These Garlic Roasted Chickpeas are perfect for making a crispy and crunchy gluten free snack. Both kids and adults love these roasted garbanzo beans. Vegan, gluten-free, and super healthy!

2 (15-ounce) cans of chickpeas (also called garbanzo beans)
1/4 cup coconut oil, melted
2 teaspoons Italian seasoning or 1 teaspoon each dried dill and dried parsley
1/4 teaspoon garlic powder
1 tablespoon dried onion*
1/2 teaspoon salt

Steps:

  • Preheat your oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • Rinse and drain the chickpeas and spread them out on a paper towel-lined baking sheet. Pat them dry.
  • Transfer the chickpeas to a mixing bowl. Pour the coconut oil, Italian seasoning, garlic powder, dried onion, and salt over the chickpeas and stir to combine.
  • Spread the chickpeas on your baking sheet and bake for 45 minutes. Remove the tray halfway through the baking process and use a spatula to stir the chickpeas.
  • Let the chickpeas cool for 10 minutes before serving. Serve warm or at room temperature.

Here's what you need: chickpeas, olive oil, garlic, italian herb, grated parmesan cheese

15 oz chickpeas, 1 can, drained and rinsed
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon italian herb
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 400°F (200°C).
  • Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
  • In a medium bowl, add dried chickpeas, olive oil, garlic powder, herbs and parmesan. Toss well to coat evenly.
  • Spread chickpeas out on a parchment paper-lined baking sheet.
  • Roast for 15-20 minutes.
  • Mix around on baking sheet and roast for additional 15-20 minutes, or until golden.
  • Cool for 5-10 minutes.
  • Enjoy!

1 (16 ounce) can chickpeas
cooking spray
1 teaspoon salt free garlic and herb seasoning

Steps:

  • Line a baking pan with foil.
  • Spray the foil with cooking spray.
  • Drain and rinse the chickpeas. Pat dry.
  • Place chickpeas in a zip lock bag. Spray with cooking spray. Seal bag and shake to coat the chickpeas. Pour chickpeas out on baking pan.
  • Bake at 400 degrees for 40 to 45 minutes.
  • Place chickpeas in a bowl and toss with garlic herb seasoning.
  • Store in air tight container.
  • Each 1/4 cup serving provides 6 grams protein, 5 grams fiber and is 136 calories.

It's really hard for people who have to limit sugar and carbohydrates in their diet to find interesting snacks to munch on. Nuts and cheese are easily overused when you need to eat a protein based snack every few hours. In my experience, food boredom usually equals diet failure. Roasted chick peas take on the crunchy texture of roasted peanuts and you can spice them however you like. My take on the snack vaguely resembles the taste of Cajun French fries.

2 tablespoons olive oil
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • Drain and rinse the beans. Dry thoroughly.
  • Combine oil and spices in a bowl. Toss chickpeas in the oil and spice mixture.
  • Spread the chick peas in a single layer on a cookie sheet.
  • Bake for 40-50 minutes or until golden brown and crunchy.
  • Store in an airtight container.
