Gigi's Quick Lettuce & Fruit Salad image

No one did it better than Gigi. She made this little salad for us all the time using different fruits - -sometimes peaches, sometimes pears. I always loved it. This recipe shows how to make it for 1 person, but it doesn't take much to increase it for however many you wish to serve.

1 lettuce leaf
1/2 pears or 1/2 peach, canned and drained
1 tablespoon Miracle Whip
1 dash paprika

Steps:

  • Place a leaf of lettuce on a plate.
  • Place a 1/2 of a pear or peach on the lettuce.
  • Put Miracle Whip on top of the fruit.
  • Sprinkle with paprika.

Garden salad with fruit, cooked sugared almonds, and an oil and vinegar dressing.

1 cup slivered almonds
½ cup white sugar
½ cup olive oil
¼ cup distilled white vinegar
2 tablespoons white sugar
salt and pepper to taste
½ head iceberg lettuce - rinsed, dried, and chopped
½ head leaf lettuce - rinsed, dried, and chopped
1 cup chopped celery
¼ cup chopped fresh chives
½ cup dried, sweetened cranberries
½ cup mandarin orange segments, drained
½ cup sliced fresh peaches
½ cup diced mango
½ cup chopped fresh strawberries

Steps:

  • In a skillet over medium heat, cook and stir the almonds and 1/2 cup sugar 5 minutes, or until almonds are well-coated and lightly browned.
  • In a bowl, mix the olive oil, vinegar, 2 tablespoons sugar, salt, and pepper. Set aside.
  • In a large bowl, gently mix the almonds, iceberg lettuce, leaf lettuce, celery, chives, cranberries, mandarin orange, peaches, mango, and strawberries. Serve with desired amount of the oil and vinegar dressing.

Amazing Fruit/Lettuce Salad image

I made this and took it to a party last weekend and is it ever knock your socks off good! To make it I chopped the lettuce up and put into one bowl and mixed the fruit and put into another bowl and refrigerated until time to serve. Just mix it all together and add the dressing and stand back! There weren't any leftovers. I'm just guessing on the servings because I didn't count. LOL! It makes a ton though!

1 head romaine lettuce, chopped (not bagged)
1 head iceberg lettuce, chopped (not bagged)
1 cup blueberries, washed
1 pint strawberry, cleaned and sliced
16 ounces pineapple tidbits, drained well
15 ounces mandarin oranges, drained well
3/4 cup chopped pecans, toasted
1 (16 ounce) bottle poppy seed dressing

Steps:

  • Mix it all together and add dressing.
  • Serve!

This was my first effort at 'Creative Cooking' as a young girl. Not knowing that it was my creation, Mom was so excited about how good this was that she immediately wanted to know from which of her cookbooks I'd found this recipe. Going through my recipe file has brought back another pleasant memory!

1 small solid head iceberg lettuce
1 tangerine (seeds removed)
2 medium apples, cored,but unpeeled (Jonathan preferrably)
2 small onions
1 orange (if not seedless, remove seeds)
3/4 cup mayonnaise or 3/4 cup Miracle Whip
1/4 cup milk
1/4 teaspoon garlic salt
pepper (to taste)
1 teaspoon sugar

Steps:

  • Salad: Peel onions, orange and tangerine.
  • Shred lettuce into large bowl.
  • Chop onion and apples into bowl.
  • Section orange and tangerine, then cut sections in half, adding to salad bowl as you do so.
  • Toss lightly.
  • Dressing: In a small bowl, mix mayonnaise with milk.
  • Blend until smooth.
  • Stir in garlic salt, pepper and sugar.
  • Pour over salad and toss lightly until combined.
  • Serve immediately.
