This homemade Carolina Reaper hot sauce recipe is incredibly hot, made with roasted Carolina Reaper peppers, the hottest peppers in the world, garlic, and onion. If you love your hot sauce "hot", it doesn't get any hotter!

Number Of Ingredients 6

8 ounces Carolina Reaper peppers
1 large bulb of garlic (top sliced open to expose most of the garlic)
1 medium white onion (sliced in half)
3 tablespoons good quality vinegar (distilled white, champagne or apple cider vinegar for more tangy)
½ teaspoon salt (or more to taste)
1 cup of water (or more, as desired)

Steps:

  • Heat your oven to 400 degrees. Set the Carolina Reaper peppers, garlic and onion on a baking sheet and bake them about 15-20 minutes, or until the skins slightly char. Keep an eye on these. You don't want them to burn, and watch out for any fumes.
  • Add the peppers and onion to a food processor. Squeeze garlic out of their skins and into the food processor they go.
  • Add in the vinegar and salt. Process until you get a chunky mixture. Watch out for the fumes!
  • Add in a half cup of water and process again until the sauce starts to smooth out. Check it for thickness. If you'd like a thinner sauce, add in a bit more water a little at a time, processing, until you reach your desired consistency.
  • If desired, you can strain the sauce to smooth it out, or use it as-is. If you do strain it, you can discard the pulp or dehydrate it to make a superhot seasoning powder.
  • Pour into sterilized bottles and enjoy. The longer you let it sit, the more the flavors will meld.

2 large onions, coarsely chopped (4 cups)
2 green bell peppers, ribs and seeds removed, coarsely chopped (2 1/4 cups)
2 red bell peppers, ribs and seeds removed, coarsely chopped (2 1/4 cups)
5 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 large tomato, cored and coarsely chopped (2 cups)
3 cups mixed cilantro leaves and tender stems
Coarse salt and ground pepper

Steps:

  • In a 5-quart Dutch oven or pot, heat oil over medium heat. Add onion; cook, stirring often, until starting to soften, about 5 minutes.
  • Add bell peppers, garlic, oregano, and cumin; cook, stirring often, until peppers are crisp-tender, about 10 minutes. Add tomato; cook, stirring occasionally, 5 minutes more.
  • Transfer to a food processor. Add cilantro, and puree until slightly chunky. Season with salt and pepper.
  • If not using immediately, transfer sauce, in 1-cup quantities, to airtight containers. Freeze until ready to use, up to 3 months.

Steps:

  • Melt the butter in a frying pan then add the onion and saute until soft.

1/2 lb sliced peppers (a mixture of sweet and hot, seeds removed from hot peppers if you prefer milder flavor)
1/2 cup apple cider vinegar
1/2 cup white vinegar
1/2 cup chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon ground mustard
1/2 teaspoon ground turmeric
1/2 teaspoon sea salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 teaspoons sugar

Steps:

  • In a medium stockpot, combine the peppers, cider vinegar, white vinegar, onion, garlic powder, cumin, mustard, turmeric, salt, clove, allspice, and sugar.
  • Put the lid on the pot, bring the mixture to a simmer over medium heat, then simmer the sauce for 20 minutes.
  • While the hot sauce is simmering, prepare the water bath canner. Fill it halfway with water and put it on the stove to simmer. Check two half-pint jars for any nicks or cracks, wash them in hot soapy water and rinse them in hot water. Keep the jars hot until it's time to use them. Wash the lids in hot soapy water and rinse them.
  • After 20 minutes, remove the pan from the heat and puree the pepper mixture. You can use an immersion blender or ladle the mixture into a blender to puree it.
  • Pour or ladle the hot sauce into the prepared jars, leaving 1/4 inch of headspace. Remove the air bubbles with a bubble remover tool or chopstick and recheck the headspace. Wipe the rims with a clean cloth, put the lids on the jars and screw on the bands. Place the jars in the prepared hot water bath canner, making sure that the jars are covered by at least an inch of water.
  • Put the lid on the canner and bring the water to a full rolling boil. Process the jars for 10 minutes, adjusting for altitude, if necessary.
  • Arrange a folded towel on the counter or table. Remove the jars, using a jar lifter, and place them on the towel. Let the jars cool for at least 12 hours.
  • Once the jars are cooled, remove the bands and check the seals. If any jars failed to seal, put the in the refrigerator to use first. Wipe the jars with a clean cloth and store them for up to a year.

  • In a large nonstick skillet, heat oil over medium heat. Season chicken with salt and pepper. Cook chicken until lightly browned on the first side, about 5 minutes.
  • Turn chicken; add Garlic-Pepper Sauce and 2 tablespoons water. Bring to a simmer. Cover, and cook until chicken is opaque throughout, 8 to 10 minutes.

2 tablespoons minced garlic
1 tablespoon minced ginger
1 teaspoon finely chopped fresh green chiles
2/3 cup low sodium soy sauce
1/2 cup chicken broth
1/3 cup rice wine vinegar
1/4 cup light brown sugar
1 tablespoon sesame oil
1 tablespoon red pepper flakes
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Heat the vegetable oil in a medium saucepan over high heat. Add the garlic, ginger, and chilis. Cook, stirring constantly until fragrant, about 15 seconds.
  • Stir in the soy sauce, chicken broth, vinegar, brown sugar, sesame oil, red pepper flakes. Bring to a boil then reduce heat to medium and cook for 1 minute.
  • Stir the water and cornstarch together until fully dissolved and pour it into the sauce. Cook, stirring constantly until the sauce thickens.
