CHEESY GROUND BEEF PASTA
This Cheesy Ground Beef Pasta is so yummy and comforting! It's a super easy ground beef recipe, loaded with veggies and topped with ooey-gooey melty cheese

Steps:
- Cook pasta according to package directions for 6-8 minutes.
- Preheat oven to 400 degrees.
- Heat a large skillet on medium high heat and then add in 2 tbsp. of olive oil.
- Sauté the peppers and mushrooms until tender then set aside in a bowl.
- Using the same pan, add 1 tbsp. of olive oil and sauté the onion until tender then add in the ground meat.
- Break up the meat well and cook until no longer pink then add in the salt, oregano, basil, black pepper, garlic and the tomato sauce, diced tomatoes, tomato paste and pasta water.
- Return the mushrooms and bell pepper to the pan.
- Mix well and let the sauce simmer on medium low heat for 5-7 minutes, covered.
- Turn off the heat and add in the cooked pasta. Let it cool for about 5 minutes and then add in the cheeses. Remember to keep 1/2 cup of each type to top the dish before baking. Mix together well.
- Transfer the pasta to a baking dish and then top with the remaining cheese.
- Bake covered with aluminum paper in a preheated 400 degree oven for 20 minutes, then remove the foil to bake another 10 minutes uncovered.
- Remove from the oven, sprinkle with some fresh parsley and serve.

- Brown meat in large saucepan; drain. Add corn and peppers; cook 3 to 5 min. or until crisp-tender, stirring occasionally.
- Add salsa, broth, water and dressing mix. Bring to a boil.
- Add pasta; cover. Simmer 10 to 12 min. or until pasta is tender. Add VELVEETA; cook until melted, stirring occasionally.

This dish is best described as comfort food. With the cheesy ground beef layered atop a bed of buttery potatoes, you will keep coming back for more. I use a mandolin to thinly slice the potatoes.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
- Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
- Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
- While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
- Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.

CHEESY LAYERED GROUND BEEF AND PASTA CASSEROLE
This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

Steps:
- Set oven to 350 degrees.
- Grease a large lasagna dish.
- Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
- In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
- Spread 1/2 meat sauce on bottom of pan.
- Spread 1/2 noodles on top of sauce.
- Top noodles with 1 cup mozza cheese.
- Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
- Spread over mozzeralla cheese.
- Top with remaining tomato sauce, noodles,and remaining mozza cheese.
- Sprinkle with remaining 1/2 cup Parmesan cheese.
- Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
- Return to oven to bake for another 10-15 mins, or until bubbly.

- In a large saucepan, combine broth, water, corn, oregano, bay leaf, thyme, tomato paste, salt, cayenne pepper and green bell pepper.
- Bring mixture to a boil, then simmer on low heat for about 30 minutes.
- Meanwhile, in a medium saucepan, combine olive oil, onion, and garlic; saute on low heat for 10 minutes or until onion is transparent and garlic is golden but not brown.
- Add the ground beef and cook with onion-garlic mixture on medium heat until beef is well-browned, stirring frequently.
- Add beef-onion mixture to broth-water mixture.
- Simmer on low for another 20 minutes.
- Taste for saltiness; add a little more water if necessary.
- Leftover soup thickens slightly overnight (and tastes great the next day).
- Thin with a little more water if you wish.
