RED-WINE SPAGHETTI WITH BROCCOLI

Steps:
- Cut broccoli into 1-inch-wide florets (with 1/2 inch of stem). Blanch in a 6- to 8-quart pot of boiling salted water , uncovered, 2 minutes. Transfer with a slotted spoon to a large colander to drain, reserving broccoli-cooking liquid in pot, then transfer broccoli to a bowl.
- Return cooking liquid to a boil and cook spaghetti, stirring occasionally, 5 minutes (pasta will not be fully cooked). Drain in colander and return empty pot to stovetop. Add wine and sugar to pot and boil vigorously 2 minutes. Add spaghetti and shake pot to prevent pasta from sticking. Gently stir with tongs until coated and boil over high heat, stirring occasionally, until most of liquid is absorbed, about 6 minutes (pasta will be al dente).
- Immediately after adding spaghetti to wine mixture, cook garlic and red pepper flakes in oil in a deep 12-inch heavy skillet over moderately low heat, shaking skillet occasionally, until garlic is pale golden, about 5 minutes. Add broccoli, salt, and pepper and cook, stirring, 1 minute.
- Increase heat to high and pour spaghetti mixture into skillet, tossing with tongs to combine (skillet will be very full). Cook, stirring, until all of wine is absorbed, about 2 minutes. Remove from heat and stir in cheese. Serve immediately.

This salad is made with marinated raw broccoli in a garlicky sauce for numnums! A recipe from my grandma.

Steps:
- Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle, or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli, and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.

GARLIC BROCCOLI WITH OLIVES AND RED WINE
I can eat almost half of this recipe at a time. Not only is it delicious, but a very attractive dish; the onions take on a purplish color from the wine, which contrasts nicely with the bright green broccoli and black olives. I cook broccoli with a very light hand, so these directions are for somewhat "rare" broccoli... if you like it more done, cook for about 10-15 minutes instead of five.

- Saute onion and garlic in olive oil in a large skillet until soft. Add broccoli, olives, and red wine. Bring to a boil, then reduce heat, cover and simmer for about 5 minutes, stirring once. Season to taste with salt and black pepper (I like LOTS!) (If you like your broccoli a little more "done", cook for 10 minutes or so).

- In a 12 to 14 inch saute pan, heat the olive oil and garlic until just sizzling.
- Add the broccoli and cook, tossing regularly for 8-10 minutes, until the stem is tender.
- Use the wine to slow the cooking down if the garlic begins to brown.
- When the broccoli is tender, add the chili flakes and zest.
- Place on platter and enjoy!

- Preheat oven to 425°. Place the prepared broccoli and garlic slices on a baking pan. Drizzle the olive oil over the broccoli. Toss the broccoli and garlic to coat evenly with the olive oil.
