GARLIC BUTTER STEAK BITES
These seared Garlic Butter Steak Bites pack so much flavor and are so easy to throw together! The best part? They're ready in 15 minutes!

Steps:
- Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot, then add the steak pieces to it. Season them generously with salt and pepper.
- Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2 minutes until they're golden brown. If your skillet isn't big enough, you may need to do this batches.
- Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
- Pour the garlic butter over the steak bites and toss well. Garnish with parsley and serve.

AIR FRYER STEAK WITH GARLIC-HERB BUTTER
Yes, you can even cook steak in an air fryer! We found that thicker cuts, like sirloin, are best -- they turn nice and browned on the outside without overcooking. Plus, there's very little clean up. We added a homemade garlic-herb butter to melt over the steak for a quick and flavorful weeknight dinner.

- Allow the steak to sit at room temperature for 30 minutes before cooking.
- Preheat a 3.5-quart air fryer to 400 degrees F. Season the steak on both sides with a generous pinch of salt and several grinds of black pepper. Place the steak in the center of the air fryer basket and cook until desired doneness, about 10 minutes for medium-rare, 12 minutes for medium and 14 minutes for medium-well. Transfer the steak to a cutting board and allow to rest, about 10 minutes.
- Meanwhile, mash together the butter, parsley, chives, garlic and crushed red pepper in a small bowl until combined. Slice the steak against the grain into 1/4-inch-thick pieces. Top with the garlic-herb butter.

- HEAT oil in small, nonstick skillet over low heat.
- Cook garlic for 5 minutes or until tender.
- Add green onions; increase heat to medium-low.
- Cook for 5 minutes or until green onions are crisp-tender.
- Stir in salt and pepper.
- Remove from heat; let cool.
- PREHEAT grill.
- TRIM excess fat from steaks.
- Make a horizontal cut through the center of the steaks parallel to the surface of the meat, about 1 inch from each side, to form a pocket.
- Cut up to but not through the opposite side.
- Spoon cooled garlic mixture into pocket, spreading evenly.
- Secure opening with wooden picks.
- GRILL steaks over medium-low heat, turning once, for 26 to 32 minutes or to desired doneness.
- Remove wooden picks; slice steaks into ½-inch slices.

- In a large skillet, cook 6 bacon strips over medium heat until crisp. Remove to paper towels; drain, reserving 3 tablespoons drippings. Crumble bacon and set aside. - Bring meat to room temperature and pat dry. Heat the extra-virgin olive oil in large, heavy skillet or cast iron skillet over medium-high to high heat. When the oil smokes, add the meat and caramelize before turning. Once evenly browned all over, about 5 minutes, season liberally with salt and pepper, add the garlic and toss with the meat for 2 minutes. Stir in the parsley and a little lemon zest and cook for another minute. Add the white vermouth and deglaze the pan. Turn off the heat, add the lemon juice and toss to coat. Transfer to a serving platter and serve immediately.

- Saute garlic in olive oil until hot but not browned. Remove from heat and stir in parsley, green onions, breadcrumbs and basil. Set aside.

- Starting about a third in from 1 side, make a lengthwise slit down the roast to within 1/2 in. of the bottom. Turn roast over and make another lengthwise slit, starting about a third in from the opposite side. Open roast so it lies flat; cover with plastic wrap. Garlic-studded, herb-rubbed pork shoulder is such a great cut of meat. I cooked it in a pan without liquid, without covering it, and without cooking it at a really low temperature. I didn't want it to be falling apart and wet; I wanted it to be solid, chewy and crusty.

- Preheat oven to 325 degrees F (165 degrees C).
- Cut about 6 holes per side into pork roast with a sharp knife and insert garlic clove halves into the holes. Rub roast with 1 tablespoon olive oil. Season all sides of roast with kosher salt and a generous amount of black pepper, Italian seasoning, rosemary, and cayenne pepper. Place into a roasting pan.
- Roast in the preheated oven for 3 hours. Turn off the oven with roast inside and leave it to rest for 1 hour. Refrigerate meat overnight.
- Cut cold pork into 1/2-inch-thick slices. If any garlic appears on the cut surface of the meat, pick it out so it doesn't burn. Season slices with salt.
- Heat 1 tablespoon olive oil in a heavy skillet over medium-low heat and sear pork slices in the hot oil until browned and crusty, about 10 minutes per side.
- Toss lettuce with tomatoes in a bowl and drizzle with red wine vinegar; toss again to coat.
- Heat beans in a saucepan over low heat. Layer about 1/3 cup white beans into a large, shallow soup plate; top beans with a slice of pork shoulder and about 1/4 cup lettuce mixture.
