Steps:
- Trim stems and slice thin and long. Coarsely chop leaves separately from stalks.
- Add oil to hot skillet over medium high heat then add sesame oil, onion and garlic. Stir and cook 1 minute.
- Stir in sugar and fish sauce. Add stalks and cook 2-3 minutes until crisp-tender.
- Stir in leaves and cook and stir 1 minute or just until they wilt.

- Preheat 1 to 2 tablespoons peanut oil in a wok or large pan until rippling. Halve 6 heads baby bok choy lengthwise, keeping the stems and leaves intact, and place in the wok with chopped or sliced garlic and fresh ginger. Stir-fry until fragrant; season with salt.

- Through the feed tube of a running blender add, 1 at a time, the vinegar, chile pepper, garlic, salt, black pepper, and sugar. Remove to a bowl. In a separate small bowl, create a slurry by gradually whisking 1 tablespoon water into the cornstarch. Then whisk the slurry into the sauce.
- Steam bok choy until tender and coat with sauce.

- Heat the oil in a large skillet or wok over medium heat, and cook the garlic in the hot oil until fragrant, 1 to 2 minutes.
- Mix in the bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent, 5 to 8 minutes. Sprinkle with salt to serve.
