GHIVECI---ROMANIAN VEGETABLE STEW
This is my favorite Romanian dish. It is popular in summer and during Ortodox lent, when hen you can't eat meat. The recipe can vary a lot....in the late summer people put in eggplant sometimes, in the earlier summer zucchini. Use what is best for the season. Make sure to follow the cooking order so that nothing gets too mushy. Serve this with rice. Some people even add a bit of rice towards the end of the cooking time.

Steps:
- Heat the oil in a large stewpot or Dutch oven.
- Add the onion, carrots, and peppers. Saute over medium heat until onions are transparent. (About 5 minutes).
- Add garlic, potatoes, and cabbage. If using kohlrabi add it now. Saute for about 3 minutes.
- Add water and tomatoes, salt and pepper, and thyme and paprika. Bring to a boil.
- Cover and simmer for about 15 minutes, or until the potatoes are almost tender.
- Add the other optional veggies (eggplant etc.) of your choice. Return to a boil, cover and simmer.
- Simmer, covered for about 20 more minutes or until the vegetables are soft and flavors have blended.
- Add frozen peas, fresh herbs, and lemon juice. Cook for five minutes with the cover on.
- Serve hot with rice. This is a treat!

RUMANIAN (ROMANIAN) GHIVETCH
Vegetable stew adapted from The New York Times Cookbook. I call for vegetable broth here; the original said "bouillon."

- Preheat oven to 350°F.
- Layer the vegetables in an ungreased 3-4 quart casserole, sprinkling each layer with salt and pepper.
- Heat broth, olive oil and garlic in a small pan.
- Pour over the vegetables.
- Sprinkle with dill.
- Cover and bake until all vegetables are tender, about 1 hour.
- Let cool to lukewarm before serving.

VEGETABLE STEW (GIAMBOTTA)

- Preheat broiler.
- Heat a medium soup pot over medium heat. Add extra-virgin olive oil, bay, chopped garlic and onions and let them sweat out while you prepare the rest of the veggies. Work next to the stove and drop as you chop, in order of longest cooking time: potatoes, eggplant, zucchini, and bell pepper. Season with salt and pepper, cover and cook 10 minutes, stirring occasionally. Uncover and add tomatoes and stock and cook 5 minutes more, to heat through. Turn heat off and stir in basil.
- Char bread under broiler and rub with cracked garlic then drizzle with extra-virgin olive oil, top with cheese and pepper and return to the broiler for 30 seconds to brown cheese. Serve cheese whole-grain toast with bowls of vegetable stew.
OLD-FASHIONED HAMBURGER AND VEGETABLE STEW
In about 1 hour, you can have this easy stew on your table. Chock-full of vegetables and flavor, it's a mosaic of color and taste in your bowl. I always have fresh herbs, on hand, as well as most of the vegetables. Feel free to use dried herbs or canned vegetables, if you like, in this hearty stew.

Steps:
- Heat a large saucepan or Dutch oven over medium-high heat and cook ground beef until browned, 4 to 5 minutes. Add onion and celery and cook, stirring, until onion is soft and translucent, 3 to 4 minutes. Stir in garlic and cook, stirring, until fragrant, about 1 minute.
- Pour in beef stock and stir, scraping up any browned bits from the bottom of the pot. Bring to a boil and add carrots.
- Tie parsley, rosemary, thyme, and sage together into a bundle with cooking twine and add to the pot. Add bay leaf and season soup with salt and pepper. Bring to a boil, cover, reduce heat, and simmer for about 10 minutes.
- Increase heat to medium and add potatoes, green beans, corn, and drained tomatoes. Return soup to a boil, partially with a lid so steam can still escape, and simmer until potatoes are fork-tender, about 25 minutes. Remove herb bundle and bay leaf and discard. Adjust salt and pepper, if needed.

GROUND BEEF VEGGIE STEW

- In a large saucepan, cook beef over medium-high heat, breaking into crumbles, until no longer pink, 5-7 minutes; drain. Remove from pan; set aside., In the same saucepan, add oil, squash, zucchini and red pepper; cook and stir until vegetables are crisp-tender, 5-7 minutes. Add beef, tomatoes, water, salt and pepper; bring to a boil. Reduce to a simmer; cook, stirring occasionally, until vegetables are tender, 5-8 minutes. Stir in cilantro to serve. If desired, top with sour cream.

VEGETABLE STEW

- In a medium stockpot, melt the butter over medium-low heat. Stir in the onion, and cook, stirring occasionally, for 5 minutes. Stir in the garlic, and cook, stirring occasionally, for 3 minutes, or until the onion and garlic are translucent.
- Stir in the Swiss chard stems and cook, stirring occasionally, for 3 minutes. Add 3 cups water, the bay leaf, allspice and hot peppers. Cover, and bring to a boil.
- Stir in the squash and sweet potatoes. Cover, and return to a boil. Lower the heat, and simmer, covered, for 10 minutes.
- Add the Swiss chard greens and the okra. Cover, and return to a boil, pushing the greens and okra down into the liquid once in a while to aid the wilting.
- Lower the heat slightly, cover the pot, and boil gently, stirring occasionally, for 10 minutes, or until the Swiss chard and the okra are cooked through. There will be very little liquid left at the end, so be careful not to let it burn.
- Season with salt and lime juice. Serve over rice.
