16-18 slices of French bread
Cheddar cheese, sliced (or your favorite cheese)

Steps:

  • Stir together butter, garlic powder, parsley flakes, Parmesan cheese, and salt in a small bowl.
  • Spread the garlic butter mixture on one side of each slice of bread.
  • Heat a nonstick skillet over medium heat and place half the bread, buttered side down, into the skillet. Top with cheese and remaining slices of bread. Cook, flipping halfway through, until bread is golden brown, parmesan cheese is crispy, and inside cheese is melted.

4 tablespoons unsalted butter, room temperature
3 large garlic cloves, minced
1/2 teaspoon dried parsley (or 1 teaspoon minced fresh)
1/4 teaspoon salt
1/8 teaspoon garlic powder
4 slices Italian or soft French bread (any white bread will work)
1 cup shredded mozzarella cheese
12-inch Cast iron skillet

Steps:

  • Make Garlic Butter Stir all garlic butter ingredients together in a small bowl. Make Sandwich 1. Spread a thin coating of garlic butter on both sides of all 4 bread slices. 2. Heat a medium cast iron skillet over medium heat. When moderately hot, place 2 bread slices and cook until the bottom gets golden. 3. Turn slices over, place 1/2 cup mozzarella on one slice and close sandwich with the other slice ( golden side down). Cook until the bottom is golden brown. 4. Turn sandwich over (place a heavy pan on the sandwich, pressing gently --> this weighs it down and makes a crispier sandwich), cook until the bottom is golden brown. 5. Remove sandwich onto a plate and repeat process with remaining sandwiches. Serve HOT!

1 onion
chopped
2 ribs celery with leafy tops
finely chopped
2 to 3 cloves garlic
chopped
1 teaspoon red pepper flakes
Salt
2 cups chicken stock
2 cans Italian tomatoes
2 cups passata or tomato purée
A handful basil leaves
torn
4 tablespoons butter
softened
1 tablespoon EVOO - Extra Virgin Olive Oil
2 cloves garlic
grated
2 tablespoons flat-leaf parsley
finely chopped
1/2 cup grated Parm cheese
8 to 12 slices white bread
4 to 6 slices mild provolone
4 to 6 slices deli-sliced mozzarella
white American or white mild cheddar

Steps:

  • For the soup, heat a soup pot over medium-low to medium heat with oil, 3 turns of the pan
  • Add onions, celery, garlic and chili flakes, season with a little salt and cook gently for 15 minutes to soften, stirring frequently
  • Add stock and raise heat to medium-high
  • Add tomatoes and break them up with wooden spoon; add passata and simmer 35-40 minutes to break down tomatoes
  • Purée soup with an immersion blender or in batches in a blender until smooth; adjust salt to taste
  • For the sandwiches, stir together the butter, EVOO, garlic, parsley and grated cheese
  • Lightly butter 1 side of each slice of bread then build cheese sandwiches using both cheeses, with the buttered sides of the bread facing out
  • Grill sandwiches on a hot griddle over medium heat to deep golden
  • Tear basil and stir into soup
  • Cut sandwiches corner to corner and serve alongside soup

1/2 tbsp garlic powder

4 slices bread
1 cup shredded mozzarella and cheddar cheese blend

Steps:

  • Dump the butter, garlic powder and parsley into a small mixing bowl.
  • Stir all of the ingredients together well.
  • Spread the garlic butter mixture on the four slices of bread.
  • Flip over two slices of bread so that they are butter side down.
  • Divide the shredded cheese evenly between these two slices of bread.
  • Place the remaining two slices of bread, butter side up, on top of the cheese to form two sandwiches.
  • Place the sandwiches in a large saute pan over low heat.
  • Cook until the bottoms are golden brown. About 4-5 minutes.

Here I'll show you the easiest and tastiest way to make a Garlic Bread Grilled Cheese!

6 medium-large slices of Bread ((White Bloomer or Sourdough work great))
6 square slices of Mozzarella
1/3 cup / 30g freshly grated Parmesan
4 tbsp / 60g / 2oz Butter
1 tbsp very finely diced Fresh Parsley
2 cloves of Garlic, (finely diced then mashed into a paste (see notes))

Steps:

  • In a small pot mash together butter, garlic and parsley. Place to one side.
  • In a large non-stick pan add in 2-3 slices of bread (depending on pan size). Spread with garlic butter then flip over so they're butter side down. Add mozzarella, then sprinkle over parmesan. Add bread on top then spread with more garlic butter.
  • Turn on heat to low-medium (keep it fairly low or the parsley will burn) and fry both sides until golden with the cheese just starting to leak out.
  • Repeat with remaining sandwiches then slice in half and enjoy!

1 tablespoon grated Pecorino Romano cheese
1 clove garlic, minced
4 slices white bread
4 slices provolone cheese
½ cup shredded mozzarella cheese

Steps:

  • Heat a large skillet over medium heat.
  • Combine butter, parsley, Pecorino Romano cheese, and garlic in a small bowl. Stir to combine.
  • Lightly coat 1 side of each bread slice with the butter mixture. Flip bread and top 2 slices evenly with provolone cheese and mozzarella cheese. Cover with remaining bread slices, buttered-sides up.
