust on the bread. Once cooled you r ready to eat your bread

1/2 lb plain flour
2 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
3 1/2 ounces light brown sugar
3 ounces unsalted butter
4 fluid ounces golden syrup or 4 fluid ounces light corn syrup
5 fluid ounces milk
2 eggs, lightly beaten
2 oranges, zest only
2 ounces dried apricots, finely chopped

Steps:

  • Grease and line a deep 7-inch square cake tin.
  • Sift the flour, ginger, baking powder and bicarbonate of soda together.
  • Place sugar, butter, syrup and milk in a pan and warm gently until melted and blended.
  • Do not boil.
  • Add to the flour with the eggs and mix thoroughly.
  • Stir in orange zest and apricots.
  • Turn into the baking tin and bake at 325ºF for 60-65 minutes or until firm to the touch.
  • Turn out and cool.
  • The flavour of this cake improves with age.
  • Store in an airtight container for 2-3 days before serving.

¾ cup raisins
¾ cup dried apricots
3 tablespoons chopped crystallized ginger
.666 cup dry sherry
1 teaspoon orange zest
1 cup chopped walnuts
2 tablespoons unsalted butter, softened
¾ cup white sugar
1 egg, beaten
1 cup milk
2 ¼ cups unbleached flour
1 ½ teaspoons baking powder
½ teaspoon ground allspice
1 teaspoon salt

Steps:

  • Place the dried fruit into a small saucepan with the crystallized ginger, sherry, and orange rind. Bring mixture to a boil, remove pan from heat, cover and let cool for 30 minutes. Place walnuts on a baking sheet and toast until golden, about 10 minutes; set aside to cool. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
  • In a large bowl, cream the butter and sugar. Beat in the egg and then the milk. Combine the flour, baking powder, allspice and salt, stir slowly into the egg mixture. Do not over mix. Fold in the walnuts and cooled fruit mixture. Pour the batter into the prepared loaf pan.

6 ounces sugar
3 eggs
2 cups flour
1/2 teaspoon baking powder
1/4 pound ground almonds
1/2 teaspoon salt
1/4 pound candied peel
2 ounces dried cherries
1 cup currants, soaked overnight in 1 cup sherry
1 ounce whole almonds, blanched
3/4 cup sherry

Steps:

  • Preheat oven to 325 degrees. Cream butter with sugar in a mixing bowl until light and fluffy.
  • Separate the eggs and beat in the whites. Sift flour in the baking powder and gradually fold into the butter-sugar mixture with the salt. Mix well and add the ground almonds, candied peel and cherries. Add the currants with the soaking sherry. Beat egg whites until stiff and fold in.
  • Grease an eight-inch round cake tin and line it with wax paper. Pour in the batter and decorate top with whole almonds. Bake one hour, then turn heat down to 300 degrees. Bake an hour more. The cake is done when a tester inserted in center comes out slightly sticky but pretty much clean.
  • When cooked and while still hot, pour the remaining sherry over cake by spoonfuls and leave until cake is cold. Cover with sherry-soaked cheesecloth, wrap in aluminum foil and store in a tin or sealed plastic container.

I was looking for a muffin or quick bread recipe that called for yogurt but all were a bit too wholesome for me so I dreamed up this dried cherry bread. But at least I kept the oats! I am sure this batter could be used to make muffins too. A streusel topping or powdered sugar glaze would be extra naughty and extra good too but I didn't want to be too naughty.

½ cup dried cherries
2 eggs
¾ cup white sugar
½ cup vegetable oil
¼ cup melted butter, cooled

1 (6 ounce) container cherry vanilla-flavored yogurt

1 cup instant oatmeal
1 teaspoon baking powder

Number Of Ingredients 15

450g strong white flour , plus extra for dusting
2 x 7g sachets easy-blend yeast
50g caster sugar
150ml warm milk
1 egg , beaten
50g unsalted butter , melted, plus extra for greasing
oil , for greasing
1½ tsp ground cinnamon
1 tsp ground ginger
50g dried apricot , chopped
50g dried fig , chopped
50g pitted date , chopped
50g sultana
50g glacé cherry , chopped
juice 1 orange

Steps:

  • Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
  • Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
  • Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
  • Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
  • Bake for 20 mins, then cool in the tins before turning out and slicing.
