CHRISTMAS CRANBERRY SALAD
This creamy cranberry salad can be served frozen as well as chilled.

Steps:
- Mix together the cranberries and sugar; cover and refrigerate overnight.
- The next day, combine the cranberry mixture with the pineapple, marshmallows, pecans and whipped cream. Mix well.
- Pour into a 3 quart dish, cover and refrigerate or freeze until ready to serve.

THE PINK STUFF (CREAMY CRANBERRY SALAD)
My Aunt made up this recipe and my mom adapted it to have with our holiday family dinners. When my youngest nephew had it for the first time, he talked for weeks about "the pink stuff." So now that's the only name that it goes by.

Steps:
- 1. Empty the cranberries and pineapple into a sieve and strain out the liquid. You may have to stir up the fruit and press on it to get all the liquid.
- 2. Put the liquid into a measuring cup and fill to 2 cups with water. Boil the liquid. and mix it with the two packages of Jello.
- 3. Allow the jello to partially set for about 45 minutes. It should not be hard, if you stick a finger in the jello it should come out coating you finger with no lumps.
- 4. About 15 minutes prior to taking the jello out of the fridge, mix the left over cranberries and pineapple with the apple chunks and walnuts.
- 5. In a separate bowl whip the cream cheese until it is easily stirred and them add the cool whip. Dump in the partially set jello and mix well. It's ok if there are cheese chunks it adds to the overall presentation.
- 6. Fold in the fruit and walnut mixture and transfer to a presentation bowl. (We put it in a beautiful blue pie plate.) Refrigerate for at least 3 hours until set, but it always tastes better if you make it the day before.

- In a small bowl, combine the ground cranberries and sugar. Set mixture aside for at least 3 hours.
- In a large bowl, whip cream and stir in quartered marshmallows. Set aside for 3 hours.
- After 3 hours fold the berry mixture into the whipped cream. Then fold in the crushed pineapple. Let set for several hours or overnight for flavors to blend.

- 1. Part 1. Dissolve Jell-Oin boiling water. Stir to mix and set aside to cool.
- 2. Add apples, pecans, and cranberry sauce.
- 3. Turn into a 13x9 glass dish and chill until firm.
- 4. Part 2. Blend softened cream cheese with powdered sugar until smooth.
- 5. Add vanilla to the Cool Whip and mix with a wooden spoon. Add to the cream cheese mixture along with the pineapple.
- 6. Fold the mixture together.
- 7. Spread evenly over firm set Jell-O mixture. Sprinkle toasted pecans on top.
- 8. Keep chilled until serving time.

- In a saucepan, combine 3/4 cup orange juice, cranberry sauce and gelatin. Mash and cook over medium-low heat until gelatin is dissolved. Stir in remaining orange juice. - In a medium bowl, mix cranberries and sugar. In the refrigerator, allow the mixture to stand 4 hours.
- Place cranberry and sugar mixture in a colander. Place colander in a large bowl. Allow the mixture to drain 8 hours, or overnight.
- Discard drained juices. Place cranberry mixture in a medium bowl. Stir in grapes, walnuts, marshmallows and thawed frozen whipped topping. Chill in the refrigerator until serving.

- 1. Boil Cranberries in 1 Cup water until skins 'pop'.
- 2. Add Sugar and bring to a boil, chill thoroughly.
- 3. Just before serving, mixed crushed saltines with melted butter.
- 4. Whip cream, i whip mine so its stiff.
- 5. Cover bottom of clear glass bowl with a layer of cracker/butter crumbs (half the crumbs)
- 6. Layer on half the cooled cranberries, then a layer of whipped cream.
- 7. Repeat layers in same order. DELICIOUS!!!
