This warming ginger beer-spiced ham is great for Christmas entertaining as it's simple to prepare ahead of time

3kg mild-cure gammon
1 onion , halved
3 tangerines , zest removed with a vegetable peeler
4 star anise
2l ginger beer
3 tbsp honey
2 tbsp wholegrain mustard
small handful cloves

Steps:

  • Put the gammon, onion, tangerine zest and star anise in a large pan. Pour over all but 100ml of the ginger beer and, if necessary, top up with water so the gammon is just covered. Bring to the boil, skim the surface to remove any fat, reduce to a simmer, then cover and cook for 3-3½ hrs or until the meat is tender. When the gammon is cooked, remove it from the pan. Reserve the cooking liquor and use to cook lentils (see 'Goes well with'). Cool, cover and chill at this stage if you want to prepare ahead - bring back to room temp before continuing.
  • Heat oven to 220C/200C fan/gas 7. Carefully cut the skin off the gammon, making sure to leave a layer of fat, then lightly score the fat into diamond shapes. Place in a roasting tin lined with foil. Warm the honey, mustard and reserved 100ml ginger beer in a pan and boil until it thickens. Spoon over the fat, then stud a clove into the middle of each diamond. Bake for 20-25 mins or until the glaze has caramelised. If you did prepare ahead, add another 10 mins to the cooking time. Slice and eat warm or cold.

1 (12-pound) joint (mild cure boneless) ham
7 quarts dry ginger ale
1 cup chunky ginger preserves*
2 tablespoons hot English mustard
1/2 cup soft dark brown sugar
1/2 teaspoon ground cloves

Steps:

  • Place the joint in a large pan over the hob, or burner, and add 7 quarts of dry ginger ale. Bring the pan to the boil then lower the heat slightly so that it keeps bubbling steadily for 4 1/2 hours.
  • Towards the end of the 4 1/2 hours, preheat the oven to 425 degrees F and begin the glaze.
  • In a bowl, add 1 cup of chunky ginger preserves. Stir in 2 tablespoons of hot English mustard. Add 1/2 a cup of soft, dark brown sugar and sprinkle in 1/2 a teaspoon of ground cloves.
  • After 4 1/2 hours, gently lift the ham out of the pan and place on a foil-lined baking tray. Carefully cut away the skin, leaving a thin layer of fat. There is no need to score the surface, simply slap on the glaze and place the tray with the ham into the oven for 20 minutes.
  • Serve hot or cold.

2 teaspoons cornstarch
1 tablespoon honey

Steps:

  • Squeeze juice from six tangerines; strain pulp. Cut a thin slice off the bottom and top of the remaining tangerines. Place each tangerine cut side down on a cutting board. With a sharp knife, remove peel and white pith from fruit. Holding fruit over a bowl, slice between the membrane of each section and the fruit until the knife reaches the center; remove sections; set aside. , In a small bowl, combine cornstarch and tangerine juice until smooth; stir in the honey, ginger and cloves., In a large nonstick skillet coated with cooking spray, brown ham slices on both sides; remove and keep warm. Stir tangerine juice mixture and add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the tangerine segments; heat through. Serve with the ham.

One 7- to 8-pound fully cooked bone-in ham
1 cup chicken stock
4 tablespoons unsalted butter
2 tablespoons fresh ginger grated on a rasp
1/2 teaspoon chile flakes
3/4 cup brown sugar
1/2 cup honey
1/2 cup lime juice
1 tablespoon plus 1 teaspoon Dijon mustard
1/3 cup bourbon, optional

Steps:

  • Temper the ham by bringing it out of the fridge 90 minutes before cooking. (This will allow it to heat more evenly and not dry out.)
  • Preheat the oven to 300 degrees F.
  • Place the ham in a shallow roasting pan fitted with a rack. Using a paring knife, score the fatty side of the ham by gently slicing lines 1/2-inch apart, crisscrossing on an angle to create a diamond pattern. This will allow the glaze to soak into the ham. Add the chicken stock to the bottom of the pan, then cover the pan in foil. Cook for 40 minutes, basting every 10 to 15 minutes.
  • To make the glaze, warm the butter in a medium saucepan over medium heat. Add the ginger and chile flakes and cook until fragrant, about 1 minute. Add the brown sugar, honey, lime juice and Dijon mustard. Bring to a simmer, then cook until slightly reduced, about 2 minutes. Set aside the glaze in a bowl, leaving about 1/4 cup behind in the pan for finishing.
  • Remove the ham from the oven and raise the oven to 425 degrees F.
  • Remove the foil from the ham and discard the drippings from the pan. Brush the ham liberally with half of the glaze. Return to the oven and cook, uncovered, for 15 minutes, then brush again. Bake again until dark and caramelized, another 15 minutes. Remove the ham to a rimmed platter.
  • Heat the remaining 1/4 cup glaze to a simmer over medium-low heat. If using the bourbon, remove the glaze from heat and add the bourbon. Using a lighter, flambe the alcohol in the pan and very carefully pour over the ham. (The alcohol can be omitted and you can just put the warm glaze over the ham.)

This recipe comes from Tyler Florence and makes the most magnificent and delicious ham we have ever tasted! It is beautiful when it comes out of the oven and the aroma while its cooking is just heavenly. I am posting the recipe as Tyler has written it, however, when I prepare this I make a few changes to lower the sugar and fat content in the glaze which are as follows: I reduced the butter to 1/2 cup unsalted butter and 1/2 cup smart balance spread; I reduced the brown sugar to 1 cup and added 1 cup of splenda mixed with a few tablespoons of sugar free maple syrup. I reduced the water content to 1/2 cup and only had to simmer for an additional 15 minutes to get the syrup texture. The substitutions work well, but I am sure this original recipe below will blow you away!

1 (8 lb) smoked ham, bone-in,skin on
kosher salt
fresh ground black pepper
15 fresh sage leaves (one large bunch, Please don't use dried sage, it will definitely not be the same)
1/4 cup extra virgin olive oil
1 cup unsalted butter, cut in chunks
2 tangerines, sliced thin,seeds removed
2 cups freshly squeezed tangerine juice (it takes about 8-10 tangerines for this amount)
2 cups light brown sugar, packed
1 cup water
1/4 teaspoon whole cloves
2 cinnamon sticks

Steps:

  • Preheat the oven to 300 degrees F.
  • Put the ham in a large roasting pan, fat-side up.
  • Using a sharp knife, score the ham with cuts across the skin, about 2-inches apart and 1/2-inch deep.
  • Cut diagonally down the slashes to form a diamond pattern; season the meat generously with salt and pepper.
  • Chop about 8 of the sage leaves and put it in a bowl; mix with the oil to make a paste.
  • Rub the sage-oil all over the ham, being sure to get the flavor into all the slits.
  • Bake the ham for 2 hours.
  • Assemble the glaze as the ham is baking.
  • For the glaze: Place a saucepan over medium heat.
  • Add the chunks of butter, tangerines, tangerine juice, brown sugar, water, and spices.
  • Slowly cook the liquid down to a syrupy glaze; this should take about 30 to 40 minutes.
  • After the ham has being going for a couple of hours, pour the tangerine glaze all over it, with the pieces of fruit and all.
  • Scatter the remaining sage leaves on top and stick the ham back in the oven and continue to cook for another 2 hours, basting with the pan juices every 30 minutes.
  • The ham is done when it is dark and crispy, and the whole thing is glistening with a sugary glaze.
  • Set the ham on a cutting board to rest for 10- 15 minutes before carving.
  • Serve the tangerine glaze on the side if desired.

  • Carefully cut the skin off the ham and discard, making sure to leave a layer of fat. Lightly score the fat into diamond shapes and stud a clove into the middle of each diamond. Line a roasting tin with foil and place the ham in the tin.
  • To make the glaze, warm the honey, mustard and reserved ginger beer in a pan and boil until thickened. Spoon over the scored fat and bake for 20-25 minutes or until the glaze has caramelised. Serve hot or leave to cool completely before slicing.
