- Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
- Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

GARLICKY BEANS
Instead of broiling the garlic, you can also char cloves one at a time over the flame of a gas stove, holding and turning with tongs, until blackened and blistering, about 30 seconds to 1 minute each. The beans make a delectable side for Shrimp and Clams a la Plancha.

- Place beans in a large bowl; cover with water by several inches. Refrigerate, covered, overnight.
- Preheat broiler. Drain and rinse beans. Transfer to a large pot; cover with 8 cups cold water. Place garlic cloves on a rimmed baking sheet and place under broiler, turning to charall over, 2 to 3 minutes. Add garlic, oil, and thyme to pot; season generously with salt and pepper. Bring to a boil, then reduce to a simmer and cook until beans are just tender, 45 minutes to 1 hour. Remove and discard aromatics; serve. (Or let cool completely in broth, then store in an airtight container in refrigerator up to 5 days.)

This white bean dish isn't shy when it comes to garlic. It's used in the pot along with the simmering beans, and also fried in olive oil as a crunchy, pungent garnish. As a contrast, the broccoli rabe and red onion get very sweet when you sauté them slowly until they are browned and caramelized. - In the pressure cooker, combine the beans, 7 cups of water, the 4 smashed garlic cloves, 2 tablespoons of the oil, and 2 teaspoons of the salt. Tie the rosemary, bay leaf, and carrot together with kitchen twine, and then drop the bundle into the pressure cooker. Cover, and cook on high pressure for 25 minutes. Allow the pressure to release naturally. If the beans aren't done, cook on high pressure for another 5 minutes, then manually release the pressure.
- While the beans are cooking, heat 1/2 cup oil in a large skillet over medium-low heat. Stir in the sliced garlic and a pinch of salt, and sauté until the garlic is just starting to turn golden, 2 to 3 minutes. Transfer the garlic oil to a small bowl and reserve for the garnish.
- Return the skillet to the stove, raise the heat to medium-high, and add the remaining 2 tablespoons oil. Stir in the onion and cook until golden, about 5 minutes. Raise the heat to high and stir in the broccoli rabe, remaining 1/2 teaspoon salt, and the red pepper flakes, tossing to coat with the oil. Add 1/2 cup of water to the skillet, and cook until the water has been absorbed and the broccoli rabe is softened and browned, about 10 minutes (drizzle in more oil as necessary to prevent sticking).
- To serve, remove the herb bundle from the bean pot and then drain the beans, reserving the liquid if you like (use it like stock). Place the beans in a shallow bowl or on a platter. Drizzle the beans with the garlic oil, and top with the broccoli rabe.

Saute for about 10-15 minutes until softened but still crispy. GARLICKY GREEN BEANS
I make this often with my summer's crop of green and yellow beans ---for this recipe I really don't bother to measure so really the exact amounts do not matter, however I have posted the amounts that I I think is pretty much close to what I use --- I usually have my beans already steamed and stored in the refrigerator until ready to use for this recipe, do not make this using uncooked raw beans they must be cooked firstly, prep time does not include pre-steaming the beans or peeling the garlic cloves.

- In a skillet melted the butter with oil over medium heat.
- Add in the sliced garlic and crushed chili flakes; cook stirring for about 4 minutes or just until the garlic is just lightly browned (do not burn the garlic).
- Add in steamed beans and toss until heated through.
- Season with salt and freshly ground black pepper.
- Remove to a bowl and sprinkle with Parmesan cheese.
- Delicious!
