JUICY BAKED CHICKEN BREAST WITH GARLIC AND PARMESAN

Steps:
- Season chicken breasts with a little salt.
- Mix bread crumbs, Parmesan cheese, basil, and pepper in a bowl.
- Heat olive oil and garlic in a skillet over medium heat until fragrant, 1 to 2 minutes.
- Dip chicken breasts in the garlic oil, then into the bread crumb-Parmesan mixture. Place chicken in a baking dish.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

GARLIC PARMESAN CHICKEN
Buttery, baked chicken with a garlic parmesan breading. A simple butter mixture bakes into the garlic parmesan chicken to keep it tender.

Steps:
- The chicken breasts we used were large (3 chicken breasts = 2 1/3 pounds). If the chicken breasts you are using are also large cut them in half to get 6 pieces.
- Place the chicken breasts in a zippered bag. Use the side of a meat tenderizer to pound the chicken breasts to 1/2" thickness throughout so they cook evenly.
- Preheat the oven to 350 degrees. Place 1/4 cup butter in a 9x13 pan and place it in the oven for the butter to melt while the oven heats.
- In a bowl, mix the breadcrumbs, cheese, parsley, salt and pepper. Place milk in another shallow bowl.
- Dip chicken in milk, then roll it in the crumb mixture.
- Place chicken in the baking dish with the melted butter.
- Combine the butter, garlic and lemon juice and drizzle over the chicken, then sprinkle on the paprika.
- Cover the pan loosely with foil and bake for 20 minutes.
- Uncover the pan, turn the chicken and bake uncovered for an additional 15 minutes. The baking time will depend on the thickness of the chicken, so be sure to check it to make sure it is thoroughly cooked. The internal temperature should be 165 degrees Fahrenheit.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.

GARLICKY CHICKEN PARMESAN
Steps:
- Preheat the oven to 350 degrees F. Set a wire rack into a baking sheet lined with aluminum foil.
- Sprinkle the chicken on both sides with salt and pepper.
- Combine the flour and some salt and pepper in a medium baking dish. In a second baking dish, combine the eggs, milk and minced garlic. In a third dish, combine the panko and garlic salt.
- Dredge the chicken breasts through the flour mixture, dusting off any excess; then through the egg mixture, letting excess drip off; and then through the panko breadcrumbs, making sure to coat the breasts on each side. Set the breaded chicken breasts on the wire rack and refrigerate for 30 minutes to allow the breading time to set.
- Fill a large, deep skillet halfway with vegetable oil and heat to 375 degrees F on a deep-fry thermometer.
- Using tongs, carefully place the breaded chicken in the hot oil, working in batches to avoid crowding the pan. Fry until light golden on both sides, about 4 minutes. Return the chicken to the wire rack.
- Dollop 2 tablespoons of Marinara Sauce over each piece of chicken and sprinkle the chicken evenly with the Parmesan and mozzarella. Transfer to the oven and bake until the chicken is cooked through, about 15 minutes. Serve warm.
- Heat the olive oil in a large heavy-bottomed pot over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the carrots and celery, season with salt and pepper and saute until all the vegetables are soft, another 10 minutes. Add the tomatoes and oregano and simmer, uncovered, over low heat until the sauce has thickened, about 1 hour. Season to taste with more salt and pepper.

- Combine the egg and the lemon juice.
- In a separate bowl, combine the panko bread crumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
- Coat the chicken tenders in flour and shake off any excess. Then dredge in the egg and lemon juice mixture and allow excess egg to drip off. Coat with the panko bread crumb mixture, turning until evenly coated.

CRISPY GARLIC-PARMESAN CHICKEN
Steps:
- 1. Heat oven to 400 degrees F. Line cookie sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. - Preheat oven to 400°F (200°C).
- Fold the parchment paper in half, then open up.
- Slice the zucchini into rounds and lay them on one half of the parchment paper.
- Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the zucchini. Sprinkle with salt and pepper.
- Lay the chicken on the zucchini, season with salt and pepper and spoon on the rest of the garlic butter. Top with parmesan.
- Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
