4 6-ounce tilapia fillets
2 cloves garlic (crushed and diced)
3 tablespoons olive oil or melted butter
2 tablespoons lemon juice
3 teaspoons fresh Parsley (or dried)
1 teaspoon Oregano (fresh or dried)
salt and pepper to taste
1 large zucchini (sliced)
1 cup baby carrots (cut in halves)
2 cups broccoli florets (fresh or frozen)
1/2 lb asparagus (tough ends removed)
2 cups cooked rice for meal prepping

Steps:

  • Preheat oven to 400F.
  • Heat olive oil (or butter) on low-medium heat in a small pan. Add garlic and saute on low for about 1 minute. Remove from heat and add lemon juice, parsley, oregano, and salt + pepper to taste.
  • Arrange fish and veggies in a single layer on a sheet pan. Evenly pour the garlic spice mixture onto fish and veggies. Bake for 12-15 minutes or until golden.
  • To meal prep: Cook 1 cup of brown rice according to package instructions. Divide rice into 4 meal prep containers. Place 1 tilapia fillet in each container along with a few carrots, asparagus, and broccoli. Cover and place in the fridge for up to 4 days. To reheat, microwave on high for 1-2 minutes or until steaming.

4 tilapia filets
kosher salt & freshly ground black pepper
8 garlic cloves, minced
12 pats of butter, about 1/2 cup
8 lemon slices
1 pound thin asparagus stalks, cut into thirds
12 ounces cherry tomatoes, halved

Steps:

  • Preheat oven to 400F (or preheat grill to medium).
  • Place each tilapia filet on a piece of tinfoil large enough to fold and enclose tightly.
  • Season each filet with salt and pepper.
  • Divide remaining ingredients by four. Top tilapia filets with garlic, then butter and lemon slices. Add asparagus and tomatoes to packets, then seal packets tightly (see video for demonstration).
  • Place packets on grill or on a baking sheet in the oven. Bake 10 minutes or until tilapia is cooked through and flakes easily with a fork.
  • Serve in foil packets or remove and place on serving plates. Serve immediately.

4 (4 ounce) fillets tilapia
4 cloves crushed garlic
3 tablespoons olive oil
1 onion, chopped
¼ teaspoon cayenne pepper

Steps:

  • Rub the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish. Spoon the olive oil over the fish until they are coated. Place the onion on top of the fish. Cover the fish and refrigerate overnight to allow the fish to soak in the marinade.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • If baking the fish, transfer it to a 9x13 inch baking dish along with the olive oil, garlic, and onion. Sprinkle the fish with the cayenne or white pepper. If you are grilling the fish, wrap the fish and oil, garlic, onion, and pepper in aluminum foil.
  • Bake at 350 degrees F (175 degrees F) for 30 minutes.

4 tilapia fillets (about 6-ounces each)
2 cloves garlic
3 tablespoons butter
1 pinch dill weed or parsley, dried
Paprika powder
Salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F (180°C). Mince the garlic into fine pieces. Place the garlic in a saucepan, add butter and dillweed or parsley. Add one dash of salt, one dash of pepper and one dash of paprika powder to the saucepan. The exact amount will depend on your own preferences. Heat the saucepan over low heat until the butter is fully melted and begins to simmer. Remove the saucepan from the heat and brush some of its content over the bottom of a baking dish. Put the tilapia fillets on top of the garlic butter mix. Use the remaining garlic butter mix to brush the top of each tilapia fillet. Place the baking dish in the oven and let the tilapia bake for 12 to 15 minutes. The baked tilapia with garlic butter is ready when it is easy to flake it with a fork.

1 tablespoon lemon juice

1 small red onion, chopped

3/4 cup chopped roasted sweet red peppers
1/2 cup chicken broth
1/4 cup tomato paste
1 teaspoon garlic powder

1/4 cup white wine
2 tablespoons olive oil
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
Four 6-ounce tilapia fillets
1 cup grape tomatoes, halved
1/4 cup capers, drained
1 teaspoons fresh thyme (about 3 sprigs)

Steps:

  • 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • 2. Place each tilapia fillet on a separate 14-by-12-inch piece of nonstick foil. Drizzle one-quarter of the white wine mixture over each fish fillet and top with one-quarter of the tomatoes, capers and thyme. Fold the foil up over each piece of fish and seal to create a packet. Put the packets on a sheet pan and bake until the fish becomes fragrant, 20 to 25 minutes depending on the thickness of the fillets; let cool for 3 minutes. 1 medium potato, peeled and cut into 1/2-inch cubes
2 tablespoons diced red bell pepper
1 (1 ounce) package seafood seasoning
3 teaspoons butter, divided
2 (7 ounce) tilapia fillets
1 medium lemon, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray foil with cooking spray.
  • Place equal amounts of diced potato and red bell pepper in the middle of each piece of foil and sprinkle with 1/2 of the seafood seasoning. Dot 1 1/2 teaspoons of butter on top of the potatoes.
