2 bunches gai choy (Chinese mustard greens, Could use broccoli raab or other veggie)
2 teaspoons canola oil
1 teaspoon dark sesame oil
1/2 onion, small thinly sliced
1 teaspoon garlic, minced
1 tablespoon fish sauce
1/4 teaspoon sugar

Steps:

  • Trim stems and slice thin and long. Coarsely chop leaves separately from stalks.
  • Add oil to hot skillet over medium high heat then add sesame oil, onion and garlic. Stir and cook 1 minute.
  • Stir in sugar and fish sauce. Add stalks and cook 2-3 minutes until crisp-tender.
  • Stir in leaves and cook and stir 1 minute or just until they wilt.

1/4 cup balsamic vinegar
1 red chile pepper, stem and seeds removed and diced
1 large clove garlic, lightly crushed with the side of a knife blade and quartered
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons sugar
1 tablespoon water
1 tablespoon cornstarch
1 bok choy, cut into bite sized pieces and tough spines removed or 3 baby bok choy, halved and tough parts removed from stem end

Steps:

  • Through the feed tube of a running blender add, 1 at a time, the vinegar, chile pepper, garlic, salt, black pepper, and sugar. Remove to a bowl. In a separate small bowl, create a slurry by gradually whisking 1 tablespoon water into the cornstarch. Then whisk the slurry into the sauce.
  • Steam bok choy until tender and coat with sauce.

8 heads baby bok choy, trimmed and cut into bite-size pieces
salt to taste

Steps:

  • Heat the oil in a large skillet or wok over medium heat, and cook the garlic in the hot oil until fragrant, 1 to 2 minutes.
  • Mix in the bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent, 5 to 8 minutes. Sprinkle with salt to serve.
