1 teaspoon olive oil, or more to taste
2 cloves garlic, minced
1 ¼ teaspoons freshly grated ginger
1 ⅓ cups chicken broth
1 cup couscous

Steps:

  • Heat oil in a small saucepan over medium-high heat. Saute garlic and ginger in hot oil until fragrant, about 1 minute.
  • Pour chicken broth into garlic mixture and bring to a boil; remove from heat and stir in couscous. Cover the saucepan with a lid and let stand until broth is completely absorbed, 5 to 7 minutes. Fluff couscous with a fork.

Heat 2 tablespoons olive oil in a skillet over medium heat; add the puree and cook, stirring, until thickened to a paste, 12 minutes. Add 1 cup water and bring to a simmer. Remove from the heat and stir in 1 cup couscous; cover and let sit 10 minutes. Fluff with a fork, season with salt and top with chopped cilantro.

1 1/4 cups water or 1 1/4 cups broth
1 cup couscous
1 teaspoon butter or 1 teaspoon margarine (optional)
1/2 teaspoon salt (optional)
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon dried thyme leaves
1/2 teaspoon paprika
1/4 teaspoon black pepper, freshly ground

Steps:

  • Bring water to a boil.
  • Add couscous, butter and salt.
  • Remove from heat and let stand 5 minutes.
  • Topping: In a shallow pan, heat oil.
  • Cook garlic until it begins to brown.
  • Add rest of spices, cook for 30 second and remove from heat.
  • (Alternately, you could use ready made"roasted garlic olive oil", and add the thyme and pepper).
  • Mix topping with couscous, serve immediately.

1 pound baby cucumbers
1/2 teaspoon sugar
Kosher salt
2 teaspoons rice vinegar
2 teaspoons reduced-sodium soy sauce
1 tablespoon safflower oil
1 tablespoon julienned fresh ginger
3 cloves garlic, smashed
Toasted sesame seeds and hot chili oil, for serving

Steps:

  • Quarter cucumbers lengthwise (if longer than 3 inches, halve crosswise first). Toss with sugar and 1 teaspoon salt. Let stand 30 minutes, tossing occasionally. Drain, then toss with rice vinegar and soy sauce.
  • Heat safflower oil in a small skillet over medium-high. Add ginger and garlic. Cook, stirring, until fragrant, 30 seconds. Pour over cucumbers; toss to combine. Season again, if desired. Transfer to a serving dish, discarding liquid. Top with sesame seeds and a few drops of chili oil.
