Steps:

  • Boil 1 1/2 pounds baby potatoes and 4 smashed garlic cloves in salted water until tender, 20 minutes. Toast 1 teaspoon fennel seeds in a skillet with 3 tablespoons olive oil and 1/2 teaspoon kosher salt; add 1 teaspoon grated lemon zest. Drain the potatoes; return to the pot. Add the fennel oil, chopped parsley, lemon juice, salt and pepper. Cover and shake to smash slightly.

Found in an older issue of Chatelaine magazine; posted in response to a request for fennel recipes. I haven't tried this myself.

1 small fennel bulb
3/4 cup milk
2 lbs yukon gold potatoes (about 5 large)
1/2 cup sour cream (lowfat can be used, but is not recommended)
1/2 teaspoon salt

Steps:

  • Trim fronds from fennel and discard.
  • Slice fennel into small, thin strips and place is large, preferably wide, saucepan over medium-high heat.
  • Add milk and bring to a boil.
  • Reduce heat to medium-low, cover, and simmer until fennel is tender, stirring once or twice; this will take about 15 to 20 minutes.
  • Remove pan from heat, then puree fennel mixture in a blender or food processor until it's fairly smooth.
  • While fennel is cooking, peel potatoes and cut into quarters.
  • Place in a large saucepan, cover with water, and bring to a boil.
  • Reduce heat to medium-low, cover, and boil gently, stirring occasionally, until potatoes are tender; this will take about 20 to 25 minutes.
  • Drain potatoes well and return to saucepan.
  • Mash potatoes, then stir in hot fennel puree, sour cream, and salt.
  • Taste; more salt may be needed.
  • If mixture is not piping hot, heat in saucepan, over low, stirring often.
  • Serve immediately.

  • Classic Mashed Potatoes Cover 2 pounds whole russet or Yukon gold potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with 1/2 to 1 stick butter. Add 1 cup hot milk, and salt and pepper; mash until smooth and fluffy.
  • Pepper-Swirl Mashed Potatoes Saute 2 chopped red bell peppers and 1 teaspoon thyme leaves in olive oil, covered, until tender. Puree; swirl into Classic Mash.

Both fresh fennel and fennel seeds flavor this creamy mash of Yukon Golds. It can be made eight hours ahead and rewarmed.

Number Of Ingredients 6

4 medium-size fresh fennel bulbs (about 2 pounds), trimmed, cored, bulbs coarsely chopped, fronds chopped and reserved
2 pounds Yukon Gold potatoes, peeled, cut into 1-inch pieces
1/2 cup (or more) half and half
2 teaspoons fennel seeds, crushed in resealable plastic bag with meat mallet
1 1/2 teaspoons dried tarragon
2 tablespoons (1/4 stick) butter

Steps:

  • Bring large pot of salted water to boil. Add fennel bulbs; cook until slightly softened, about 5 minutes. Add potatoes and boil gently until fennel and potatoes are very tender, about 25 minutes.
  • Meanwhile, combine 1/2 cup half and half, fennel seeds, and tarragon in small saucepan; bring to simmer. Remove from heat; cover to keep warm.
  • Drain potato mixture; return to pot. Stir over medium heat until any excess liquid evaporates, about 2 minutes. Add hot half and half mixture and butter and mash until vegetables are almost smooth (small fennel bits may still remain). Season to taste with salt and pepper. (Can be made 8 hours ahead; cover and chill. Rewarm covered with plastic wrap in microwave, stirring occasionally and thinning with more half and half, if desired.)
  • Transfer mashed potato mixture to bowl. Sprinkle with reserved chopped fennel fronds and serve.

5-Ingredient Fix Contest Entry. My Italian heritage inspired this mashed potato side which is great to serve anytime and especially when entertaining during the holidays. I use grape seed oil when roasting as it tolerates higher temperatures. The roasted fennel added to Simply mashed potatoes results in a great combination of flavor and a side that you will want to serve often. Grape seed oil can be purchased in health food stores, larger supermarkets or on-line. Garlic flavored olive oil can be a substitue, if necessary. Roasting the fennel can be done a day ahead and the fennel heated quickly in a microwave just before you puree it and beat it into the mashed potatoes.

1 large fennel bulb
2 tablespoons grapeseed oil (roasted garlic flavor)
1/2 teaspoon kosher salt, plus extra to taste
24 ounces Simply Potatoes Traditional Mashed Potatoes
4 tablespoons light cream, heated to very warm

Steps:

  • Heat oven to 475 degrees F. Line a edged heavy-duty baking sheet with parchment.
  • Quarter fennel bulb lengthwise and trim base and core, leaving just enough core intact to hold layers together. Reserve the feathery top. Cut fennel bulb into 3/4-inch to 1-inch wedges and place on parchment lined sheet. Brush wedges with oil (both sides) and sprinkle with 1/2 tablespoon salt. Roast until wedges begin to brown on the edges-about 15 minutes. Turn wedges and roast until tender and nicely browned-about 10-15 minutes longer. Remove from oven, turn oven heat off. Cool fennel slightly then trim away remaining core; discard core.
  • Prepare mashed potatoes during the final 5 minutes of roasting fennel. Peel film at corner of package to vent then heat on high 3 minutes in microwave. Completely remove film and stir. Microwave on high for another 1 minute. Transfer potatoes to a large serving bowl when fennel is removed from oven. Set bowl in oven to keep warm (door ajar-oven heat off).
  • Roughly chop fennel and puree in a food processor with 2 tablespoons of the warm cream until smooth. Transfer fennel to bowl of potatoes, add remaining 2 tablespoons warm cream and beat together. Season with extra salt to taste. Chop a few reserved fennel tops and scatter over potatoes. Serve immediately.

2 1/2 pounds boiling potatoes
1 1/2 pounds fennel bulbs including fronds (sometimes called anise; about 2 medium)
1 cup whole milk
2 teaspoons extra-virgin olive oil

Steps:

  • Peel and quarter potatoes. In a kettle cover potatoes with salted cold water by 2 inches and simmer until very tender, about 30 minutes.
  • While potatoes are simmering, trim fennel stalks flush with bulbs, reserving fronds and discarding stalks. Halve bulb and discard core. Cut bulbs into 1/4-inch-thick slices. Chop reserved fronds and in a large saucepan poach sliced fennel and three fourths fronds in milk at a bare simmer, covered, until very tender, about 30 minutes. Drain potatoes in a colander and transfer to a large bowl.
  • In a blender purée fennel mixture until smooth (use caution when blending hot liquids). Add fennel purée to potatoes and mash with a potato masher. Season potatoes with salt and pepper. Potatoes may be made 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes.
  • Serve potatoes drizzled with oil and sprinkled with remaining fennel fronds.

1 Vidalia onion, peeled and coarsely chopped, about 1 cup
1 fennel bulb, core removed, coarsely chopped
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 eight-ounce container low-fat sour cream
1 cup 1 percent milk
Olive-oil cooking spray

Steps:

  • Place potatoes in a large saucepan with enough cold water to cover. Place over high heat, and bring to a boil. Reduce heat to simmer, and cook until potatoes are tender when pierced with a fork, about 20 minutes. Drain in a colander, and carefully remove skins. Pass potatoes through a ricer into a large bowl.
  • Meanwhile, coat a large saute pan with olive-oil cooking spray, and place over medium heat. Add onion, fennel, sugar, salt, and pepper, and saute until onions are tender and caramelized, about 15 minutes. If pan begins to brown before fennel and onion are cooked, add water, 1/4 cup at a time, and continue cooking. Transfer fennel mixture to the bowl of a food processor, add sour cream, and puree until mixture is smooth. Place milk in a small saucepan, and bring to a boil. Whisk milk and sour-cream mixture into potatoes until smooth and fully incorporated. Serve.

In a sauce pan, warm up the olive oil and fennel seeds for 3 minutes on low heat. Chop the warm potatoes with a knife into small chunks while pouring the fennel oil into the lumpy mixture. Season with salt to taste.
