Couldn't find a cucumber soup with exactly the flavors I wanted so I made up this one! It's a creamy and uniquely flavored cool cucumber soup. It is okay to have a choppy texture rather than perfectly smooth. Whichever consistency is your preference. Serve cold.

¼ cup buttermilk powder
1 cup water
2 standard cucumbers, chilled and cut into 2-inch chunks
1 large English cucumber, chilled and cut into 2-inch chunks
1 cup vanilla yogurt
¼ small shallot, chopped
½ lemon with rind, chilled and cut into four pieces
3 large mint leaves, torn
1 clove garlic, chopped
1 tablespoon dried dill weed
1 ½ teaspoons ground cumin
½ teaspoon grated nutmeg

Steps:

  • Stir buttermilk powder and water together in a bowl until smooth; pour into the work bowl of a food processor. Add standard cucumbers, English cucumber, vanilla yogurt, shallot, lemon, mint, garlic, dill, cumin, and nutmeg to the bowl.
  • Pulse the food processor to begin chopping ingredients before leaving on to blend soup to your desired consistency.

3 cups plain yogurt
1 large English cucumber, peeled and halved,seeded and coarsely grated,plus
6 slices cucumbers, with skin paper-thin for garnish
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 1/2 tablespoons chopped of fresh mint
2 1/2 tablespoons chopped fresh dill, plus
6 dill sprigs, for garnish
2 cups milk
3 tablespoons white wine vinegar or 3 tablespoons fresh lemon juice
salt & freshly ground black pepper

Steps:

  • Line a sieve with cheesecloth (muslin) and place over a large bowl.
  • Spoon the yogurt into the sieve and let drain in the refrigerator for 4 hours.
  • Discard the captured liquid and place the yogurt in the bowl.
  • Add the grated cucumber, garlic, olive oil, mint, chopped dill and milk.
  • Mix well.
  • Stir in the vinegar or lemon juice.
  • Cover and chill for 1 hour.
  • Before serving, season to taste with salt and pepper.
  • Ladle the soup into chilled individual bowls and garnish each serving with a cucumber slice and a dill sprig.
  • Serve well chilled.
  • NOTES: Cucumbers are native to Asia, where they have been eaten for thousands of years.
  • They contain a great deal of water, which makes them particularly refreshing in the hot summer months.
  • When choosing cucumbers, avoid the waxed variety sold in grocery stores year-round, and instead seek out the long, thin-skinned English or hothouse variety.
  • It has a superior flavor, less water and far fewer seeds.
  • Three lemon cucumbers can be substituted for the single English (hothouse) cucumber, if you like.

2 cloves garlic, minced
1 small onion, diced

¼ teaspoon freshly ground pepper

1 avocado, diced

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add garlic and onion; cook, stirring occasionally, until tender, 1 to 4 minutes. Add lemon juice and cook for 1 minute. Add 3 3/4 cups cucumber slices, broth, salt, pepper and cayenne; bring to a simmer. Reduce heat and cook at a gentle simmer until the cucumbers are soft, 6 to 8 minutes.
  • Transfer the soup to a blender. Add avocado and parsley; blend on low speed until smooth. (Use caution when pureeing hot liquids.) Pour into a serving bowl and stir in yogurt. 4 yellow tomatoes, cut into chunks
1 yellow bell pepper, cut into chunks
1/3 cup chopped white onion
2 tablespoons sherry vinegar
4 teaspoons minced fresh dill
4 teaspoons minced fresh parsley
2 cloves garlic, smashed
1 teaspoon sugar
Kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 slices white sandwich bread, crusts removed, cut into 1/4-inch cubes

Steps:

  • Combine the cucumber and tomatoes in a blender, reserving 1/4 cup of each for garnish. Add the bell pepper, onion, vinegar, 1 teaspoon each dill and parsley, 1 clove garlic and the sugar; puree until smooth. Pass through a fine mesh strainer into a bowl, pressing with the back of a spoon to extract as much liquid as possible. Season with 1 teaspoon salt. Refrigerate until chilled, about 1 hour.
  • Meanwhile, make the croutons: Heat the remaining clove garlic with the olive oil in a skillet over low heat. Add the bread cubes and the remaining 3 teaspoons each dill and parsley. Cook, stirring, until golden and crunchy, 10 to 15 minutes. Discard the garlic.
  • Pour the soup into chilled bowls. Dice the reserved cucumber and tomatoes; sprinkle into the soup. Garnish with the croutons.

The most simple yet one of the best soups I had so far. A simplified version of my mum's cucumber soup. No need for salt, pepper, or seasonings, just a good vegetable broth. I like to have it with a good slice of toasted bread and some good cheese.

1 small yellow onion, chopped
1 large clove garlic, minced

  • Melt butter with the oil in a large saucepan over medium-high heat. Cook and stir onion and garlic in the butter mixture until tender, 3 to 5 minutes. 1 tablespoon finely chopped fresh mint

3 to 4 garlic cloves, mashed to a paste with 1 teaspoon salt
2 teaspoons Essence, recipe follows
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper
3 cups plain yogurt
3 cups sour cream, divided
3 tablespoons extra-virgin olive oil
2 teaspoons white wine vinegar
2 tablespoons minced fresh chives
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano

Steps:

  • Combine the cucumbers, bell peppers, green onions, jalapenos, cilantro, mint, dill, garlic, Essence, salt, cayenne, yogurt, 2 cups sour cream, olive oil, and white wine vinegar in a large bowl. Working in batches, puree the ingredients in a blender until very smooth. Transfer the soup to the refrigerator until well chilled, at least 2 hours. Taste and adjust the seasoning if necessary. Serve the soup, with each bowl garnished with a dollop of the remaining sour cream and some of the minced chives.

Once the soup is processed, the addition of extra yogurt adds a creamy texture. The diced cucumber and radishes add a crunchy texture. If hothouse cucumbers are not available, substitute the firm garden variety and double the amount called for. Peel cucumbers and halve lengthwise, then seed.

2 1/2 hothouse (seedless) cucumbers, peeled
2 tablespoons minced garlic
1 cup Fresh Vegetable Broth
4 cups plain nonfat yogurt
1 cup coarsely chopped fresh mint leaves
1 tablespoon fresh lemon juice
Salt and pepper, to taste
4 large red radishes, cut into 1/4-inch dice, for garnish

Steps:

  • 1. Slice 2 hothouse cucumbers into 1-inch pieces and place in a bowl. Cut the remaining 1/2 cucumber into 1/4-inch dice; reserve. To the cucumber slices, add the garlic, broth, 3 cups yogurt, 3/4 cup mint leaves, and lemon juice. Process well in a blender or food processor until smooth. Remove to a bowl.
  • 2. Whisk in the remaining cup of yogurt and the remaining 1/4 cup mint leaves. Season with salt and pepper.
  • 3. To serve, combine the reserved diced cucumber and the diced radishes, then divide equally among 4 bowls. Ladle the soup into the bowls atop the vegetables. Serve immediately.

500 g cucumbers
2 tablespoons margarine or 2 tablespoons butter
1 large onion, chopped
4 tablespoons flour
4 cups stock
salt and pepper
1 tablespoon lemon juice
1/2 cup cream

Steps:

  • As per the recipe: Peel and slice the cucumbers.
  • Melt the butter/marg in large saucepan and saute the onion until transparent.
  • Stir in the flour.
  • Add the stock and bring to a boil.
  • Add the sliced cucumber and cook until tender.
  • Puree in electric blender.
  • Season to taste with salt and pepper and stir in lemon juice.
  • Just before serving, mix in the cream.
  • What Liza does: I use alot more cucumbers, maybe+- 800/900g and add a touch more water to the stock amount.
  • I use more onions, approx.
  • 2 med-large.
  • Don't use more lemon juice as it changes the taste of the soup.
  • Once the soup is cooked (ie. the cucumbers are tender), puree the soup: and options: can either leave the soup as it is; or put in one tub of sour cream; or don't put sour cream in the pot and only serve with sour cream as garnish.
  • It's yummy.

The trick to making it hearty enough is to not stint on the seasonings, especially when something as mild as cucumber is the main ingredient. Garlic, plenty of herbs, jalapeño and anchovy add plenty of flavor, while buttermilk contributes a creamy, light texture. You could serve this with nothing more than some crusty or toasted bread on the side and be satisfied, but a topping of soft avocado dressed with a little lemon juice and feta cheese fills out the meal nicely. Bulgarian Cucumber Soup With Walnuts image

Walnuts are used in sweet and savory dishes throughout the Mediterranean. Along the Italian Riviera, a rich ricotta and walnut sauce traditionally is served with ravioli filled with greens. In Turkey, a thick, garlicky walnut sauce called tarator is served with cooked vegetables, much as aïoli is in the South of France. In France, walnuts are added to salads, breads and many desserts, and they are eaten fresh as well as dried - a great delicacy in the fall, just after the harvest. I've never encountered creamy, fresh walnuts in American farmers' markets, but if you know a walnut farmer, perhaps you could request some the next time they're harvested. Before the weather becomes too chilly for cold soups, try this one. Bulgaria once was well known for the number of centenarians in its population, which some scientists attributed to the daily consumption of Bulgarian yogurt. Now, both the yogurt and eating culture in this mountainous country have changed for the worse, and so have local lifespans.

2 cups thick plain yogurt (Greek style, or drained)
2 tablespoons walnut or olive oil, or 1 tablespoon each
2/3 cup (2 ounces) shelled walnuts, finely chopped
1 European cucumber, about 10 inches long, or 3 Persian cucumbers, cut in very small dice
1/2 cup ice-cold water, preferably spring water
2 tablespoons lemon juice
Freshly ground pepper
Ice cubes (optional)
Finely chopped walnuts
Extra virgin olive oil
Finely chopped fresh dill or mint

Steps:

  • Place the garlic in a mortar with 1/2 teaspoon salt, and mash to a paste.
  • Place the yogurt in a large bowl. Stir in the oil, garlic and walnuts. Whisk in the water and the lemon juice. Add salt and freshly ground pepper to taste. Chill for one hour or longer.
  • Meanwhile, season the cucumbers lightly with salt, and allow to drain in a colander for 15 minutes. Add to the yogurt mixture and stir together.
  • If you wish, place an ice cube in each bowl, and ladle in the soup. Top with chopped walnuts, a drizzle of olive oil if desired, and a sprinkling of dill or mint.
