GERMAN SWEET CHOCOLATE CAKE II
This was my Grandmother's recipe. It's the classic cake made with sweet chocolate and frosted with a luscious coconut pecan frosting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (8 inch) round pans. Sift together the flour, baking powder, baking soda and salt. Set aside. In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
- In a large bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in melted chocolate and 1 teaspoon vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Pour batter into prepared pans.
- Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pans for 10 minutes, then turn out onto a wire rack and cool completely. When cool, frost between layers and on top of cake.
- To make the Frosting: In a large saucepan, combine evaporated milk, 1 cup sugar, egg yolks, 1/2 cup butter and 1 teaspoon vanilla. Cook and stir on medium heat for about 12 minutes, or until thick and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature, and spreading consistency.

GERMAN CHOCOLATE SHEET CAKE

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pan). Spray 15x10x1-inch pan with cooking spray.
- Make cake mix as directed on box, using water, oil and eggs. Pour into pan. Bake 15 minutes.
- Set oven control to broil. In medium bowl, mix condensed milk, coconut and pecans; spread over warm cake. Broil on lowest oven rack about 2 minutes or until golden. Cool completely in pan on cooling rack, about 1 hour.
- In large bowl, beat butter, powdered sugar, cocoa and vanilla with electric mixer on medium speed until blended. Gradually add milk, beating until frosting is smooth and spreadable. Frost cake. Store covered in refrigerator.

GERMAN CHOCOLATE DELIGHT

- Blend milk, syrup and cream of coconut.
- Add ice cream and blend until smooth (about 30 seconds).
- Pour into a glass and top with whipped cream.
- Sprinkle with chopped pecans.

LIGHT GERMAN CHOCOLATE CAKE
This is a relatively low-fat, low-calorie version of the rich dessert. It comes from Cooking Light, March 1998. Cooking time includes cooling time, too. UPDATE: In step 7, flour through salt means the ingredients on the ingredient list between sifted flour and salt.

Steps:
- Preheat oven to 350°.
- Coat 3 (8-inch) round cake pans with cooking spray, and dust with 1 Tbs flour.
- Combine cocoa and chocolate in a small bowl; add boiling water, stirring until chocolate melts; set aside.
- Combine sugars, butter, and oil in a large bowl, and beat at medium speed of a mixer until well-blended (about 5 minutes).
- Add yogurt, extracts, and egg whites; beat well.
- Lightly spoon sifted flour into dry measuring cups, and level with a knife.
- Combine sifted flour through salt.
- Add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with flour mixture; beat in cocoa mixture.
- Pour cake batter into prepared pans and sharply tap pans once on counter to remove air bubbles.
- Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pans 10 minutes, and remove from pans; cool completely on wire racks.
- Place 1 cake layer on a plate; spread with 1/3 cup Coconut-Pecan Frosting, and top with another cake layer.
- Spread with 1/3 cup frosting (below), and top with remaining cake layer.
- Spread remaining frosting over top and sides of cake.
- Store cake loosely covered in refrigerator.
- FROSTING:.
- Melt butter in a medium saucepan over medium-high heat.
- Add chopped pecans, and sauté until the pecans are browned (about 2½ minutes).
- Remove mixture from heat, and stir in sugar, cornstarch, and salt.
- Add milk, syrup, and egg yolks, and stir well.
- Cook 2 minutes over medium-high heat or until thick, stirring constantly.
- Remove from heat, and stir in flaked coconut and extracts.
- Pour mixture into a bowl; cover and chill until slightly stiff (about 15 minutes).

- Put almond bark into a microwave-safe bowl; heat in microwave oven for 90 seconds and stir. Continue to heat in microwave in 15-second intervals until completely melted and smooth, 15 to 60 seconds.
- Stir peanut butter with the melted chocolate bark until smooth; add crispy rice cereal and pecans and stir to coat. Fold marshmallows and chocolate chips into the mixture to coat.
- Spread a sheet of waxed paper onto a flat surface. Drop the mixture by the spoonful onto the waxed paper and allow to cool completely.
