OVEN-BAKED BEEF MEATBALLS

Oven-Baked Beef Meatballs image

Berbere, a warming Ethiopian spice blend, punches up these incredibly easy meatballs.

Provided by Josef Centeno

Categories     Bon Appétit     Dinner     Garlic     Egg     Milk/Cream     Cheese     Breadcrumbs     Ground Beef     Currant     Kale     Lemon Juice     Radish

Number Of Ingredients 14

1 large egg
4 garlic cloves, 2 finely grated, 2 thinly sliced
3 tablespoons white miso
3 tablespoons whole milk
1 1/2 teaspoons berbere or garam masala
1 teaspoon kosher salt, plus more
3/4 ounces Pecorino, finely grated (about 3/4 cup)
3 tablespoons panko (Japanese breadcrumbs)
1 pound ground beef
2 tablespoons dried currants
2 bunches Tuscan kale, ribs and stems removed, leaves torn
3 tablespoons olive oil, divided
8 small radishes, trimmed, halved lengthwise
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 400°F. Whisk egg, grated garlic, miso, milk, berbere, and 1 tsp. salt in a large bowl. Mix in Pecorino and panko. Add beef and currants and gently mix with your hands just until all ingredients are evenly incorporated (be careful not to overmix).
  • Working one at a time, scoop out 2 heaping Tbsp. (about 1 1/2 oz.) mixture and roll into balls between your palms. Place on a foil-lined rimmed baking sheet, spacing 2" apart (you should end up with about 15). Bake meatballs until lightly browned on top and cooked through, 20-25 minutes.
  • Meanwhile, place kale in a large colander in the sink and pour 8 cups boiling water over top to wilt leaves. Run under cold water to rinse, then squeeze leaves thoroughly with your hands to remove excess liquid.
  • Heat 2 Tbsp. oil in a large skillet over medium-high. Add radishes and cook, tossing occasionally, until golden and crisp-tender, 5-7 minutes. Add kale and stir, breaking up leaves, until warmed through. Push kale and radishes to one side of skillet. Pour remaining 1 Tbsp. oil on the empty side and add sliced garlic. As soon as garlic starts to sizzle, stir it into vegetables. Remove pan from heat and add lemon juice to mixture; season with salt. Toss well.
  • Tear meatballs in half and add to skillet along with any pan juices. Toss everything together; divide among plates.

Full of flavor from Italian herbs, Parmesan cheese, and a blend of ground round and Italian sausage, these meatballs have a nice crust thanks to a bit of time in the oven before they're slow-simmered in marinara sauce. They're the perfect complement to Sunday spaghetti!

Provided by NicoleMcmom

Time 2h45m

Yield 6

Number Of Ingredients 16

cooking spray
⅓ cup minced onion
⅓ cup Italian bread crumbs
⅓ cup half-and-half
¼ cup grated Parmesan cheese
2 large eggs
1 large egg yolk
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
¼ teaspoon dried oregano
1 ¼ pounds ground round beef
½ pound ground Italian sausage
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 (24 ounce) jars marinara sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with foil. Spray foil lightly with cooking spray.
  • Combine onion, bread crumbs, half-and-half, Parmesan cheese, eggs, egg yolk, garlic, basil, parsley, and oregano in a large bowl; stir until well combined. Add ground round and sausage and sprinkle evenly with salt and pepper. Mix well until just combined.
  • Dampen hands with water and form mixture into 18 golf ball-sized meatballs. Arrange meatballs on the prepared baking sheet.
  • Bake in the preheated oven until browned, 12 to 15 minutes.
  • Transfer meatballs to a large pot and add marinara sauce. Simmer over low heat for at least 2 hours before serving.

FULL OF FLAVOR OVEN MEATBALLS

Full of Flavor Oven Meatballs image

I think store bought frozen meatballs taste like you're eating sponges with sauce on top. So here is my basic meatball that will go with any sauce you want to cover them in. Very moist and flavorful.

Provided by DbKnadler

Categories     Meat

Time 1h

Yield 70-80 meatballs, 20 serving(s)

Number Of Ingredients 10

1 lb ground beef
1 lb lean ground turkey
1 lb ground pork
2 eggs
1 cup breadcrumbs
1 cup frozen chopped onions
1 cup sliced mushrooms
2 tablespoons steak seasoning
salt and pepper
2 tablespoons oil

Steps:

  • Preheat oven to 375 degree farenheit.
  • In a saute pan heat the oil then add the mushrooms and onions. Saute until onions are very tender. Then let cool.
  • When onions and mushrooms are cool almost to room temperature put them in a deep cup and use a stick blender to puree them into a fine paste. Or you could use your regular blender or even a food processor for this.
  • In a large bowl mix the 3 meats thoroughly, when combined add remaining ingredients, including the onion mushroom paste.
  • Mix until well combined (I use my hands for this part).
  • Shape into 1 to 1 1/2 inch size balls and line them up on an ungreased baking sheet. (It's ok for them to be almost touching).
  • Bake at 375 for 25-30 minutes.
  • This will usually be enough for me to use half of them for a spaghetti meal to serve 6-8, and to put the other half in the freezer for a quick meal another time.
  • Enjoy!
