8 medium russet or Yukon gold potatoes (about 3 lb), peeled, cut into quarters
4 large cloves garlic, peeled
1/3 cup fat-free (skim) milk, heated
1 teaspoon salt
1/8 teaspoon pepper
1/4 cup reduced-fat sour cream

Steps:

  • In 3-quart saucepan, place potatoes and garlic; add enough water (salted if desired) to cover. Heat to boiling. Reduce heat to medium-low; cover loosely and boil gently 15 to 20 minutes or until potatoes are tender. Drain; shake pan with potatoes over low heat to dry.
  • Mash potatoes and garlic until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on type of potato used).
  • Add remaining ingredients. Mash vigorously until potatoes are light and fluffy.

This is such a quick throw-together. Makes a great simple dish or as a side with roasted chicken. BTW, when using as a side I often add some minced fresh dill.

5 medium baking potatoes, peeled and large diced
3 whole garlic cloves, peeled and slightly smashed
2 1/2 cups light sour cream, divided
1/2 teaspoon salt
fresh ground pepper (optional)
fresh dill, minced (optional)

Steps:

  • Cook potatoes in large enough pot to cover potatoes with water. Add the garlic and salt to pot.
  • Cook until potatoes are done yet remains firm.
  • Drain and return to pot (off the heat) to dry.
  • Do not remove the garlic! You will find that it is a sweet surprise when you bite into it.
  • Add 1/2 of sour cream to pot and fold gently.
  • Add dill, if using.
  • Plate and top with the remaining sour cream.
  • Here's where the pepper comes in -- as a topping.
  • So easy, so good!

"CHARCOAL" POTATOES WITH SOUR CREAM AND VINEGAR

1 1/2 pounds creamer potatoes (ping-pong ball sized)
8 tablespoons kosher salt, plus more for seasoning
1 1/2 tablespoons squid ink
1/4 cup thinly sliced fresh chives
1 cup sour cream
Freshly ground black pepper
Malt vinegar, for serving

Steps:

  • Preheat a smoker according to the manufacturer's directions.
  • Rinse the creamer potatoes under cold water to clean their skins. Divide the potatoes between two medium high-sided saute pans and divide the salt, squid ink and 2 quarts water between the pans. Bring the potatoes to a boil over high heat, then continue to cook until the water has evaporated. This can take varying time depending on the size of your pot, altitude and the power of your stovetop. Check the potatoes at 15 minutes and watch closely as the water reduces. Once the water has evaporated, remove from the heat and shake the pot vigorously to ensure that all the potatoes are coated in the salt and squid ink.
  • Remove the potatoes and place on a sheet pan. Place the potatoes in the smoker for 10 minutes.
  • Fold the chives into the sour cream in a bowl and season with salt and pepper.
  • Serve the potatoes on skewers with dollops of chive-sour cream and splashes of malt vinegar.

ROASTED GARLIC MASHED POTATOES



Roasted Garlic Mashed Potatoes image

1 bulb garlic
5 or 6 red potatoes
1 white onion, sliced
1 tablespoon olive oil
3 tablespoon melted butter, plus 2 tablespoons butter
1/4 cup sour cream
Salt and pepper

Steps:

  • Cut off the top of the garlic bulb, and roast in a preheated 350-degree oven in a ceramic dish for approximately 30 minutes.
  • Place the red potatoes in a pot of water and boil until tender. Drain and set aside. Take 2 potatoes from the pile, cut them into quarters and place them on a cookie sheet. With a fork smash them down until flat, brush them with a little bit of the melted butter, and cook in a warm oven until crispy and golden brown. Set aside to top the finished potatoes.
  • Saute the onions in the olive oil until the onions are translucent.
  • Place the roasted garlic, boiled potatoes, 2 tablespoons butter, and sour cream into a standing mixer fitted with a paddle attachment, and beat until thoroughly blended.
  • Scoop the potato mixture into a ceramic dish. Drizzle with the remaining melted butter and place in the oven until the top is browned. Push the "potato croutons" into the top of the potatoes and serve immediately.

1 tablespoon olive oil
4 pounds potatoes, peeled and cut into chunks
½ cup half-and-half
4 tablespoons butter, melted
½ (8 ounce) package cream cheese, softened
¼ cup sour cream
salt and ground white pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place garlic cloves in aluminum foil and drizzle with olive oil.
  • Roast in the preheated oven until very soft, about 25 minutes.
  • Meanwhile, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.

16 ounces sour cream
1 tablespoon dried dill

Steps:

  • Boil potatoes until done. Drain and set aside.
  • Chop green onions and add to a frying pan with 1/4 stick of butter. Cook on medium heat until onions are soft. Add the rest of the butter and stir until melted.
  • Add container of sour cream, dill and salt and pepper to taste. Cook until sour cream is warm.
  • Place potatoes in pan with sour cream mixture, stirring occasionally until potatoes are heated through.
