1 cup fresh snow peas
2 teaspoons cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup 2% milk
3/4 pound boneless skinless chicken breasts, cut into thin strips
3 teaspoons canola oil, divided
1/2 pound sliced baby portobello mushrooms
1 teaspoon minced fresh gingerroot
2 cups hot cooked brown rice
1/4 cup minced fresh parsley

Steps:

  • Place snow peas in a small saucepan; cover with water. Bring to a boil; boil for 1 minute. Drain and set aside. In a small bowl, combine the cornstarch, salt, pepper and milk until smooth; set aside. , In a large nonstick skillet or wok coated with cooking spray, stir-fry chicken in 1 teaspoon hot oil for 5 minutes or until no longer pink. Remove and keep warm. , In the same pan, stir-fry mushrooms and ginger in remaining oil for 2 minutes. Add peas; stir-fry 2 minutes longer. , Stir cornstarch mixture and add to the pan. Return chicken to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice. Sprinkle with parsley.

400 gm chicken breast ((Cut into Small Cubes))
200 gm Oyster Mushroom
100 gms Peas (Snow)
1 red bell pepper (small)
4 tbspns all purpose flour
1 cup chicken stock
1/4 cup honey
1/4 cup soy sauce
1 tbspn ginger (Grated)
1/2 tbsp garlic (Minced)
1/2 tspn red chilli (flakes)
1 onion (Medium)
2 tbsps vegetable oil
2 tbsps Seasame Seeds (Toasted)
to taste salt

Steps:

  • In a small bowl mix chicken stock ,Soy sauce, Honey,2 tbsp flour, chilli flakes. Keep aside
  • In a bowl take chicken cubes, add a dash of soy sauce, remaining 2 tbsp all purpose flour. Toss well.
  • Heat 1 tbsp of oil in a heavy bottom pan preferably cast Iron pan. Fry chicken cubes in 2-3 batches on medium-high heat for 2-3 minutes until they are browned. Take out and keep aside.
  • In the same pan add remaining 1 tbspn oil. Add chopped Ginger and garlic. Fry for a minute on medium heat. Add Sliced Onion. Fry for 2-3 minutes.
  • Add mushroom, Snow Peas and Red bell pepper. Fry on medium-high heat for 2-3 minutes. ( The vegetables needs to tender and crisp.Don't overcook).
  • Add chicken stock mixture. Boil for 2-3 minutes. When the Vegetable sauce mixture starts to thicken, toss in fried chicken cubes. Mix well. Season with salt if required. Switch off gas.
  • Garnish with toasted Sesame seeds. Serve hot with white rice.

Marinade
1/4 teaspoon salt
1/2 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon Shaoxing rice wine or dry sherry
1 tablespoon light (regular) soy sauce
3/4 pound boneless, skinless chicken breast, cut crosswise into slices 1/4 inch thick
Flavoring Sauce
1/2 teaspoon sugar
1/8 teaspoon white pepper
1 1/2 teaspoons cornstarch
1 tablespoon water
1 tablespoon light (regular) soy sauce
1 1/2 teaspoons oyster sauce
2 teaspoons sesame oil
2 tablespoons canola or other neutral oil
3 quarter-sized slices ginger, peeled and lightly bruised
1/2 small yellow onion, sliced lengthwise 1/4 inch thick
1/2 pound fresh oyster mushrooms, torn in half if large
1/4 pound snow peas, trimmed, strings removed, and cut in half on the diagonal if large
3-inch section carrot, peeled and thinly sliced on the diagonal
4 tablespoons water

Steps:

  • To make the marinade, in a large bowl, combine the salt, sugar, cornstarch, wine, and soy sauce and stir to dissolve the sugar and cornstarch. Add the chicken and mix to coat evenly.
  • To make the flavoring sauce, in a small bowl, combine the sugar, white pepper, cornstarch, water, soy sauce, oyster sauce, and sesame oil and stir well.
  • In a wok or large skillet, heat 1 tablespoon of the oil over high heat until hot but not smoking. Add the ginger and stir-fry for about 30 seconds, or until fragrant. Add the chicken in a single layer and cook, undisturbed, for about 1 minute, or until it begins to brown. Using a spatula, flip the chicken and stir-fry for 1 to 2 minutes, or until it has taken on color but is still slightly undercooked. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the pan and heat until hot. Add the onion and stir-fry for about 1 minute, or until fragrant. Add the mushrooms, snow peas, carrot, and 2 tablespoons of the water. Stir-fry for 1 minute, or until the water has evaporated. Repeat with the remaining 2 tablespoons water.
  • Return the chicken and its juices to the pan and stir-fry briefly to finish cooking. Add the flavoring sauce and stir-fry for 1 minute. Transfer to a serving plate and serve.

1 pound snap peas, ends snapped and veiny strings removed, rinsed and drained
1 tablespoon minced garlic
2 tablespoons rice wine or sake
1/2 teaspoon salt, or to taste
1/2 pound shiitake mushrooms, stems trimmed and lightly rinsed
1/2 pound oyster mushrooms, stems trimmed and lightly rinsed (If unavailable, substitute shiitake mushrooms.)
1/2 pound cremini mushrooms, stems trimmed and lightly rinsed
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
3 1/2 tablespoons good quality oyster sauce
1 1/2 tablespoons rice wine or sake
1 1/4 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/2 cup chicken broth or water
1 teaspoon cornstarch
2 1/2 teaspoons canola or corn oil

Steps:

  • With a sharp knife, cut the mushrooms on the diagonal into quarters, depending on the size. Prepare the seasonings and set by the stove.
  • Heat a wok or a heavy skillet until very hot, add 1 teaspoon of oil and heat until hot. Add the snap peas, minced garlic, rice wine or sake, and salt, and toss lightly over high heat for about 1 1/2 minutes until the peas are just tender (snow peas will take slightly less time.) Remove from the pan and arrange around the outside of the serving plate.
  • Reheat the pan and the remaining oil until very hot. Add the Seasonings and stir-fry about 10 seconds until fragrant. Add the mushrooms and toss lightly with a spatula or shovel over high heat for about 1 minute. Add the sauce and toss lightly to thicken, stirring constantly to prevent lumps. Arrange the mushrooms inside the snow peas on the serving platter. Serve immediately.
