- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder, spices and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with floured 3-in. cookie cutters. Place 1 in. apart on ungreased baking sheets. Decorate tops with almonds, pressing to adhere., Bake 9-11 minutes or until light brown. Remove from pans to wire racks to cool.

GERMAN CUT-OUT COOKIES
This is a family favorite. The dough is very easy to handle and no need to refrigerate. Great for the holidays!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter and brown sugar. Beat in the eggs and vanilla extract until well blended. Combine the flour, baking soda, baking powder and salt; stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Decorate with your favorite frostings or sprinkles if you like.

These yolk-rich cookies have been "regulars" on my Xmas cookie trays for decades. They're delicious small bites and the recipe makes a lot, but they will all be eaten. From Joy of Cooking.

Steps:
- Beat butter till soft; beat in sugar gradually till light and creamy.
- Beat in egg yolks, lemon rind and lemon juice.
- Stir in flour.
- Chill dough 1 hour; roll it into sticks 1/4" diameter.
- Form into small "S" shapes on greased baking sheets.
- Brush with beaten egg and sprinkle with colored sugar.
- Bake at 375 degrees approximately 8 to 10 minutes or until golden around edges. Check carefully to see that they don't get too brown.
- Prep time does not include chill time.

GERMAN BUTTER S COOKIES
My mom used to make these German cookies around X-mas time every year. Awesome! They are also great year round.

Steps:
- Mix Flower, sugar, vanilla, butter, lemon peels+ eggs all together to be mixed in food processor beat on high level, approx.
- 3 minutes.
- Knead dough w/yr hands until smooth+ gather dough into a ball.
- Place dough 2 hours in refrigerator for resting.
- Cover w/parchment paper.
- Knead dough thoroughly, form sticks finger sized, place in S-form on baking tray (parchment paper for non sticking), let them go numb in the refrigerator.
- Dip the upper side of formed and numbed Butter-S cookie dough into the egg white and than in coarse sugar.
- Return to the tray.
- Preheat+ cook at 350°F in oven, 8-10 minutes until light-yellow.
- Let stand on bars until cool.
- Store in a can (up to 3-4 weeks) on a cold place w/parchment paper between layers.

- In the bowl of an electric mixer fitted with the paddle attachment, mix together butter, sugar, and 1/2 teaspoon salt until creamy. Using a rubber spatula, work hard-boiled egg yolks through a fine sieve and add to the mixer; mix until well incorporated. Add flour and vanilla and continue mixing until well combined, 2 to 3 minutes, scraping down the sides of the bowl as needed.
- Wrap dough with plastic wrap and refrigerate until chilled.
- On a lightly floured surface, roll out dough 1/2 inch thick. Transfer to a baking sheet and refrigerate until chilled. Cut dough into 3-by-1/4-inch-wide strips and transfer to a baking sheet lined with parchment paper or a nonstick baking mat. In a small bowl, mix together egg, yolk, and pinch of salt. Brush each strip with egg mixture, and garnish if desired. Freeze until firm, about 15 minutes.
- Preheat oven to 375 degrees. Transfer baking sheet to oven and bake until lightly golden, about 12 minutes.
