Rich, fudgy, soft batch double chocolate chip cookies oozing with chocolate chips - Chocolate lovers rejoice!

1 cup all-purpose flour (spooned and leveled)
2/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter (softened (1 stick plus 2 tablespoons))
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
1 cup chocolate chips

Steps:

  • Whisk together the flour, cocoa, baking soda, and salt.
  • In a large bowl beat together the butter and sugars until fluffy.
  • Add the egg and vanilla and continue mixing until combined. Turn off the mixer and scrape down the sides of the bowl.
  • Slowly mix in the dry ingredients on low speed until incorporated.
  • Turn off the electric mixer and stir in the chocolate chips. I usually reserve about 1/4 cup of chocolate chips for sprinkling on top.
  • Cover the bowl with cling film and chill in the refrigerator for at least 3 hours or up to 48.
  • When ready to bake, preheat the oven to 350F degrees. Line 2 cookie sheets with parchment paper or silicone baking mats. Take the dough out of the fridge for 10-15 minutes to warm up slightly.
  • Form dough into balls 3 tablespoons in size and place 3 inches apart on baking sheets. (Or form into balls of 1 - 1.5 tablespoons in size and place 2 inches apart).
  • Bake cookies for 11-13 minutes until the tops are just set (or 8-10 minutes for smaller cookies). Remove from oven and let cool on the tray for 10 minutes before transferring to a wire rack to continue cooling. While the cookies are fresh from the oven, optionally dot the tops of each cookie with a few extra chocolate chips.

Steps:

  • Preheat your oven to 350°F.
  • Sift your flour and cocoa powder together, along with baking powder, into a large bowl. Mix until well-combined.
  • Next, add brown sugar and granulated sugar to a bowl and whisk together.
  • Melt butter and add it to the sugar. Cream together or whisk until fluffy.
  • Add in an egg and an egg yolk and whisk until air bubbles form. To this mixture, add vanilla.
  • Combine wet and dry ingredients to form a dough, and add chocolate chips to this.
  • Use an ice cream scoop to measure the dough into balls and place them on a lined baking tray, at least two inches apart.
  • Pop into the oven for 9-11 minutes and take them out and let them cool.
  • Serve warm.

2 large eggs
1 tbsp pure vanilla extract, (store-bought or homemade)
2½ cups (280g | 9.9oz) unbleached all-purpose flour
2/3 cup (56g | 2oz) cocoa powder
1 tsp baking soda
1/4 tsp salt (I use Himalayan salt)
1½ cups (150g | 5.3oz) chopped raw pecans
2½ cups (450g | 15.9oz) semi-sweet chocolate chips

Steps:

  • Combine the butter, granulated sugar, brown sugar and vanilla extract in the bowl of your stand mixer. Equip the paddle attachment and beat on medium speed for about 2 minutes, or until creamy.
  • Add the eggs and resume beating on medium speed, until the eggs are completely incorporated.
  • In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Add to the creamed mixture and beat on low speed for about 1 minute or until well blended.
  • Add the chopped pecans and chocolate chips and mix on low speed until just incorporated, no more.
  • Chill the cookie dough for at least one hour, or up to overnight.
  • Preheat your oven to 350°F and line a 13" x 18" baking sheet with parchment paper
  • Drop the dough by the tablespoonful (a small spring-loaded ice cream scoop works wonders for this) on the prepared cookie sheet, leaving about 3 inches between the cookies to allow for spreading.
  • Bake the cookies for 8 minutes; they will still appear soft and moist as you take them out of the oven, but will firm up as they cool down.
  • Let the cookies cool for 2 minutes on the baking sheet, then remove to a cooling rack to cool completely.

1/2 cup unsalted butter (, softened to room temperature)
2 oz dark chocolate (, melted (50%-70% cocoa solids))
2/3 cup brown sugar (, packed)
1/3 cup granulated sugar
1 large egg
1 1/2 teaspoon vanilla extract
1 cup chocolate chips (, I used dark)

Steps:

  • In a medium bowl whisk together the flour, cocoa powder, baking soda & salt.
  • In a separate bowl beat together the butter, melted chocolate, brown sugar & white sugar. Once combined, beat in the egg & vanilla extract.
  • Turn off the mixer and stir in about 1/2 of the flour mixture, the beat in the second half with your electric mixer.
  • Turn off the mixer and fold in the chocolate chips.
  • Form the dough into balls about 1/4 cup of batter each.* I got 9 total. Place on a plate, cover with clingfilm and chill for at least 2 hours.

Thin chocolate discs or wafers, which are widely available, are used here. They melt into lovely chocolate layers as the cookies bake.
