Ghastly Pear Ghosts image

These treats are a fun alternative to traditional caramel apples. Wrap them up and give as gifts at your Halloween party. -Taste of Home Test Kitchen

9 medium ripe Bosc pears
9 Popsicle sticks
2 packages (14 ounces each) caramels
1/4 cup water
2 pounds white candy coating disks
2 tablespoons plus 2 teaspoons shortening, divided
1/2 cup semisweet chocolate chips
1/2 cup orange candy coating disks

Steps:

  • Line a baking sheet with waxed paper and grease the paper; set aside. Wash and thoroughly dry pears; insert a Popsicle stick into the top of each., In a microwave, melt caramels and water; stir until smooth. Dip each pear into caramel mixture; turn to coat. Place on prepared pan; let stand until set., Melt white candy coating and 2 tablespoons shortening at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Dip pears into coating; allow excess to drip off. Return to pan; let stand until set. , In the same microwave, melt chocolate chips and 1 teaspoon shortening; stir until smooth. Repeat with orange candy coating and 1 teaspoon shortening. Decorate ghost faces; let stand until set.

3 large egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper. Beat the egg whites and cream of tartar in a large bowl with a mixer on medium speed until frothy. Beat in the sugar; increase the mixer speed to high and beat until stiff peaks form, 5 to 6 minutes.
  • Transfer to a pastry bag fitted with a large round tip. Pipe 8 to 10 swirls on the prepared baking sheet. Bake until dry, 1 hour to 1 hour, 15 minutes. Transfer the baking sheet to a rack and let cool completely.
  • Put the chocolate chips in a microwave-safe bowl; microwave on 50 percent power until melted, about 1 minute, stirring halfway. Transfer the melted chocolate to a zip-top bag and snip a corner. Pipe the chocolate on the meringues to look like eyes.

1 can (15 ounces) solid-pack pumpkin
1 can (12 ounces) evaporated milk
1/3 cup sugar
2 tablespoons honey
1 teaspoon ground cinnamon
3/4 teaspoon ground allspice
2 large eggs
2 cups whipped topping
Miniature semisweet chocolate chips

Steps:

  • In a bowl, combine the first seven ingredients; beat on low until smooth. Place eight ungreased 4-oz. custard cups in two 8-in. square baking pans. Fill each cup with 1/2 cup pumpkin mixture. Pour hot water around cups into the pans to a depth of 1 in. Bake at 325° for 40-50 minutes or until a knife inserted in the center comes out clean. Remove from pans to cool on wire racks. Before serving, top each with dollops of whipped topping in the shape of a ghost; add chocolate chips for eyes.

3 drops each neon blue, green and purple food coloring
Assorted decorations: cake decorator hearts, red decorating gel, and purple and red Nerds

Steps:

  • Prepare mousse mix according to package directions; divide into three portions. Tint one portion blue, one green and one purple. , Transfer each to a pastry or plastic bag; cut a hole in one corner of each bag. Pipe ghost shapes into 5-oz. plastic cups. Decorate just before serving.

20 Oreo cookies
3 ounces cream cheese, softened
6 ounces white candy coating, chopped
1 teaspoon shortening

Steps:

  • In a food processor, cover and process cookies until mixture resembles coarse crumbs. Cut cream cheese into three pieces; add to food processor. Cover and process until mixture forms a soft dough. , Using 2 teaspoons of dough for each, form 26 ghost shapes. Place on a waxed paper-covered baking sheet., In a microwave, melt candy coating and shortening; stir until smooth. Slowly spoon over each ghost shape to cover. Use a toothpick to create eyes. Store in the refrigerator.

This snack has it all - it's sweet, salty and full of crunch and gooeyness. We loved all the textures combined. The mini-marshmallows are an unexpected surprise mixed with all the crunch ingredients. It would be fun to set this out at a Halloween party or package in small bags as a favor.

1 jar(s) marshmallow cream, 7 oz.
1 package(s) pretzels, slightly crushed (about 4 cups)
1 stick(s) butter, melted
- peanuts (optional; 1 1/2 cups)
- Parmesan cheese (about 1/4 cup)
1 package(s) mini-marshmallows, 10 oz.

Steps:

  • With the melted butter, stir together the: popcorn, pretzels, mini marshmallows, peanuts (if using).
  • Coat the mix with a layer of Parmesan cheese and then mix together.
  • Place the marshmallow cream into a double boil. Heat until cream is heated and thinned out.
  • Add it to the mixture from step 1.
  • Pour it onto a wax paper lined baking sheet to set. When it sets, it will still be pretty sticky!!

This rich Hungarian beef stew is a labor of love and well worth the effort. Stew beef, such as chuck, becomes super tender when cooked with plenty of red wine, diced tomatoes, vegetables, and herbs for about two hours. Serve alongside buttery noodles tossed with caraway seeds.

2 pounds stew beef, cut into 1-inch cubes
Coarse salt and freshly ground pepper
2 tablespoons all-purpose flour
1/4 cup vegetable oil
1 medium onion, cut into 1/4-inch dice
3 garlic cloves, minced
1/2 cup dry red wine
1 tablespoon paprika
2 cans (28 ounces each) diced tomatoes
2 cups homemade or low-sodium store-bought beef stock
2 tablespoons tomato paste
2 sprigs fresh oregano, plus extra leaves for garnish
2 carrots, peeled and cut into 1/4-inch rounds
12 ounces Yukon gold potatoes, peeled and cut into 1-inch chunks
4 ounces thick bacon, cut into 1/4-inch pieces
10 ounces small white mushrooms (quartered if large)
1 box (10 ounces) frozen pearl onions, thawed and drained
1 red or green bell pepper, coarsely chopped
Caraway Egg Noodles, for serving

Steps:

  • Toss beef with salt, pepper, and flour in a medium bowl. Heat 2 tablespoons oil in a large stockpot or Dutch oven over medium-high heat until hot. Brown half of beef on all sides, 4 to 6 minutes total. Transfer beef to a plate with a slotted spoon. Repeat with remaining beef and 2 tablespoons oil.
  • Add onion to fat in pot; cook, stirring occasionally, until just tender, about 3 minutes. Stir in garlic; cook 1 minute. Add wine; cook, stirring up brown bits, until most liquid has evaporated, about 2 minutes.
  • Return beef to pot. Stir in paprika, tomatoes, stock, tomato paste, and oregano. Season with salt and pepper. Cover; reduce heat. Gently simmer until meat is just tender, about 1 1/2 hours.
  • Stir in carrots and potatoes; continue to simmer until vegetables and meat are very tender, 20 to 30 minutes.
  • Meanwhile, cook bacon in a dry large skillet over medium heat until crisp, about 5 minutes. Transfer to paper towels to drain. Add mushrooms, pearl onions, and bell pepper to fat in skillet; cook until vegetables are tender and golden brown, and liquid has mostly evaporated. Add to goulash.
  • Season goulash with salt and pepper, if necessary. Garnish with bacon pieces and oregano. Serve with caraway egg noodles.
