GARLIC BREAD BRUSCHETTA RECIPE BY TASTY

Steps:
- Preheat oven to 350°F (180°C).
- In the microwave, melt the 3 tablespoons of butter with 1 clove of garlic.
- Slice up a loaf of Italian bread to about 1-inch (2 ½ cm) thickness.
- Top with melted garlic butter, Italian seasoning, and parmesan cheese.
- Bake for approximately 15 minutes or until golden brown.
- In a mixing bowl, combine the tomatoes, garlic, salt, pepper, basil, and olive oil and stir until everything is fully coated with olive oil.
- Top the garlic bread with desired amount of tomato mixture.
- Garnish with parmesan cheese.
- Enjoy!

TOMATO BRUSCHETTA
This recipe has been modified slightly over tim, but is always a winner, whether for an appetizer or main dish. It even works with winter store-bought tomatoes. The vinegar and basil bring out the flavors.

Steps:
- Combine tomatoes, bell pepper, onion, balsamic vinegar, 1/4 cup olive oil, basil, and garlic; let tomato mixture rest for 15 to 30 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange French bread slices on a large baking sheet; drizzle with 1/4 cup olive oil.
- Toast bread in preheated oven until lightly browned, about 1 minute on each side. Top bread slices with tomato mixture using a slotted spoon, allowing excess liquid to drain. Return bread to baking sheet and sprinkle with mozzarella cheese.
- Broil in preheated oven until cheese melts, about 3 minutes. Serve immediately.

TOMATO & GARLIC BRUSCHETTA BREAD
This appetiser is just wonderful with any dish! I love ripe fresh tomato with garlic and this dish is so well received at dinner parties! I have substituted apple juice for olive oil in part of this recipe to make the dish reasonably low-fat, some recipes call for 1/2 cup oil! The apple juice works beautifully with tomato!

- Mix roughly chopped tomatoes, onion, parsley & garlic, apple juice and vinegar in a shallow bowl.
- Season with salt and pepper.
- Cover bowl and let tomatoes marinate at room temperature for about 1-2 hour.
- Stir occasionally to distribute flavours.
- Meanwhile, heat the grill/broiler.
- For the bread rub one side with garlic and brush with a little olive oil and grill/broil them oiled-side up until lightly browned.
- Place a good 2-3 spoonful of tomato mixture on each slice and serve with a fork and knife.

- Preheat oven to 375F. Line a baking sheet with parchment paper and lay the slices of bread into it, making sure they don't overlap.
- In a small bowl combine the oil with garlic and basil. Baste each slice of bread with the garlic mixture.
- Toast the bread in the oven for 6-8 minutes.
- Meanwhile, in a small bowl combine all topping ingredients.
- Remove bread from the oven and add spoonfuls of the topping salad.

- Cut the garlic bread up and place on an oven tray. Turn the oven on 180 degrees and bake until they are slightly crunchy.
- Dice up the tomato and onion and place it in a bowl.
- Grate cheese on the smallest grate possible and place in the bowl with the tomato and red onion. Mix all the ingredients together.
- Take the garlic bread out of the oven and pour a little balsamic vinegar on it. Spoon desired amount of tomato/onion/cheese onto the garlic bread. Personal choice if you want a little more balsamic on top.

GREEN ONION GARLIC NAAN BREAD
I am going to show you how to make naan Chef John-style-when I want it fast and I don't want to use yeast and wait for a dough to rise but I also want it just as good as if I did. While I originally tried this method to save time, it produces what might be my favorite style of naan. It really is incredible whether you use garlic and green onions, or not. As naan are made, they must be stacked and wrapped in a kitchen towel to keep them soft and supple.

- Place bread flour in a bowl. Add salt and baking powder and give it a good whisk until evenly combined.
- Add in Greek yogurt gently, followed by garlic and green onions. Take a wooden spoon and slowly start mixing everything together. Keep mixing, stirring, and pressing until a shaggy dough forms.
- Transfer dough to a work surface and use your hands to press dough together. Knead for a few minutes until dough becomes elastic and a little bit sticky. Add a bit more flour as necessary but try to keep extra flour at an absolute minimum. Knead until dough is a little bit stretchy, 3 to 5 minutes.
- Wrap in plastic and allow to rest on the counter for 15 to 20 minutes.
- Take a bench scraper and cut into 6 equal pieces. Take 1 portion and roll into a ball. Place onto a generously floured surface. Use a rolling pin to roll out nice and thin, about 1/8 inch or less. It's ok if the naan is not a perfect circle. You will need extra flour for rolling out as the dough is sticky, but try to use as little as possible.
- Heat a cast iron skillet over medium-high heat until hot. Transfer dough circles into the hot dry skillet and cook until little bubbles form on the surface and the underside is lightly browned, about 1 minute. Flip naan over and cook for 1 more minute. Press down slightly with a spatula to increase the heat during cooking. Flip over twice more and cook for an additional 15 seconds per side, but make sure not to overcook to preserve the texture. Naan should still be flexible when you remove it from the skillet onto a plate.
- Cover with a kitchen towel to keep warm and moist while you cook the other naan breads. Stack all 6 naan breads on top of each other and keep covered with a kitchen towel.
- When you are finished cooking all 6 naan breads, unstack breads and brush the first naan bread on both sides with a little bit of melted butter. Stack second piece of naan on top and only brush the top side. Keep stacking and buttering all the naan breads. Fold each naan into a triangle and serve.
