SPINACH & TUNA PANCAKES
Celebrate Shrove Tuesday with these wholesome spinach and tuna pancakes. Healthy, nutritious and full of flavour, they deliver three of your 5-a-day

- Mix all the ingredients for the salad and set aside. Heat 1 tsp oil in a large non-stick pan and fry the garlic briefly. Stir in the spinach to wilt, then mix in the tomato purée, tuna and cottage cheese. Set aside.
- Beat the eggs with the flour and 2 tbsp water. Heat the remaining oil in a medium non-stick pan, add half the batter and swirl round the pan to coat the base. Cook briefly until set, then flip over with a palate knife to cook the other side for 1 min. Repeat with the remaining batter. Put the pancakes on serving plates, spoon the filling down one side, roll up and serve with the salad.

TUNA FISH PATTIES
This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

- Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
- Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
- Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

TUNA, CHEDDAR AND SPINACH POCKET
Although convenient, the sugar, food additives and preservatives found in store-bought frozen snacks may actually make kids hyper. This healthy whole wheat pocket will satisfy hunger and calm down rowdy kids at the same time. Tuna and spinach provide vitamin B12 and magnesium, which reduce nervousness and regulate blood sugar. Bonus: these pockets freeze well, so you can make a big batch and reheat these for an easy snack when school lets out.

- For the dough: In a large bowl, dissolve the sugar in 3/4 cup very warm water. Sprinkle the yeast over the water and let it sit until bubbling and slightly frothy, 5 to 10 minutes. Add the whole wheat flour, all-purpose flour, olive oil and salt, and mix well by hand. Place the dough in the bowl of a stand mixer fitted with a dough hook, and mix on medium speed until the dough is a tight, shiny ball that no longer sticks to the sides of the mixing bowl, about 6 minutes. Alternatively, transfer the dough ball to a floured surface and knead by hand, about 10 minutes. Cover with a damp towel and place the bowl in a warm place until doubled in size, 1 hour. Divide the dough into 8 pieces and form each into a 2- to 3-inch diameter ball. Place on a clean baking sheet and let the dough rise again for 45 minutes.
- For the filling: Heat a large nonstick saute pan over medium-high heat. Add the spinach and 1/4 cup water and cook until the spinach is wilted, dark green and reduced in volume to about 1 cup, about 5 minutes. Transfer the spinach to a medium bowl and cool for 3 to 5 minutes. Squeeze out any excess moisture with your hands. Stir in the cheese, tuna, salt and pepper.
- Preheat the oven to 425 degrees F and move a rack to the middle of the oven.
- Flour a work surface and roll each ball into a 4- to 5-inch disk. Place 1 heaping tablespoon of filling on half of a circle and fold over to enclose the filling, forming a half moon. Pinch the dough together along the edge so that it is completely sealed, and then place on a baking sheet. Repeat for the remaining dough and filling. Bake until golden brown, 17 to 20 minutes, turning the pan halfway through. Cool 5 minutes before serving.

TUNA SPINACH PASTA
A lovely mix of tuna, spinach and pasta. Served hot, this makes a great late night supper. Great cold, too!

- Cook pasta in large pot according to package directions. Meanwhile, drain tuna, set aside. Mince garlic, set aside.
- When pasta is done, drain and set aside. Reduce heat to medium. In same pot, add olive oil. Add garlic. Saute garlic over medium-low heat, stirring frequently until garlic takes on color. When garlic is colored to a medium golden brown, add spinach. Lid pot and reduce heat, stirring occasionally. When spinach is shiny and wilted, add tuna. Stir. Lid and let simmer for one minute. Add pasta, stir. Lid again, let simmer one minute. Add breadcrumbs, stir, lid for one minute. Add cheese, stir and serve.

SPINACH-TUNA DINNER SALAD
This fast-n-easy dinner salad is huge and fills me up while losing weight while keeping an eye on my diabetic needs. In fact, it is so low on the carbs that I tend to have to have a slice or three of bread (or some rice) with it just to meet my meal's needs.

- In a large mixing bowl, add the spinach leaves, tuna, and salad dressing. Don't be too fat-phobic; keep the sunflower oil and do not drain the tuna unless you feel like it's too oily. Personally, after measuring it, I find that it doesn't impact the calories too much by removing the oil and, frankly, it tastes better with it.
- Season with freshly ground black pepper and toss with a pair of tongs. NOTE: You do not need to add salt to this salad, not even a little, since pre-packaged salad dressings contain a substantial amount of sodium already. Similarly, the canned/packet tuna has a decent amount, too. Toss until the salad dressing is evenly distributed.
- Shred the cheese and dice your large tomato into sixteenths. Add the tomato and cheese to the mixed greens and toss again. Optionally, spritzing the tomato pieces with some balsamic vinegar (I have a small sprayer) can add a nice acidic note to the salad.
- This creates a large dinner salad that is very satisfying.
