Easy, flavor-packed garlic Dijon chicken is the perfect weeknight meal.

1.5 lb boneless, skinless chicken thighs (8 pieces)
Salt
1 large yellow onion, cut into large pieces
1/3 cup Private Reserve Greek extra virgin olive oil
3 tsp quality Dijon Mustard
2 tsp quality honey
6 garlic cloves, minced
1 tsp ground coriander
3/4 tsp sweet paprika
1/2 tsp black pepper
1/2 tsp cayenne pepper (optional)
pinch salt

Steps:

  • Preheat oven to 425 degrees F.
  • Take chicken out of the fridge. Pat dry and season on both sides with salt. Set aside for a few minutes.
  • Make the honey garlic Dijon sauce. In a large bowl, combine olive oil, Dijon mustard, honey, garlic, spices, and salt. Mix.
  • Add chicken to the honey garlic Dijon sauce. Coat each piece well with the sauce, then transfer chicken to a large lightly-oiled cast iron skillet (or baking sheet). Pour any Dijon sauce left in bowl on top. Add the onions.
  • Bake in heated oven for 25 to 30 minutes or until chicken thighs are fully cooked through (internal temperature should register 165 degrees F)
  • Remove from heat and garnish with fresh parsley. Serve hot with Lebanese Rice and loaded Balela salad or this simple 3-ingredient Mediterranean salad (see additional suggestions above)

8 chicken thighs (with skin and bones (about 3 lbs))
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon olive oil
8 cloves garlic (minced)
2 teaspoon thyme (fresh, chopped)
2 teaspoon oregano (fresh, chopped)
½ cup sherry (or a dry red wine)
½ cup chicken broth (low sodium)

Steps:

  • Season the chicken on both sides with salt and pepper.
  • Add the olive oil to a large saucepan or skillet and cook the chicken on both sides, for about 5 minutes per side or until golden brown.
  • Remove the chicken from the saucepan and set aside.
  • Add the garlic, thyme and oregano to the saucepan and cook until garlic gets aromatic. Add the sherry and chicken broth to the skillet to deglaze the pan, scraping up all the brown bits. Bring to a boil.
  • Add chicken back to skillet and saucepan, reduce the heat to low and bring to a simmer. Cover and cook for another 20 minutes, until chicken is tender.
  • Garnish with more fresh herbs if desired and serve warm.

1 1/2 pounds boneless (skinless, chicken thighs (You can also use chicken breasts))
2 Tablespoons olive oil
6 garlic cloves (divided (3 minced, 3 whole) *)
1/4 cup honey
3 Tablespoons stone ground dijon mustard
salt and pepper to taste
green onions or fresh parsley for garnish

Steps:

  • In a medium sized skillet over medium heat add 1 tablespoon olive oil. Add 3 whole garlic cloves. Salt and pepper the chicken thighs and cook each side until the temperature reads 165 degrees. Remove and set aside on a plate.
  • Add 1 tablespoon olive oil and 3 garlic cloves minced. Cook until tender and whisk in honey and mustard. Add the chicken back to the pan and heat for a couple of minutes more. Garnish with green onions or fresh parsley.

2 ounce Mixed Greens
¼ cup Parmesan Cheese
1 teaspoon Garlic Powder
¼ ounce Parsley
2.25 ounce Red Grapes
1 unit Lemon
1 unit Shallot
1.5 ounce Honey Dijon Dressing
6 ounce Carrots
1 teaspoon Cooking Oil
1 teaspoon Sugar
1 tablespoon Olive Oil
Kosher Salt
Pepper

Steps:

  • • Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. • Roughly chop parsley leaves and stems. Halve, peel, and mince shallot until you have 1 TBSP (2 TBSP for 4). Quarter lemon. Trim and peel carrot. Using a peeler, shave carrot lengthwise into ribbons, rotating as you go, until you get to the core. Discard core. Halve grapes lengthwise.
  • • Pat chicken* dry with paper towels. Season all over with garlic powder, salt, and pepper. Sprinkle all over with chopped parsley. • Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook until browned, 2-3 minutes per side. (It'll finish cooking in the next step.) • Transfer chicken to one side of a baking sheet. (For 4 servings, spread out across entire sheet.)
  • • Sprinkle Parmesan into two 3-inch-wide circles (four circles for 4 servings) on opposite side of sheet from chicken. (For 4, use a second baking sheet; bake chicken on top rack, frico on middle rack.) Bake on top rack until chicken is cooked through and cheese is melted and crispy at the edges, 5-7 minutes. • Transfer chicken to a cutting board to rest for 5 minutes. • Let frico cool on sheet until crispy, then transfer to a paper-towel-lined plate.
  • • In a small microwave-safe bowl, combine shallot, juice from half the lemon, 1 tsp sugar, and a pinch of salt. (For 4 servings, use juice from whole lemon, and 2 tsp sugar.) Cover bowl with plastic wrap; microwave for 30 seconds. Set aside to cool for at least 30 seconds.
  • • To bowl with pickled shallot, add honey Dijon dressing, 1 TBSP olive oil (2 TBSP for 4 servings), and a pinch of salt and pepper; whisk to combine. • In a medium bowl, toss mixed greens and carrot ribbons with half the sweet shallot dressing (save the rest for serving).
  • • Thinly slice chicken crosswise. • Break frico into bite-size pieces. • Divide salad and chicken between plates. Drizzle remaining dressing over chicken. Top salad with grapes and frico. Serve.
