GARBANZOS CON PATAS DE CERDO
Garbanzos con Patas de Cerdo is a type of Puerto RIcan stew made out of pork leg, butternut, potatoes and chickpeas cooked in tomato and pork stock.

Steps:
- In a pot add oil then brown pork hock on all sides, add water and pork stock bring to a boil. Remove any scum that rises to the top then simmer for 45 minutes.
- In a food processor process sofrito ingredients together until it becomes a smooth paste, add a bit of olive oil if necessary.
- In a sauce pan add oil then sauté sofrito in medium heat for 3-5 minutes or until fragrant. Pour into the pot with pork hock together with the tomato paste, bring to a boil then simmer for 20 minutes, add water if necessary.
- Add butternut then continue to simmer for 20 minutes.
- Add chick peas and capsicum then continue to simmer for 5 more minutes.
- Season with salt and freshly ground black pepper, garnish with chopped parsley then serve.

- Enjuaga muy bien las patitas de cerdo y córtalas en cuatro piezas cada una. Coloca las patitas, cebolla entera y 2 dientes de ajo enteros en una olla. Cubre con agua y agrega sal al gusto. Tapa y calienta a fuego alto hasta que suelten el hervor, luego reduce el fuego a medio-bajo, y cocina hasta que estén suaves, pero no deshaciéndose, aproximadamente 3 horas.
- Mientras, hierve los garbanzos durante 1 hora y 30 minutos, hasta que se suavicen. Cuece los jitomates y el chile ancho en agua hirviendo. Licua jitomates y chile ancho, cuela y reserva.
- Calienta una cacerola a fuego medio. Agrega el tocino y fríe, moviendo de vez en cuando, hasta que se haya dorado. Retira de la cacerola y reserva.
- Fríe en la grasa del tocino el ajo, cebolla y chile verde, hasta que se vean transparentes. Agrega el licuado de jitomate y chile y cocina durante unos minutos para que se integren los sabores.
