This garlic recipe from chef Michael Psilakis' "How to Roast a Lamb" cookbook is used to make his Striped Bass Plaki.

Ingredients

1 cup canola oil
1 cup extra-virgin olive oil
3 cups garlic cloves
1 fresh bay leaf or 2 dried bay leaves
8 to 10 sprigs fresh thyme
Coarse salt
Whole black peppercorns

Steps:

Preheat oven to 300 degrees. Mix together canola and olive oil; set aside.
Place garlic cloves in an ovenproof heavy-bottomed saucepan or Dutch-oven with a lid. Add bay leaf, a scant tablespoon salt, and peppercorns. Add enough of the oil mixture to barely cover.
Cover pan and transfer to oven. Cook until garlic is pale golden and very tender, 1 hour to 1 hour and 15 minutes. Remove from oven and let cool to room temperature.
Using a slotted spoon, transfer garlic cloves to a cutting board or the bowl of a small food processor, reserving oil; finely chop or process until pureed. Transfer to a bowl and add just enough reserved oil to cover. Keep refrigerated, up to 3 days.

Ingredients

1/4 cup red wine vinegar
1/4 cup tarragon vinegar
1/2 cup olive oil
1/4 cup parsley, finely chopped
1/4 cup shallot, finely chopped
4 teaspoons Dijon mustard
8 garlic cloves, minced
1 1/2 teaspoons crushed red pepper flakes
1 1/2 lbs cooked large shrimp
1 loaf French bread, sliced thin, toasted

Steps:

Whisk all ingredients except for the shrimp and bread.
Place shrimp in a shallow baking dish and pour the marinade over them.
Cover and refrigerate for 6-10 hours.
Drain marinade when ready to serve and place the shrimp on the pieces of toast to serve.

24 very thin slices white bread
Refrigerated butter-flavored spray
6 to 8 unpeeled garlic cloves
1 tablespoon olive oil
1 package (8 ounces) reduced-fat cream cheese
2 tablespoons butter
2 teaspoons minced chives
1/4 teaspoon salt
Fresh parsley sprigs

Steps:

Cut each slice of bread with a 2-in. round cookie cutter. Spritz one side of each bread round with butter-flavored spray; press spritzed side up into miniature muffin cups coated with cooking spray. Bake at 350° for 10-15 minutes or until golden., Place garlic cloves on a piece of aluminum foil. Pour oil over garlic; fold foil around garlic and seal tightly. Bake at 350° for 25-30 minutes or until garlic is very soft. When garlic is cool, remove from skins and mash., In a bowl, beat cream cheese, butter, chives and salt until smooth. Add garlic; beat until combined. Mound rounded teaspoonfuls of cream cheese mixture into each bread cup. Garnish with parsley.
