Steps:
- Melt butter in medium saucepan over low heat. Add marshmallows, stirring occasionally until melted. Remove from heat and stir in granola and pecans, mixing well.
- Transfer mixture to lightly buttered 9x5 loaf pan. Press firmly and evenly into pan and set aside to cool.
- Invert pan to remove block of granola. Cut lengthwisen half, then crosswise into 8 bars. Serve as is, or insert extra long toothpicks as handles and dip in chocolate.
- Chocolate Dip: Use 4oz semisweet chocolate, melted, to cover all 16 pieces.

This is the recipe for traditional Cuban/Puerto Rican pastries that can only be found in some places. Our family goes crazy for them! Dust with confectioners' sugar if desired.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly flour a baking sheet.
- Roll puff pastry into a thin sheet on a floured surface. Cut into squares about the length of your hand and place on the prepared baking sheet.
- Beat egg and water together in a bowl; brush each pastry square with egg wash. Stab each square a few times with a fork.
- Bake in the preheated oven until golden brown, 20 to 25 minutes. Remove from oven and let cool at least 10 minutes.
- Mix guava paste and jam together in a bowl until smooth.
- Cut a large, vertical slit into each pastry. Spread 1 tablespoon guava mixture into each slit, making sure guava doesn't squeeze out when closed.

GEORGIA CHILI
I have tried many chili recipes, trying to find one that suits our family's taste. This is it! I found this in my 1970 Southern Living cookbook. My family doesn't like spicey chili, so I only add 2 teaspoons of chili powder. I have noted my other changes in the ingredients. I leave out the shortening to cut the fat and we aren't big on a lot of celery in our food, so I cut it down to one stalk. This is the only chili that I make now. Prep time is approximate. Servings are generous, so you may be able to serve more than six with this recipe. I freeze leftovers.

- Season ground beef with salt and pepper to taste.
- Brown beef and onion, mixed with 1 tablespoon chili powder, in the shortening.
- Add tomato juice, celery, green pepper, and remaining 2 tablespoons chili powder.
- Simmer slowly for 45 minutes, or until vegetables are tender.
- (If mixture cooks down, add more tomato juice or water).
- Add tomatoes and simmer 15 minutes longer; then add kidney beans and simmer a few minutes more or until beans are tender.

GEORGIA PECAN BROWNIES
For the most part, Mama has always made everything from scratch. Homemade cakes, cookies, and pies were the norm, but she would open one box when she made brownies. My father worked for a company that made, among myriad other things, brownie mix. I remember opening the Christmas gifts from corporate friends that contained a potpourri of company products, including the familiar red box-the brownie mix. Perhaps one of the reasons I am so fond of these brownies is that they represent my first solo forays into baking. Other than turning on the oven, I was allowed to prepare the brownies all by myself.

Steps:
- Preheat the oven to 350°F. Brush a 9 x 13-inch baking dish or pan with butter.
- In a saucepan, melt the 1 cup of butter over medium heat; add the sugar and stir to dissolve. Keep warm.
- In a bowl, whisk together the flour, cocoa, baking powder, and salt. Add the butter mixture and stir to combine. Add the eggs, vanilla extract, chocolate, and nuts. Stir until the chocolate is fully melted and the ingredients are combined (the batter should be very thick). Alternatively, you can mix the batter in a heavy-duty mixer. Spoon the batter into the prepared pan. Smooth the top with an offset spatula.
- Bake until set, 25 to 35 minutes. Remove to a rack to cool. Cut into pieces and serve. Store in an airtight container for up to 3 days.
